EASY BITTER GOURD SALAD I LOVE WAY TOO MUCH!
From today's City Times, this is going to be part of my dinner tonight;) I had made this ages back and forgotten all about it. It's wonderful - the combo of all the ingredients goes great with the lemon juice poured on top. Bittergourd is good for health too. So what are you waiting for - try this and hey, I'm waiting for a nice review;)

Steps:
- Scrape off the skin of the bittergourd and any hard edges and trim the ends.
- Finely slice the bittergourd (in circles).
- Heat oil in a pan.
- Fry the bittergourd slightly in it.
- Add a pinch of turmeric powder and salt to taste.
- Mix well.
- Remove from heat.
- Once it has cooled, arrange the bittergourd on a plate with the sliced tomatoes and onions.
- Add lemon juice on top.
- Serve immediately.
- ENJOY!

BITTER MELON AND BLACK BEAN SAUCE BEEF
A classic Chinese dish that can be made with chicken instead of beef. If chicken is used, cooking time will be more depending on the thickness of the chicken pieces.

- Fill a bowl with ice; add enough salted water to make an ice bath. Bring a large pot of lightly salted water to a boil. Cook the bitter melon in the boiling water until tender yet firm, about 2 minutes; strain the melon. Place the melon into the ice bath; allow to sit until bitterness is extracted, about 1 hour. Drain melon.
- Whisk 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda together in a bowl. Add beef and toss to evenly coat. Marinate in the refrigerator for 1 hour.
- Heat wok, or a large skillet, on high until smoking. Add 1 tablespoon oil. Lay beef evenly across the bottom of the wok; cook until browned, about 2 minutes per side. Remove beef. Pour in 1 teaspoon of oil; allow to heat. Add onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Stir in bitter melon; cook until combined, about 1 minute.
- Stir black bean sauce into melon mixture. Stir in remaining soy sauce, oyster sauce, and sugar. Pour in 3/4 cup water; cover and let simmer until flavors combine, 2 to 3 minutes. Uncover and mix in remaining cornstarch and 1 teaspoon water and stir until thickened.

BITTER GOURD IN TAMARIND SAUCE
It is a combination of hot, sweet, bitter, salty and tangy flavours. If you get the mix right, it is heavenly.

Steps:
- Dice the bitter melon into small 1cm cube pcs. and keep aside.
- Add the cooking oil to the wok and also the black gram, fenugreek seeds and mustard seeds.
- When the mustard seeds start to splutter, add the chilies and fry the chilies until they start browning.
- Add the bitter melon and set the gas on medium fire.
- Keep stirring so that the chilli induced oil spreads all over the bitter melon.
- Add the turmeric, salt and the tamarind concentrate.
- Add enough water to cover the ingredients and continue to cook on medium fire.
- When the bitter melon starts to soften, add the brown sugar and the curry leaves.
- Once the sauce has thickened, it is ready to be served.
- This dish goes well with Indian Bread (Roti/Chapati) and also goes well with White Rice mixed with Yoghurt.
