BLACK GOLD BURGERS
These juicy grilled burgers are served in onion rolls with a flavorful sauce of caramelized onions, garlic and steak sauce.

Steps:
- Heat grill to medium heat.
- Cook and stir onions and garlic in margarine in medium skillet on medium heat 5 min. or until tender but not browned; stir in sugar. Simmer on low heat 10 min., stirring occasionally.
- Meanwhile, shape meat into 6 patties. Grill 5 min. on each side or until done (160°F).
- Stir steak sauce into onion mixture. Fill rolls with lettuce, onion mixture and burgers.

- Heat a grill or grill pan over medium-low heat.
- In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
- Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
- Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

Should you win the lottery, this is a wonderfully extravagant way to enjoy the odoriferous black fungus. You'd need 15 to 20 minutes' cooking time for a 2-inch truffle.
BLACK BEAN BURGERS WITH RICE
This is great for this week and freezing for another. Use left over beans and rice (cook extra earlier in the week when making other dishes). If you're using canned, add extra seasoning (leftovers would be seasoned from the previous meal). Stale bread crumbled seems to work fine without affecting the flavor. Season any way you like. Garlic onion is popular, I've listed a taco type here. Think about how the leftovers you are using are already seasoned any play that up. Fiery hot peppers are a great addition too! Freeze first if grilling. Transferring from freezer paper directly to pan has prevented any breaking problems. Wait until they are partway cooked before flipping, and you should have success with black bean burgers that hold together!

- Crack eggs into large mixing bowl.
- Add seasonings. Add black beans and rice one cup at a time, mixing and mashing with a potato masher as you go. Adding them in increments helps the first set get smooth, while leaving some texture to the later beans.
- Add bread crumbs. I stir them in with the masher, because dishes are annoying to wash.
- Line 2 cookie sheets with freezer paper, to collect patties.
- Form into patties. Wetting your hands with water will minimize sticking from the egg to your hand, but it doesn't affect the burgers either way. 1/3 of a cup of mix works well and will make about 16 patties, but if you prefer a hefty burger do 1/2 cup scoops.
- Cut freezer paper into individual squares, used to transfer patties to pan, or prevent freezing together.
- Fry over medium heat for 6 minutes per side. I like to fry mine in oil with sesame seeds and onion in the pan. If grilling or cooking a second batch from frozen, more like 10 minutes per side.

BLACK BEAN COLLEGE VEGGIE BURGERS
For health reasons, I have to eat gluten free, dairy free, and low fat. So hamburgers are off the list. This is the recipe I invented to satisfy these cravings. I'm sharing this to get other people's opinions of it and will gladly accept any changes/additions/corrections.

- (All measurements are estimates since I eyeball everything).
- Drain and mash the black beans. (Do NOT puree -- you want it to still have some texture).
- Stir in salsa, minced onion, and all spices (including Bragg amino liquids, which can be found in the health food section).
- Add in flour until the mixture forms a "dough" about the consistency of very soft cookie dough.
- Lightly grease a frying pan, and turn the temperature very high.
- Spoon onto the pan and spread it out to desired thickness. At this point, I like to add some more of the amino liquids over the top.
- Cook about 2 min on each side, or until it holds itself together when turned.
- I like to eat them on corn tortillas.

- If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
- In a medium bowl, mash black beans with a fork until thick and pasty.
- In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
- In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
- Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
- If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.
