Easy Bitter Gourd Salad I Love Way Too Much! image

From today's City Times, this is going to be part of my dinner tonight;) I had made this ages back and forgotten all about it. It's wonderful - the combo of all the ingredients goes great with the lemon juice poured on top. Bittergourd is good for health too. So what are you waiting for - try this and hey, I'm waiting for a nice review;)

2 bitter melons, finely sliced
2 medium tomatoes, peeled and sliced
2 medium onions, peeled and sliced
2 lemons, juice of
1 pinch turmeric powder
salt
2 tablespoons oil, to fry bittergourd

Steps:

  • Scrape off the skin of the bittergourd and any hard edges and trim the ends.
  • Finely slice the bittergourd (in circles).
  • Heat oil in a pan.
  • Fry the bittergourd slightly in it.
  • Add a pinch of turmeric powder and salt to taste.
  • Mix well.
  • Remove from heat.
  • Once it has cooled, arrange the bittergourd on a plate with the sliced tomatoes and onions.
  • Add lemon juice on top.
  • Serve immediately.
  • ENJOY!

A classic Chinese dish that can be made with chicken instead of beef. If chicken is used, cooking time will be more depending on the thickness of the chicken pieces.

ice cubes
1 bitter melon, seeded and sliced
2 teaspoons soy sauce, divided
2 teaspoons cornstarch, divided
¼ teaspoon baking soda
6 ounces beef, sliced
1 tablespoon oil
1 teaspoon oil
½ onion, sliced
2 cloves garlic
1 tablespoon chopped fresh ginger
1 tablespoon black bean sauce
1 tablespoon oyster sauce
1 pinch white sugar, or to taste
¾ cup water
1 teaspoon water
salt to taste

Steps:

  • Fill a bowl with ice; add enough salted water to make an ice bath. Bring a large pot of lightly salted water to a boil. Cook the bitter melon in the boiling water until tender yet firm, about 2 minutes; strain the melon. Place the melon into the ice bath; allow to sit until bitterness is extracted, about 1 hour. Drain melon.
  • Whisk 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda together in a bowl. Add beef and toss to evenly coat. Marinate in the refrigerator for 1 hour.
  • Heat wok, or a large skillet, on high until smoking. Add 1 tablespoon oil. Lay beef evenly across the bottom of the wok; cook until browned, about 2 minutes per side. Remove beef. Pour in 1 teaspoon of oil; allow to heat. Add onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Stir in bitter melon; cook until combined, about 1 minute.
  • Stir black bean sauce into melon mixture. Stir in remaining soy sauce, oyster sauce, and sugar. Pour in 3/4 cup water; cover and let simmer until flavors combine, 2 to 3 minutes. Uncover and mix in remaining cornstarch and 1 teaspoon water and stir until thickened.

It is a combination of hot, sweet, bitter, salty and tangy flavours. If you get the mix right, it is heavenly.

400 g bitter melons
2 tablespoons tamarind paste
1 teaspoon black gram (de-skinned and split, aka urad daal)
1 teaspoon fenugreek seeds
1 teaspoon mustard seeds
4 pieces bird's eye chilies (cut into small pcs)
10 pieces curry leaves
1/2 teaspoon turmeric
3/4 teaspoon salt
2 tablespoons brown sugar
2 teaspoons cooking oil

Steps:

  • Dice the bitter melon into small 1cm cube pcs. and keep aside.
  • Add the cooking oil to the wok and also the black gram, fenugreek seeds and mustard seeds.
  • When the mustard seeds start to splutter, add the chilies and fry the chilies until they start browning.
  • Add the bitter melon and set the gas on medium fire.
  • Keep stirring so that the chilli induced oil spreads all over the bitter melon.
  • Add the turmeric, salt and the tamarind concentrate.
  • Add enough water to cover the ingredients and continue to cook on medium fire.
  • When the bitter melon starts to soften, add the brown sugar and the curry leaves.
  • Once the sauce has thickened, it is ready to be served.
  • This dish goes well with Indian Bread (Roti/Chapati) and also goes well with White Rice mixed with Yoghurt.
