SMOKED HAM BISCUIT SANDWICH

Smoked Ham Biscuit Sandwich image

Provided by Amanda Freitag

Categories     main-dish

Time 5h25m

Yield 8 servings

Number Of Ingredients 16

1 cup brown sugar
2 tablespoons paprika
2 tablespoons black pepper
1 teaspoon cayenne
One 12-pound wet-cured ham
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
7 tablespoons cold unsalted butter, cut into small cubes
3/4 cup cold buttermilk
3 tablespoons honey
2 cups honey
5 to 6 chipotles in adobo, plus 2 tablespoons adobo sauce
Kosher salt and freshly cracked black pepper
1 cup Dijon mustard

Steps:

  • For the smoked ham: Preheat a smoker to 225 degrees F.
  • Combine the brown sugar, paprika, pepper and cayenne in a bowl. Add a bit of water to make a paste. Rub the ham generously with the spice paste.
  • Place the ham in the smoker with applewood chips. Smoke for 3 to 4 hours.
  • Remove the ham to a cutting board and tent with foil. Let rest for 20 to 30 minutes. (Yields 24 portions.)
  • For the buttermilk biscuits: Preheat the oven to 400 degrees F.
  • In a large bowl, whisk together the flour, baking powder, baking soda and salt. Using a pastry cutter (you can also just use your hands), mix the butter cubes into the flour until it resembles a coarse meal. Chill in the refrigerator for 10 minutes.
  • Meanwhile, whisk together the buttermilk and honey in a small bowl. Incorporate the buttermilk mix into butter-flour mixture, stirring just until the dry ingredients are moistened.
  • Turn out the biscuit dough onto a lightly floured work surface and knead gently 3 or 4 times to fully combine the ingredients. (If the dough is a little crumbly, that's Ok.) Roll out the dough into a 9-by-5-by-1/2-inch rectangle and then fold into thirds. Roll out again and fold into thirds again. Do this about four times in all.
  • Cut out biscuits. Don't twist when cutting; rather, use an up-and-down motion. Place the biscuits on a baking sheet, spaced 1-inch apart.
  • Bake until golden brown on top and fully risen, 11 to 15 minutes. Cool the biscuits on a wire rack, but not for too long¿these are best served warm! (Makes 8 biscuits.)
  • For the chipotle honey mustard: Blend the honey, chipotles and adobo sauce in a blender or with an immersion blender. Season to taste with salt and pepper. Mix the chipotle honey with the Dijon.
  • Once the ham has rested, slice it thinly using a slicing knife or an electric meat slicer. Split open the warm biscuits and sauce the bottom halves with a spoonful of the chipotle honey mustard. Top each with a generous amount of ham (about 1 cup) and drizzle with more honey mustard. Close with the biscuit tops, and serve.

Provided by Walmart

Categories     Dinner

Yield 4 servings

Number Of Ingredients 17

½ medium yellow onion, diced into 1/2 in (1.24 cm)
1 cup pre-packaged diced butternut, yellow squash
1 large carrot, diced into 1/2 in (1.24 cm) pieces
2 stalks celery, diced into 1/2 in (1.24 cm) pieces
3 tablespoons olive oil
1 ½ teaspoons kosher salt, divided
1 ½ teaspoons freshly ground black pepper, divided
2 tablespoons unsalted butter
¼ cup all purpose flour
2 cups chicken stock
½ teaspoon fresh thyme, chopped
¼ teaspoon garlic powder
⅛ teaspoon cayenne pepper
2 cups Sam's Choice® Premium Spiral-Cut Ham, chopped
1 tube refrigerated biscuit
nonstick cooking spray, for greasing
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Toss the onion, squash, carrot, and celery with the olive oil, 1 teaspoon salt, and 1 teaspoon pepper on the prepared baking sheet until well coated, then spread in an even layer.
  • Roast the vegetables, stirring occasionally, for 20-25 minutes, or until lightly browned. Remove from the oven and transfer to a large bowl. Reduce the oven temperature to 350°F (180°C).
  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute, until bubbling. HAM AND CHEESE BUTTERMILK BISCUITS

Ham and Cheese Buttermilk Biscuits image

They are wonderfully tender, flavorful buttermilk biscuits, and so deliciously easy to whip up! They are also incredibly versatile. You can use pretty much any type of cheese you'd like in these - since the cheese offers the main flavor, if you have a bunch of something else besides pepper Jack you'd like to use up, feel free to change it up however you'd like.

Provided by Rebekah Rose Hills

Time 30m

Yield 12

Number Of Ingredients 9

2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
¼ teaspoon garlic powder
⅓ cup cold butter
⅔ cup shredded pepper Jack cheese
⅔ cup finely diced ham
1 cup buttermilk, or more as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour, baking powder, salt, baking soda, and garlic powder in a bowl. Whisk to combine.
  • Dice the cold butter up into chunks, and cut it into the dry mixture with your fingers, a fork, or a pastry cutter, until the mixture resembles coarse sand, and butter is well blended in. Stir in cheese and ham, gently stirring to evenly coat all the cheese and ham pieces with the flour mixture.
  • Use a fork and stir in 1 cup buttermilk. If the mixture is still dry, add a little more liquid at a time until the dough just comes together (it should be a little bit sticky, but not "wet").
  • Shape dough into a ball by hand, handling the dough gently. Then pat the dough out on a lightly floured surface to 1/2- to 3/4-inch thickness. Use a small biscuit cutter to cut 12 to 15 biscuits out, and arrange them on a baking sheet with sides just barely touching.
  • Bake in the preheated oven until just golden brown around the edges/tops/bottoms and cooked through in the center, 12 to 15 minutes.
  • Cool briefly on the baking sheet before moving to a platter or cooling rack. Best served warm!
