⅓ red onion, chopped
1 tablespoon minced garlic
1 ½ cups water
1 (6 ounce) can tomato paste
3 tablespoons white sugar
1 slice bacon, cooked and crumbled
1 teaspoon salt
1 teaspoon dried basil
1 pinch red pepper flakes

Steps:

  • Heat olive oil in a small pot over medium heat. Add onion and garlic; cook and stir until onion is soft, about 5 minutes. Stir in water, tomato paste, sugar, bacon, salt, basil, and red pepper flakes. Simmer until flavors combine, about 30 minutes.

4 cups low sodium chicken broth
3 cups leftover ground meat, sauce (bolognese or ragu)
1 cup orzo pasta
2 tablespoons butter
1 handful grated romano cheese (Parmesan or Grana Padano)

Steps:

  • Bring chicken broth (or water with chicken bouillon) and leftover meat sauce to a boil in a large pot, over high heat. Add orzo pasta and stir frequently so it doesn't stick at the bottom.
  • When the soup comes to a boil, reduce heat to medium and simmer till the orzo is cooked, about 12-13 minutes or according to package instructions.
  • Remove pot from heat, stir in butter and cheese, and serve immediately. Top with extra cheese, if desired.
  • MAKES 6-8 SERVINGS.

1 medium onion, chopped
2 stalks celery, chopped
2 carrots, chopped
3 cloves garlic, chopped
2 teaspoons salt
1 cup green beans, diced
3 cups tomato sauce
5 cups water
16 oz kidney bean, 1 can
1 lb macaroni
parmesan cheese, for serving
fresh basil, for serving

Steps:

  • In a heavy bottom pot, combine the olive oil, onion, celery, and carrots over medium heat. Cook until the carrots soften and the onions become slightly translucent.
  • Add the garlic and salt, and cook for an additional 2 minutes.
  • Add the green beans, sauce, and water, and bring to a boil.
  • Add the beans and macaroni and cook for about 9-10 minutes until the macaroni is al dente.
  • Serve warm with Parmesan and basil.
  • Enjoy!

I ran across this recipe while searching for healthier recipes to feed my family. I haven't tried this one yet, but it definitely looks good.

1 cup orzo pasta
2 tablespoons olive oil
2 garlic cloves
1/4 teaspoon crushed red pepper flakes
2 boneless skinless chicken breast halves, cut into bite-size pieces
salt
1 tablespoon chopped fresh parsley
2 cups fresh spinach leaves
grated parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add orzo pasta, cook for 8 to 10 minutes until al dente, drain.
  • Heat olive oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown, being careful not to burn the garlic.
  • Stir in chicken, season with salt, and cook 2 to 5 minutes, or until lightly brown.
  • Reduce heat to medium, and mix in the parsley and cooked orzo.
  • Add spinach to the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach wilts.
  • Remove from heat.
  • Serve topped with Parmesan cheese.

1 tablespoon shallot, chopped
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon dried thyme
1/4 cup orzo pasta, cooked
1 tablespoon goat cheese

Steps:

  • Remove stems from mushrooms and chop coarsely. Reserve caps.
  • Spray medium skillet with cooking spray; heat over medium heat until hot.
  • Saute mushroom stems 2-3 minutes. Add shallots, garlic and herbs.
  • Saute until shallots are tender, about 3 minutes.
  • Stir in orzo and cheese; cook until orzo is warm; 1-2 minutes.
  • Heat oven to 350. Spoon orzo into mushroom caps and place in a baking pan.
  • Bake, covered for 15 minutes or until mushrooms are tender.
  • Remove foil and bake 5 more minutes.
