Steps:
- Heat 1 tbsp (14.2 g) of butter on low in a cast iron or non-stick skillet. Choose a skillet large enough to fit 2 cracked eggs so that they won't touch in the pan. Place the skillet on the burner with the butter in the pan, and turn on the burner to heat the butter. If your pan isn't non-stick, such as a carbon steel pan, you may need to spray it lightly with a non-stick spray before adding the butter.
- Tilt the pan to distribute the melted butter over the bottom. The butter helps to fry the bottom of the eggs quickly and maintain their shape. Make sure the butter is covering almost as much of the surface of the bottom of the pan as possible. If you don't have butter, you can use lard, olive oil, or bacon fat to make your eggs, because each will spread to coat the bottom of the pan.
- Break 1 egg gently into the pan, keeping the yolk intact. Once the butter is simmering, hold the egg about 1⁄2 inch (1.3 cm) over the frying pan as you break it, and let it gently drop into the bottom of the hot pan. The egg whites will begin to cook immediately. If you have trouble cracking eggs, crack each one into a bowl, check for shell fragments, and then carefully pour the egg into the pan.Identifying a Fresh EggIf you're not sure how old the eggs in your refrigerator are, fill a glass with water and gently place the egg in the water. If the egg sinks to the bottom, it's very fresh and can be used for all recipes. If it's submerged at the top of the water with the wide end sticking up, it's slightly older. It's still safe to fry or hard boil older eggs, as long as they're cooked all the way through. If the egg floats on top of the water, it's expired and should be thrown away.
- Crack another egg into the pan so that the whites don't touch. Repeat the process for cracking the egg into the pan. If the whites begin to touch, place one of the flat edges of your spatula in between them to keep them separated. Alternatively, you can let the whites touch and separate them after they're cooked by slicing through the whites with a spatula or knife.
- Cover the pan with a lid and cook for 2-3 minutes. Covering the pan can accelerate the cooking process and make sure the whites are firm while the yolk remains runny. After 2 minutes, open the lid and check the whites to make sure they're cooked on the top. If not, recover the pan, and let them cook for another 30-60 seconds. You can check the doneness of the egg by shaking the pan gently to see if the yolk jiggles while the whites stay firm.
- Transfer the eggs to a plate and season with salt and pepper. Carefully hold the pan at a 45-degree angle next to the plate, and watch as they slide off of the pan. For more control, slide a spatula under each egg, and lift it onto the plate. Add a pinch of salt and pepper to taste and enjoy! You can serve sunny side up eggs with grits, over a piece of toast, or as part of a big breakfast with meat, potatoes, and fruit.

Steps:
- Gather the ingredients.
- Break each egg into a small bowl or ramekin.
- Heat 2 teaspoons of oil in a nonstick skillet over medium heat until it is shimmering. Turn the heat down to low and then, one at a time, slide the eggs into the pan.
- Place a lid or plate on the pan so it is tightly covered. Cook the eggs, covered, for about 2 1/2 minutes, or until the whites are firm and the yolks are still bright. If your low heat setting is on the hot side, begin checking the eggs after about 2 minutes.
- Arrange the eggs on a plate and sprinkle with kosher salt and freshly ground black pepper.

HOW TO: MAKE SUNNY SIDE UP EGGS
After making perfect roasts, fish, rice, and pasta using the cook-off-of-heat method, I tried it on sunny side up eggs with perfect results every time. A lid is necessary for this recipe's method, and a clear lid is helpful. This is now my go-to snack when I want fast comfort food. After seeing fellow college dormmates make rubber sunny-side-up eggs, I figured posting my method on Zaar might be a good idea to spread the joy of lovely sunny side up eggs in all its runny-yolk glory. Always add salt only right before cooking or after cooking eggs, because salt will start the coagulation process prematurely. In the case of sunny side up eggs, the salt particles will cause the area it's touching to cook faster during the time in the pan, so it's best to leave the salt off until the egg is ready to be served. I love this draped over a slice of bread - simply heaven.

Steps:
- Add oil, butter, or margarine to thoroughly-heated pan; spread with a spatula.
- Crack egg on a flat surface to avoid tiny shell pieces breaking apart and sticking to the egg white and add egg to pan (slip egg into a saucer first if you have trouble keeping the yolk from breaking); cover immediately.
- Turn off heat after one minute - take off of stove if using an electrical stove; leave covered until egg white around yolk is opaque white - usually 3-5 minutes, depending on your pan's ability to retain heat. Uncover, add salt (might not be needed if salted butter or margarine was used) and pepper to taste, carefully run spatula under egg, and serve.

Steps:
- In a heavy 10-inch skillet, heat the butter over medium heat until it begins to sizzle and look hot.
- Break an egg into a custard cup, small bowl or saucer. Slip the egg carefully into the skillet. Repeat with the remaining eggs. Reduce heat to low. You should still be able to see and hear the eggs sizzle as they cook. If they stop sizzling, turn up the heat a little.
- Cook uncovered 5 to 7 minutes, frequently spooning butter from the skillet over the eggs, until the whites are set, a film forms over the yolks and the yolks are thickened.

- First, heat a non stick skillet for 10 seconds over high heat. Getting the pan hot helps to prevent the egg white from spreading out too much. Turn the heat down to low, and crack the egg into the skillet.
- Immediately cover the pan. This will trap the heat and cook the top of the yolk. If your skillet doesn't have a lid, use a plate or a cutting board. I used a lid from a pot.
- Next, turn the heat up to high for 15 seconds, this speeds up the process of cooking the egg white. Keep the skillet covered.
- Then, turn the heat back down to low, and keep the pan covered for 2 – 2 ½ minutes. It is important to keep your eye on the eggs as they cook. In just 20 seconds the egg can go from having a fully cooked white to having an less than runny yolk.
