2 tablespoons olive oil
1 onion, chopped
1 carrot, chopped
4 garlic cloves, chopped
2 teaspoons ground cumin
1 to 2 teaspoons chopped jalapeño chile with seeds, divided
2 15- to 16-ounce cans black beans, undrained
1 15-ounce can petite diced tomatoes in juice
1 1/2 cups low-salt chicken broth
Chopped fresh cilantro
Chopped green onions
Crumbled feta cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, carrot, and garlic; sauté until vegetables begin to soften, about 6 minutes. Mix in cumin and 1 teaspoon jalapeño. Add beans, tomatoes with juice, and broth; bring soup to boil. Reduce heat to medium, cover, and cook until carrots are tender, about 15 minutes. Transfer 3 cups of soup to blender and puree until smooth. Return puree to pot. Simmer soup until slightly thickened, about 15 minutes. Season to taste with salt, pepper, and remaining 1 teaspoon jalapeño, if desired.
  • Ladle soup into bowls. Pass cilantro, green onions, and feta cheese separately.

1 1/2 cups dried black beans (10 oz), picked over and rinsed
8 bacon slices (7 oz), chopped (1 cup)
1 small onion, cut into 1/4-inch dice (3/4 cup)
1/2 red bell pepper, cut into 1/4-inch dice (3/4 cup)
1 1/2 teaspoons chopped garlic
1/2 teaspoon finely chopped seeded fresh jalape&241;o chile
1 1/2 teaspoons dried oregano, crumbled
1 Turkish or 1/2 California bay leaf
1/2 teaspoon dried thyme, crumbled
3 qt reduced-sodium chicken broth (96 fl oz)
3/4 teaspoon white pepper
2 tablespoons chopped fresh cilantro
Accompaniments: sour cream and chopped fresh cilantro

Steps:

  • Cover beans with cold water by 3 inches in a bowl and soak at room temperature at least 8 hours, or quick-soak (see cooks' note, below). Drain well in a colander.
  • Cook bacon in a 5- to 6-quart heavy pot over moderately high heat, stirring occasionally, until golden, about 5 minutes. Transfer bacon with a slotted spoon to a small bowl and pour off all but 1 tablespoon fat from pot. Reserve 2 tablespoons chopped bacon for topping, then return remaining bacon to pot and heat over moderately high heat until hot but not smoking. Add onion, bell pepper, garlic, chile, oregano, bay leaf, and thyme and sauté, stirring frequently, until onion is softened, about 5 minutes.
  • Add beans, chicken broth, and white pepper and simmer, partially covered, stirring occasionally, until beans are very tender, about 2 1/2 hours. Discard bay leaf and stir in cilantro.
  • Serve soup topped with sour cream, chopped cilantro, and reserved bacon.

4 1/2 cups water
1 medium onion, chopped
1 large carrot, chopped
3 bacon slices, chopped
5 large fresh thyme sprigs
3 garlic cloves
1 bay leaf
2 1/4 teaspoons ground cumin
2 cups (or more) chicken stock or canned low-salt chicken broth
1/4 cup chopped fresh cilantro

Steps:

  • Place beans in large bowl. Add enough cold water to cover beans by 3 inches and soak overnight.
  • Drain beans; transfer to heavy large pot. Add 4 1/2 cups water and next 7 ingredients. Bring to boil. Reduce heat; cover and simmer until beans are very tender, stirring occasionally, about 1 hour 10 minutes.
  • Working in batches, puree black bean soup in blender with 2 cups chicken stock. Return soup to pot. Stir in chopped cilantro. (Soup can be prepared 1 day ahead. Cover and refrigerate.) Bring soup to simmer, thinning with additional chicken stock if necessary. Season to taste with salt and pepper.

2 tablespoons olive oil
1 1/4 cups chopped onion
4 large garlic cloves, chopped
1 tablespoon chopped fresh thyme or 1 1/2 teaspoons dried
3 15-ounce cans black beans, drained, 1 cup liquid reserved
2 14 1/2-ounce cans low-salt chicken broth
1 28-ounce can diced tomatoes in juice
2 teaspoons ground cumin
1 1/2 teaspoons hot pepper sauce

Steps:

  • Heat oil in large pot over medium heat. Add onion, garlic and thyme; sauté until onion is golden, about 8 minutes. Add beans, reserved 1 cup bean liquid, broth, tomatoes with juices, cumin and hot pepper sauce. Bring soup to boil. Reduce heat to medium-low and simmer until flavors blend and soup thickens slightly, stirring occasionally, about 20 minutes.
  • Working in 2 batches, purée 2 1/2 cups soup in blender until smooth. Mix purée back into soup in pot. Season with salt and pepper. Ladle soup into bowls.

