BISCUIT CRUMB BASE
Basic biscuit crumb recipe for a base of desserts and tarts using digestive biscuits. Use any sweet biscuit including Ginger snaps for a delicate ginger flavour

Steps:
- Put the biscuits into a food processor and blitz them until you have fine crumbs
- Alternatively, place the biscuits in a freezer bag or between a clean tea-towel on a flat surface and crush them using a rolling pin
- Place the crumb in a glass bowl and add the melted butter mix well to completely combine
- Line the bottom of a 23cm spring-form tin with baking parchment and put the biscuit mix in, press it down using the back of a spoon or a flat weight (the bottom of a heavy glass always works well) to get a flat even surface
- Place in the fridge to cool and set for at least 30 minutes

BISCUIT CRUMBLE WITH CHOCOLATE AND RASPBERRIES

Steps:
- Add the sugar, cocoa powder, flour, vanilla and salt to a small pot. Add the milk and cook over low heat, whisking, until thick.
- Divide the raspberries among 4 bowls and serve topped with crumbled biscuits and the warm chocolate gravy.
- Preheat the oven to 450 degrees F.
- In a bowl and using your fingers, mix the flour and coconut oil together very well until the mixture feels crumbly. Add the milk and mix (but don't overmix). Knead the dough just a couple of times, then roll it out to a thickness of 1/2 inch on a floured surface. Cut into 3-inch rounds and put the rounds on a baking sheet.
- Bake for about 3 minutes, then liberally brush the biscuits with melted butter. Bake until golden, about 12 more minutes.
BISCUIT CRUMBLY

Steps:
- Put the fruit in a dish making sure it only comes half way to the top to allow enough room for the topping.
- Mix all above ingredients in a mixer (or by hand)
- Add 1 egg and mix in well
- Blob all over the fruit. You can smooth it if you like but i leave gaps to show the fruit through.
- Bake in a pre heated oven (180c) for about 20-30 mins for until the fruit is bubbling and the topping is crispy and cooked. Enjoy
- We usually serve this with custard or Devonshire Clotted Cream

- Preheat oven to 450 degrees F (230 degrees C).
- In a large bowl, sift together dry ingredients. Cut in butter until mixture resembles coarse oatmeal. Make a well in the center of the dry mixture and pour in the milk. Stir until dough begins to pull together then turn out onto a lightly floured surface.
- Press dough together and then roll out until 3/4 inch thick. Cut into 2 inch round biscuits and place on an ungreased baking sheet.
- Bake in preheated oven for 10 minutes, or until golden.
