Luscious, rich turkey pan gravy is a 10-minute affair with this reliable recipe. In fact, you can use this pan gravy recipe with any type of drippings. It's certainly not exclusive to turkey. It all starts with a hot skillet and pan drippings, add 2 tablespoons of Bisquick™ and stir until well blended and browned. Then, whisk in the broth and ta-da you've got gravy! Turns out, the secret to lump-free gravy is not a secret at all, it's just a matter of following this foolproof recipe.

Drippings from roast turkey or other cooked meat
2 tablespoons Original Bisquick™ mix
1 cup liquid (turkey or meat juices, broth, water)
Few drops browning sauce, if desired

Steps:

  • After removing turkey from pan, pour drippings (turkey juices and fat) into fat separator or glass measuring cup, leaving browned particles in pan. The fat will rise to the top. With spoon, return 2 tablespoons of the fat to the pan. Pour or spoon off and discard any remaining fat drippings.
  • Stir Bisquick into fat in cooking pan. Cook over low heat, stirring constantly and scraping up browned bits, until mixture is smooth and bubbly; remove from heat.
  • Gradually stir in reserved juices plus enough broth or water to equal 1 cup. Heat to boiling stirring constantly. Boil and stir 1 minute. Stir in browning sauce if a darker color is desired.

¼ cup bacon drippings
¼ cup all-purpose flour
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
4 cups milk, divided

Steps:

  • Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
  • Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

1 1/2 cups Bisquick Heart Smart mix
1/2 cup soymilk
2 teaspoons earth balance butter
2 tablespoons onions, diced
1 tablespoon flour
1 cup water, warmed
1 teaspoon better than bullion vegetable stock base
garlic powder
fresh ground black pepper
Braggs liquid aminos, amino acid
1 tablespoon cornstarch

Steps:

  • First make your biscuits by combining the bisquick mix and soymilk. Cook in a 450 degree oven for 8 minutes.
  • Melt butter, and cook onion until translucent.
  • While onion is cooking, dissolve your vegetable base in water, add garlic powder, black pepper and braggs amino acid. (I didn't measure the braggs, just poured some in to taste). Set aside.
  • When onion is done, add flour and begin to slowly add water mixture to form your gravy. Dissolve cornstarch in a little bit of cold water and add to gravy to thicken.
  • Pour gravy over biscuits and enjoy!

  • After removing turkey from roasting pan, pour drippings (turkey juices and fat) into bowl or glass measuring cup, leaving brown bits in pan. Let drippings stand 5 minutes to allow fat to rise. Skim 6 tablespoons fat from top of drippings and return to pan; discard any remaining fat. Add enough broth or water to remaining drippings to measure 3 cups; reserve.
  • Stir flour into fat in pan, using wire whisk. Cook over low heat, stirring constantly and scraping up brown bits, until mixture is smooth and bubbly; remove from heat.
  • Gradually stir in reserved 3 cups drippings. Heat to boiling, stirring constantly. Boil and stir 1 minute or until gravy thickens. Stir in a few drops of browning sauce if a darker color is desired. Stir in salt and pepper.

  • Cut each biscuit into 8 pieces. Set aside.

This is your basic pan gravy technique, and it doesn't matter what the meat is. You can do this for a leg of lamb, a roast beef, a roast pork loin, or a pan-roasted chicken.

¼ cup drippings from a roast chicken
2 ½ tablespoons all-purpose flour
2 cups cold chicken stock, or more if needed
salt and ground black pepper to taste

Steps:

  • Pour fat from drippings into a bowl and reserve. Whisk flour into remaining drippings left in pan; mixture will seem dry. Add 2 tablespoons reserved fat, or as needed, to the drippings mixture to combine with flour.
  • Place pan of drippings mixture over low heat and toast flour until light brown and mixture gives off a nutty fragrance, about 5 minutes.
  • Drizzle about 1/3 cup cold chicken stock at a time into pan drippings, whisking each addition of stock into mixture until thoroughly combined. Continue whisking, scraping any browned pan drippings from the bottom of the pan into gravy; bring to a simmer. Continue to cook, whisking constantly, until gravy is thick and flour has combined with the liquid, 8 to 10 minutes.
  • Adjust thickness of gravy; if too thick, whisk in a little more stock. If gravy is too thin, continue to simmer, whisking constantly, until reduced and thickened, about 10 more minutes. For the smoothest texture, strain gravy before serving.
