BLACKENED SALMON WITH BLUE CHEESE SAUCE

Steps:
- Preheat oven to 400 degrees F.
- In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
- Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
- Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
- For the sauce:
- Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.
CAJUN BLACKENED SALMON
Yet another recipe from my mother-in-law, who is probably the best cook that I personally know. This is, hands down, our favourite way to eat salmon in our house - and we eat a lot of it! The spice portion can be doubled and stored for later - I typically double or triple the recipe and store it in an airtight jar so that it is available whenever I want it.

- Mix together spices in an airtight jar and shake until well blended.
- Sprinkle cajun spice liberally over salmon fillets on both sides.
- Melt butter in a large pan over medium high heat until sizzling hot.
- Place salmon fillets in butter and cook each side 4-8 minutes, depending on the size of the fillet. Be sure to cook one whole side before flipping to blacken properly.

- In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.
- Brush salmon fillets on both sides with 1/4 cup butter, and sprinkle evenly with the cayenne pepper mixture. Drizzle one side of each fillet with 1/2 remaining butter.
- In a large, heavy skillet over high heat, cook salmon, butter side down, until blackened, 2 to 5 minutes. Turn fillets, drizzle with remaining butter, and continue cooking until blackened and fish is easily flaked with a fork.

THE BEST CAJUN BLACKENED SALMON EVER.
We eat a lot of salmon (at least once a week) and this is by far my favorite way of preparing it. It's really quite simple, and the end result is so delicious. The sweetness of the apple juice/white wine combined with the spiciness of the Cajun seasoning is amazing. The blackened texture of the fish is also great. Not your typical boring salmon!

- Melt butter over medium high heat. Stir in 1 to 2 tablespoons (depending on how spicy you like it) of Cajun's Choice Blackened Seasoning and garlic. Stir constantly for 1 minute to blend flavors. Slow the cooking of the butter and the garlic by adding wine. Stir constantly and cook for 1 minute. Add fish fillets and cook until fish flakes apart. Squeeze lemon over fish and serve.

SALMON MEDALLIONS
Steps:
- Preheat grill to high.
- Place tied salmon steaks on the alder planks. Cut 1 1/2-inch hole in center of tied steaks. Finely mince fresh dill and mix with cream cheese. Spoon the mixture into the center of steaks. Season with lemon zest, paprika, salt, and cracked black pepper. Place planks on grill until they begin to smoke, reduce heat to medium low and cover grill. Cook slowly for 15 to 20 minutes or until the fish begins to flake easily. Do not overcook. Garnish with lemon wedges and fresh herbs.
ROAST SALMON WITH WARM BLUEBERRY VINAIGRETTE RECIPE - (4.7/5)

- Step 1 Preheat oven to 400°F. Line baking sheet with foil and spray with nonstick spray. Step 2 Heat butter in small saucepan over medium heat; add shallot. Cook, stirring constantly, until softened, 1-2 minutes. Stir in blueberries, vinegar, maple syrup, water, rosemary, and 1/4 teaspoon salt. Increase heat to medium-high and cook, stirring occasionally and pressing berries with back of spatula to crush, until mixture is thickened, about 5 minutes. Step 3 Meanwhile, sprinkle pepper and remaining 1/4 teaspoon salt on salmon; place on prepared baking sheet. Bake until salmon is just slightly pink at center, 8-10 minutes. - Heat a large skillet over medium-high heat and add the butter and oil. When the butter has melted, add the salmon and cook about 2 minutes per side. The rub will give it a nice color.
- Transfer the whole pan to the oven and cook for another 4 to 6 minutes.

BLACKENED SALMON PASTA

- Set salmon fillets on a plate with flesh-sides up; brush the tops with melted butter.
- Combine paprika, brown sugar, cayenne pepper, salt, garlic powder, onion powder, oregano, black pepper, white pepper, basil, and thyme for seasoning in a small bowl. Sprinkle seasoning evenly over top of the salmon fillets, then lightly press the spices down onto the fish.
- Heat a cast iron skillet over medium heat. When the pan is hot, place salmon, flesh-side down, into the skillet. Cook for 2 to 3 minutes, then carefully flip. Continue to cook until salmon flakes easily with a fork, 5 to 6 more minutes. Remove to a plate and keep warm.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and transfer to a large bowl. Toss with olive oil to keep it from sticking together.
- Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add mushrooms, bell peppers, onion, and garlic; saute until vegetables are soft, about 5 minutes. Use a slotted spoon to remove vegetable mixture from the pan and add it to the bowl with the linguine.
- Drain the excess liquid from the saucepan. Add remaining 6 tablespoons butter to the pan and reduce heat to medium. Stir in half-and-half, Cajun seasoning, salt, pepper, and garlic powder. Cook, stirring occasionally, until thick and bubbly, about 10 minutes. Gradually stir in Parmesan cheese until melted and sauce has thickened.
- Pour sauce over the linguine and vegetable mixture. Add tomatoes and toss to combine.
- Serve pasta in bowls topped with blackened salmon, removing the skin, if desired. Garnish with parsley.

- Mix all ingredients except for fish.
- Lay the fillets, skin side down in baking pan.
- Pour marinade over fish and allow to sit for ten minutes.
- Bake for 10-15 minutes in 350 oven, basting regularly.
- Move fish to just under the broiler and allow to blacken surface of fish for a few minutes.
- Add capers if desired, baste again, and serve.
