BLACKBERRY SAGE KENTUCKY MULE - A BOURBON COCKTAIL
A twist on the classic Kentucky Mule, this adds sage and blackberries which play well with the bourbon.

- Muddle blackberries in the bottom of a copper mug. Pour in sage syrup and lime juice. Fill mug with ice. Top with bourbon and ginger beer. Stir to combine. Garnish. Cheers!

You can make a shrub into a low-alcohol cocktail called a shim by adding a splash of sparkling wine, vermouth, or your favorite aperitif. Try our Strawberry-and-Tarragon and Peach-and-Bay Laurel variations, too.

Yield Makes 2 1/2 cups shrub base (enough for about 20 servings)

- In a large nonreactive pot (such as stainless steel), combine berries, sugar, and sage. Let stand 1 hour, stirring a few times. Cook over medium heat until warm to the touch, about 5 minutes. Add vinegars and continue cooking, stirring occasionally, until mixture comes to a bare simmer (do not let boil). Remove from heat; let stand at room temperature, uncovered, 24 hours. Remove and discard sage. Strain shrub base; reserve pickled berries (which can be stored in an airtight container in refrigerator up to 1 week) for another use. Transfer shrub base to another airtight container; refrigerate until cold, at least 1 hour and up to 1 month.
- Fill glasses halfway with ice. Top with 1 part shrub base and 4 to 5 parts sparkling water. Stir once; garnish with more sage and fresh berries, if desired. Serve immediately.

- In a blender, crush your ice to a fine texture. (This is optional, but it adds a lovely texture and iciness to the drink!)
- In a copper mug (or your favorite cocktail glass), measure out the ginger beer, bourbon and lime juice.

- Start by tossing in 4-5 fresh, ripe blackberries into the bottom of a copper mule mug (or a chilled old fashioned, pour in your bourbon or whiskey and using a muddler; muddle your fruit with the bourbon.
- Then, if desired, take a few sprigs of mint and do the same thing, don't muddle too hard, you don't want the bitterness of the mint to be expressed, just the sweetness. Squeeze in the juice from half a lime into the glass.
- Fill the glass/cup with crushed ice; we don't have that function on our ice maker, so I just toss some ice cubes in a freezer baggie and get out my daily frustrations on the ice with a rolling pin = therapy and crushed ice for the WIN!
- Pour Ginger Beer and give it a gentle stir to bring up the lovely purple from the blackberries. Garnish with a wedge of lime, a few fresh or frozen blackberries, and a sprig of mint, serve immediately!
