E-Z DROP BISCUITS
These are a favorite of my boys. For an extra treat I drop a handful of shredded cheese in.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- In a large bowl, combine flour, baking powder, sugar, cream of tartar and salt. Stir in butter and milk just until moistened. Drop batter on a lightly greased cookie sheet by the tablespoon.
- Bake in preheated oven until golden on the edges, about 8 to 12 minutes. Serve warm.

Steps:
- Preheat the oven to 400 degrees F.
- Place the flour, baking powder and salt into a food processor and pulse a few times to combine. Add the butter and pulse until the dry ingredients and the butter are mostly combined. (Alternatively, cut the butter into the dry ingredients with a pastry cutter.) Drizzle in the milk and pulse (or stir) just until the dough comes together. Do not over mix.
- Using a regular table spoon, or large spoon, drop spoonfuls of the mixture onto baking trays and bake until nice golden brown, 20 to 25 minutes. If desired, brush with melted butter after you remove them from the oven.

I Love Biscuits and I have been searching for a quick and easy recipe to make in my countertop convection oven. Living in a hot climate - I don't want to heat up the house with the regular oven and besides, I only want a small batch. This is a quick and easy Drop-Biscuit recipe that makes six or seven biscuits. Plus, you can make it Vegan if you like!

- Pre-heat your countertop convection oven to 450°.
- Mix the Flour, Baking Powder and Salt in a bowl.
- Stir in the Olive Oil and the Milk and gently mix it into a soft dough - do not over mix!
- Lightly spray a baking sheet with cooking oil or line with parchment or a silicone sheet.
- Drop 6 or 7 mounds of Biscuit dough on the sheet.
- Put them in the oven and turn the heat down to 425°.
- Bake for 10 to 12 minutes.

FAST & EASY LOW FAT DROP BISCUITS
These are easy and fast to make in your food processor (though you could do it by hand). They are slightly non-traditional biscuits in that they don't use shortening, but they are very tasty and work great when dunked into soup.

Steps:
- Preheat your oven to 400 degrees.
- Put the flour, baking powder& baking soda, and salt into your food processor.
- (Or you can do it by hand. The food processor is much easier, though.) Pulse once or twice to mix.
- Then add the oil and pulse a few times until it appears mixed.
- Add the sour cream and pulse until the dough comes together (sort of into a ball but not really).
- Drop by spoonfuls onto a cookie sheet you have sprayed with non-stick spray.
- Bake for 15 minutes or until lightly browned.

Steps:
- Mix the Blackening spices (the first 8 ingredients) in a small bowl.
- Place your salmon fillet on a plate. (I usually buy half a salmon filleted - cut it into portions and freeze it - using it up as I need it.) Pat it dry with a paper towel.
- Sprinkle the Blackening Spice all over your salmon and gently rub it inches.
- Pour olive oil into a heavy cast iron frying pan or other heavy bottomed frying pan and heat over medium heat.
- Make sure your pan is nice and hot and gently place your fillet in the skillet. Watch out it may spatter!
- Do not move the fillet! Cook it for 2 to 3 minutes until it is a nice dark color. You can peek under a corner to make sure it is.
- Flip the fillet over and cook for an additional 2 to 3 minutes until cooked to your liking.
- Serve immediately with Lime or Lemon wedges.
- I like to serve mine on a bed of Garlic Mashed Potatoes. - Enjoy!
