1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1 teaspoon Dried Oregano
1/4 teaspoon Cayenne
2 teaspoons Smoked Paprika
1/2 teaspoon Sea Salt
1/4 teaspoon Pepper
Lemons (for serving)

Steps:

  • Preheat oven to 375ºF
  • Combined onion powder, garlic powder, oregano, cayenne, paprika, salt and pepper.
  • Place salmon filet on a rimmed baking sheet lined with parchment paper.
  • Coat salmon with oil.
  • Sprinkle on spice blend then gently rub over the entire salmon fillet.
  • Bake for 14 minutes then broil 2-3 minutes or until cooked through.

Yet another recipe from my mother-in-law, who is probably the best cook that I personally know. This is, hands down, our favourite way to eat salmon in our house - and we eat a lot of it! The spice portion can be doubled and stored for later - I typically double or triple the recipe and store it in an airtight jar so that it is available whenever I want it.

4 -6 salmon fillets
2 tablespoons butter
1 tablespoon paprika
1 tablespoon salt
1 tablespoon onion salt
1 tablespoon garlic powder
1 tablespoon cayenne pepper
3/4 tablespoon white pepper
3/4 tablespoon black pepper
1/2 tablespoon thyme
1/2 tablespoon oregano
1/2 tablespoon sage

Steps:

  • Mix together spices in an airtight jar and shake until well blended.
  • Sprinkle cajun spice liberally over salmon fillets on both sides.
  • Melt butter in a large pan over medium high heat until sizzling hot.
  • Place salmon fillets in butter and cook each side 4-8 minutes, depending on the size of the fillet. Be sure to cook one whole side before flipping to blacken properly.

This is a recipe I found on All Recipes. It's SPICY, tasty and a delicious way to serve salmon. I've altered the recipe quite a bit but will spell out both variations so you can make this recipe according to what suits your family. For instance, this recipe calls for a 1/2 cup of butter but I don't use any...just olive oil to brush the fillets with. Also, this recipe states to cook the fish entirely on the stove but I blacken for a few minutes and then bake at 400 for 10 minutes for perfectly cooked fish without an overly smoky kitchen!

1 tablespoon ground cayenne pepper
1 tablespoon onion powder
2 teaspoons salt

1/4 teaspoon dried oregano
1 lb salmon (fillets, skin removed)
2 tablespoons extra virgin olive oil (The original recipe calls for 1/2 cup butter)
olive oil flavored cooking spray

Steps:

  • In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.
  • Brush salmon fillets EVOO until moist, and sprinkle evenly with the cayenne pepper mixture. Mist with EVOO spray (I use Garlic flavored EVOO spray).
  • In a large, heavy skillet over high heat, cook salmon, until blackened, 2 to 5 minutes. Turn fillets, brush with remaining EVOO , and continue cooking until blackened and fish is easily flaked with a fork.
  • At this point, I bake at 400 for 10 minutes or until desired doneness (I like mine well done). If you don't like yours well done, skip the baking stage.

2 (6 oz) fillets wild-caught sockeye salmon (1/2-inch thick)
1 tablespoon avocado oil

Steps:

  • In a small bowl, mix together the kosher salt, chili powder, and garlic powder.
  • Dry the fish with paper towels. Rub the spice mixture all over the fish.
  • Heat a large (12-inch) nonstick skillet* over medium-high heat, about 3 minutes. Brush with the oil.
  • Place the salmon fillets in the skillet. Cook until the outside is blackened, 2-3 minutes per side.**
  • Remove the skillet from the heat and cover it tightly with foil (or use a lid if has a tight-fitting lid). Allow the fish to finish cooking in the pan's residual heat, for about 5 minutes (its internal temperature should reach 145ºF). Serve immediately.

Steps:

  • In a small bowl, add paprika, onion powder, garlic powder, dried, salt and pepper. Mix all together well.
  • Brush ½ tablespoon of olive oil on top of salmon fillets.
  • Sprinkle the spice mix on the flesh side of the salmon only. Using your fingers, tap the spicy mix on top of the salmon (on the flesh side).
  • In a non-stick skillet or cast iron skillet, heat 2 tablespoons of olive oil over medium heat. Wait 2 minutes and then add the salmon fillets and cook for about 3-5 minutes. Time will depend on the thickness of the salmon fillets. Reduce the heat to medium-low and flip the salmon fillets over and cook for more 3-4 minutes.
  • Before serve, garnish with parsley. Serve it with steamed broccoli, mashed cauliflower or roasted veggies. Enjoy!

1/2 tablespoon dried oregano

Steps:

  • Gather the ingredients.
  • Lay salmon fillets skin-side down into a shallow ceramic or glass baking dish. Squeeze equal amounts of lime juice over each filet and let sit 5 minutes.
  • In a food processor, blend onion powder, thyme, basil, oregano, chile, pepper, salt, and sugar until homogeneous. Spread the spices evenly onto a large plate or baking sheet.
  • Lift salmon fillets from lime juice, then flesh side down into spice mix, pressing very gently to encourage spices to stick to fish. Turn each fillet onto sides and press again.