1 4-ounce can diced mild green chilies
2 garlic cloves, chopped
1 tablespoon chopped jalapeño chili with seeds
1 tablespoon ground cumin
2 15-ounce cans black beans, undrained
2 cups canned low-salt chicken broth
8 tablespoons chopped fresh cilantro
Sour cream
Tortilla chips

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, green chilies, garlic, jalapeño, and cumin. Sauté until onion is tender, about 5 minutes. Add beans with juices and broth. Bring soup to boil. Reduce heat to medium-low; cover and simmer until flavors blend, about 15 minutes. Puree 3 cups soup in batches in blender. Return puree to same pot. Mix in 6 tablespoons cilantro. Season soup to taste with salt and pepper. Ladle soup into bowls. Top with dollop of sour cream and tortilla chips. Sprinkle with remaining 2 tablespoons cilantro.

2 medium carrots
1 leek
1/2 medium onion
1 cob white corn
2 cloves garlic
4oz smoked bacon
2 15oz cans black beans
1 4oz can hatch chilis
1 tablespoon Hatch chili powder
3 cups low sodium chicken broth.
1 small anchovy

Steps:

  • If you live close to a Trader Joe's then its is a one stop shop for all the above. The hatch chili powder I get here http://www.madeinnewmexico.com/hatchchilepowder.html you can get by with paprika and chili powder in its place, but I can't recommend this enough. Take the leeks, carrots & onion and slice and dice them. Mince the garlic and put to one side. Slice the corn from the cob and also save that for later. Take the bacon and chop it up into small 1/4 inch cubes. Sautee this in a decent size soup pot till the fat melts and the bacon is starting to crisp. Using a slotted spoon or otherwise take the bacon out and leave the fat in the pot. Add the carrot leek and onion to the fat and sautee until soft and starting to brown, about 1-10 mins. Add the garlic and chili powder and cook till the garlic flavor starts to come through. Drain the two cans of black beans and toss these in with the small can of chilis, chicken broth and corn. Add the anchovy; this is a trick I learned from Cooks illustrated and is the secret key to savory soups and stews. Anchovies are full of natural glutamate, like the msg in chinese food, adding an anchovy to a soup or stew like this dramatically accentuates the depth of flavor and enhances the savory aspect. Tell no one and they will never notice any anchovy flavor, just deep rich soup. Do the same in a lamb stew for the same kind of effect. Bring to a boil and then reduce to simmer for 25-30 mins. At this stage spoon out about a 1/2 a bowl of the beans, corn and onion and take a hand blender to the rest. Return the separated bean mix and add season to taste. Adding the salt at this stage is best as the anchovy and bacon can be salty and adding it now when the flavor is developed will stop the soup from being overly salty. Cook for a further 10 or 15 minutes then serve. Eat bowl after bowl till its all gone. If you manage to have leftovers I've heard reheats perfectly. Enjoy

2 cups chopped onions
1 cup chopped celery
6 fresh flat-leaf parsley sprigs
2 fresh thyme sprigs
1 Turkish bay leaf (or 1/2 California)
1 large ham hock
6 cups beef stock or broth
4 cups water
1/3 cup dark rum
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • soak beans in cold water to cover by 2 inches for at least 8 hours; drain Melt butter in a 6-8 quart heavy pot over moderately low heat. Add onions, celery, parsley, thyme, and bay leaf, and cook, stirring occasionally until vegetables are softened, about 10 minutes. Add ham hock, beans, stock, water, and pepper to taste and bring to a boil. Reduce heat and simmer, uncovered, adding more water if necessary to keep beans covered, until beans are very tender, about 3 hours. Remove bay leaf, and cut meat from the ham hock into bite size pieces, then return to soup.

2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper
1 bunch cilantro
juice of 1/2 lime
Thinly sliced scallions, for garnish
Sour cream, for garnish
Grated ch

Steps:

  • Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper. Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.
