- 1 Break the tuna into small chunks; set aside. Cook the rice noodles according to package directions. Drain in a colander under cold running water to stop the cooking and set aside. 2 Combine the lime juice, fish sauce, sugar, chili garlic sauce, and soy sauce in a small bowl; set aside. 3 Heat the oil in a large nonstick skillet over medium heat. Add the scallions, and garlic. Cook, stirring frequently, until fragrant, about 1 minute. Add the bean sprouts and carrot; cook until softened, about 2 minutes. Add the egg, stirring gently, until it begins to set, about 30 seconds. Add the lime juice mixture and cook, stirring until the sugar dissolves, about 30 seconds. Add the tuna and rice noodles; cook, tossing gently, until mixed and heated through, about 3 minutes. Sprinkle with the peanuts and cilantro just before serving. Yields 1 1/2 cups per serving.
TUNA PAD THAI
A meat-free variation adapted from HungryGirl.com's Chicky Pad Thai. (Contains fish and can be made without nuts.) The cook time listed is a guess. It's been a while since I made this. When I do it again, I'll time it.

Steps:
- Use a strainer to drain and rinse shirataki noodles well. Pat dry. In a large microwave-safe bowl, microwave for 1 minute. Drain excess liquid. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit and set aside.
- To make the sauce, in a small bowl, combine ketchup, lime juice, preserves, peanuts, brown sugar, soy sauce, garlic, and crushed red pepper. Stir thoroughly and set aside.
- Spray a wok or large skillet with nonstick spray and bring to medium-high heat on the stove. Add egg substitute and scramble until fully cooked, about 2 minutes. Transfer to a bowl and set aside.
- Remove wok/skillet from heat (if needed, clean it once cooled), re-spray, and return to medium-high heat. Add tuna and season with salt and black pepper. Add broccoli, bean sprouts, scallion pieces, and 2 tablespoons water. Stirring occasionally, cook broccoli is tender, about 4 minutes.

These patties are delicious on top of salad greens and drizzled with some Kewpie mayonnaise, or in a burger. I made them for the first time without measuring, so I've guessed the amounts. Feel free to adjust to taste!

Steps:
- Soak rice noodles in a bowl with 4 cups hot water, or as needed to cover, until noodles are slightly softened, about 15 minutes; drain.
- Heat 1 tablespoon vegetable oil in a wok over medium heat.
- Cook and stir tofu and basil leaves in hot oil until basil is crisp and tofu is golden, about 10 minutes. Remove tofu-basil mixture and set aside.
- Heat 2 tablespoons vegetable oil in the same skillet; cook and stir chicken, shrimp and paprika until chicken is no longer pink in the center and shrimp are bright pink on the outside and no longer transparent in the center, 5 to 8 minutes.
- Pour eggs into chicken and shrimp; stir until eggs are lightly cooked, 2 to 3 minutes. Remove and set aside.
- Heat 7 tablespoons vegetable oil in a clean wok over medium heat. Cook and stir garlic in hot oil until fragrant, a few seconds.
- Stir white vinegar, fish sauce, brown sugar, ketchup, tamarind paste, and hot chili sauce into garlic until the brown sugar has dissolved; simmer for 1 minute.
- Stir lemon grass and drained rice noodles into wok until sauce is almost absorbed, 2 to 3 minutes. Pour 1/2 cup water into the skillet if noodles are still too firm.
- Stir tofu with basil, peanuts, chicken and shrimp mixture, and bean sprouts into noodles; cook and stir until fully heated and combined with sauce, 1 to 2 minutes.
- Garnish with lime wedges and green onions.

- Cook pasta according to package directions.
- In the meantime, heat a saucepan on medium-low heat.
- Drain the oil from the tuna into the pan.
- Add crushed & chopped garlic cloves and hot pepper flakes to pan, to infuse flavors into the oil, about 5 minutes.
- Increase heat to medium high, and add bell peppers. Cook for 2 minutes, stirring occasionally.
- In a small bowl blend soy sauce, sesame oil, and peanut butter.
- Transfer cooked pasta noodles to the saucepan. Add the peanut butter sauce and toss to coat.
- Add the tuna, and toss, breaking up the tuna.
- Season with salt & pepper as desired.
- Serve with a sprinkling of sesame seeds and cilantro leaves.

- Soak uncooked noodles in 8 cups of water until soft, 8 hours or overnight.
- Drain rice noodles and set aside.
- Whisk together vegetable broth, 2 tablespoons vegetable oil, brown sugar, soy sauce, rice wine vinegar, peanut butter, 1 teaspoon fresh cilantro, onion powder, tamarind paste, hot chile paste, garlic powder, sesame oil, red pepper flakes, ground coriander, ground ginger, salt, and ground black pepper in a saucepan.
- Heat sauce over medium heat until it bubbles; reduce heat to low, and simmer sauce while you prepare the remaining ingredients.
- Heat 3 tablespoons of vegetable oil in a large wok over medium heat.
- Cook and stir broccoli, carrots, snow peas, water chestnuts, baby corn, mushrooms, and zucchini in the wok until tender, 8 to 10 minutes.
- Add the drained noodles and 1 tablespoon vegetable oil to vegetables. Cook and stir until noodles are heated through, 2 to 3 minutes.
- Remove the wok from heat and pour the sauce over vegetables and rice noodles.
- Toss to fully coat the vegetables and rice noodles with sauce.
- Garnish with peanuts, 2 tablespoons chopped cilantro, and paprika.

BLACK AND WHITE TUNA PAD THAI

- soak noodles in hot water, changing water everytime that it turns white and frothy, for 3 to 4 hours. (can be soaked overnight in refridgerator.) cut peppers into strips. begin by coarsely chop bok choy into bite size chunks. cut tuna into bite size chinks and dredge in sesame seeds. sit to side. grill fresh corn and remove from cob. open and drain bamboo shoots. pad thai sauce: in large container mix all ingredients until evenly mixed. in wok: heat oil on very high heat. (quickly) stir fry eggs and vegetables. after eggs and veggies have been cooking for about 20 to 30 seconds add meat. cook for an additional 20 to 30 seconds. remove from heat and add noodles. return to heat and add sauce. toss and flip all ingredients until thoroughly cooked. (appox. 1 to 2 minutes) serve immeadiately garnish with freshly chopped thai peppers, leftover sesame seeds, and freshly grated ginger root.
