This easy sugar-free blackberry cobbler recipe needs just 10 minutes prep! So delicious, no one will know this is a low carb blackberry cobbler.

1 lb Blackberries
2 tbsp Lemon juice
1/3 cup Besti Monk Fruit Allulose Blend ((or 1/4 cup if you want it less sweet))
2 tbsp Vital Proteins Grass-fed Gelatin
1 cup Wholesome Yum Blanched Almond Flour
1/4 cup Besti Monk Fruit Allulose Blend ((or 3 tbsp if you want it less sweet))
1/2 tsp Baking powder
1/4 tsp Sea salt
1/4 cup Coconut oil ((can also use butter or ghee if not dairy-free))
1/2 tsp Vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the berries, lemon juice, and sweetener. Sprinkle (don't dump) a tablespoon gelatin over the mixture and mix to combine, then repeat with the other tablespoon gelatin.
  • Transfer the berries to the bottom of a glass or non-stick 8x8 inch (20x20 cm) baking pan.
  • In another large bowl in the microwave, or a saucepan on the stove, melt the coconut oil. Remove from heat.
  • Stir the vanilla extract into the melted coconut oil. Stir in the almond flour, sweetener, baking powder, and sea salt. The dough should be crumbly, but buttery and a little moist.
  • Crumble the dough over the top of the berries in the pan, leaving some small spaces of berries shining through.
  • Bake the cobbler for about 25-30 minutes, until the top is golden. Rest at least 10 minutes before serving, or cool to room temperature for even thicker cobbler.

1 cup Water ((divided, plus more for as needed in step 4))
2 lb Strawberries ((quartered))
1 1/2 cups Besti Monk Fruit Allulose Blend ((to taste, see instructions))
4 tbsp Unflavored gelatin powder

Steps:

  • Combine 1/2 cup (118 ml) water and strawberries in a large saucepan. Bring to a boil, stirring and mashing as berries soften.
  • Reduce heat to medium-low. Simmer for 8-10 minutes, until berries are fall-apart soft. Mash with the back of a spoon.
  • Meanwhile, pour 1/2 cup (118 ml) water into a small bowl. Sprinkle the gelatin powder into the bowl and whisk immediately before it sets. Set aside to bloom for at least 5 minutes.
  • Place a fine mesh sieve over a bowl. (If you want super clear jello, line it with a jelly bag or nut milk bag.) When the berries are very soft, pour the berry mixture over the sieve. Press with a spoon or spatula to push the juice into the bowl. Measure out as much juice as you can to use for the jello (up to 3 cups but it will likely be less). Add more water to to the juice to reach 3 cups liquid total.
  • Wipe down the saucepan and pour juice back into the saucepan over medium heat. Add Besti and stir to dissolve. Taste and adjust sweetener to taste if needed.
  • Reduce heat to low. Stir in the bloomed gelatin and heat, stirring, for about 2 minutes, until gelatin dissolves.
  • Line an 8x8 pan with parchment paper, with the paper hanging over the sides. Pour the strawberry liquid into the pan.
  • Refrigerate for at least 4-6 hours, or overnight, until set.
  • Remove the jello from the pan using the edges of the parchment paper. Slice into 1 inch squares.

1 package (12 ounces) fresh or frozen cranberries, thawed
1 can (12 ounces) frozen apple juice concentrate, thawed
2 packages (.3 ounce each) sugar-free raspberry gelatin
1 can (8 ounces) crushed pineapple, undrained
1 cup chopped celery
1 medium navel orange, peeled, sectioned and chopped
1/2 cup chopped walnuts

Steps:

  • In a 3-qt. microwave-safe dish, combine cranberries and apple juice concentrate; cover with waxed paper. Microwave on high for 6 to , 7-1/2 minutes or until most of the berries have popped. Immediately stir in gelatin powder until dissolved. Cool for 10-15 minutes. Add remaining ingredients; mix well. Pour into a 2-qt. ring mold coated with cooking spray. Refrigerate until firm, about 3 hours. Unmold onto a serving plate just before serving.

4-1/2 cups prepared juice (buy about 6 pt. fully ripe blackberries)
1 cup water
3 cups sugar, measured into separate bowl, divided
1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
1/2 tsp. butter or margarine

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Crush berries thoroughly, one layer at a time. Place in large saucepan; add water. Bring to boil. Reduce heat; cover and simmer 5 min. Place three layers of cheesecloth or a jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 4-1/2 cups prepared juice into 6- or 8-qt. saucepot. (If necessary, add up to 1/2 cup water for exact measure.)
  • Mix 1/4 cup of the sugar (from the measured amount in bowl) and pectin in small bowl. Add to fruit in saucepot; mix well. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining 2-3/4 cups sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids springs back, lids are not sealed and refrigeration is necessary.)

Steps:

  • Rinse 6 clean plastic containers and lids with boiling water. Dry thoroughly.
  • Crush blackberries thoroughly, one layer at a time. Sieve half the blackberries to remove seeds, if desired. Measure exactly 4 cups prepared fruit into large bowl.
  • Mix sugar and pectin in medium saucepan. Stir in water. Bring to boil on medium-high heat, stirring constantly. Cook and stir 1 min. Remove from heat. Immediately add to prepared fruit; stir 1 min. or until blended.
  • Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Refrigerate up to 3 weeks or freeze up to 1 year. (If frozen, thaw in refrigerator before using.)
