Steps:
- Whisk the lime juice, honey, horseradish, Worcestershire sauce, hot sauce, tarragon, and salt and pepper to taste in a bowl.
- Gently fold in the lobster, avocado and watercress. Serve in shot glasses, if desired.
GRILLED LOBSTER AND AVOCADO COCKTAIL
Steps:
- Heat grill to medium. Place lobsters on the grill, cut side down, and cook until slightly charred and just cooked through. Remove meat and coarsely chop.
- Whisk together lime juice, honey, horseradish, Worcestershire, hot sauce, tarragon, and olive oil in a medium bowl. Season with salt and pepper, to taste. Add the grilled lobster meat, avocado, and watercress. Serve in martini glasses and garnish with a lime wedge.
BLACK BEAN AVOCADO SALSA
This has to be my favorite summer salsa. It's colorful and fresh tasting. It makes a bunch, so invite some friends over. I like to take the lime after it's been juiced and rub down the bowl I will be serving the salsa in. I also rub the lime on the plastic wrap this will help keep the avocados from turning brown. Don't forget the tortilla chips!

Steps:
- Mix black beans, corn, tomatoes, red bell pepper, jalapeno pepper, cilantro, red onion, lime juice, vinegar, salt, and black pepper in a bowl; fold avocado into the mixture. Cover bowl with plastic wrap, putting it right on top of salsa; chill at least 2 hours.

Steps:
- Whisk together the flour and egg in a medium bowl and gradually add the milk and then add then the chives and stir to combine and season with salt and pepper.
- Lightly grease a large non-stick pan and place over medium heat.
- Spoon five tablespoonful quantities of mixture into the pan, allowing room for spreading and cook for 1 to 2 minutes or until golden underneath and bubbles appear on the surface and then turn and cook for a further 30 seconds or until golden underneath and transfer to a plate and repeat with remaining batter in 3 more batches.
- Place the blinis on a serving platter and smear a dollop of sour cream and top each with a slice of lobster then the avocado that have been mixed with the lime juice.
- Top the each with a sprig of dill and serve with lemon, if desired.

SPICY LIME PRAWNS SERVED WITH TOMATO AVOCADO SALSA
The spicy tangy prawns are lovely served by themselves with some grilled lime wedges but I love the flavours of the salsa along with it.. so either way, it's delicious! Cooking time indicated includes marinating time.

Steps:
- For salsa, combine tomatoes, avocado, spring onion, chilli, coriander, garlic, lime juice and oil in a bowl and season with salt and pepper (you may make this upto 3 hours in advance. Cover tightly with cling film and refrigerate).
- You will need 4 wooden skewers soaked in water for atleast 20 minutes to stop them from burning.
- In a bowl, combine the minced garlic, paprika, chilli powder, lime juice and salt.
- Add in the prawns and toss to coat evenly.
- Thread 5 prawns onto each skewer, cover with clingfilm and refrigerate for 30 minutes (you may marinate the prawns upto 2 hours in advance).
- Pre-heat indoor grill to medium-hot, or for outdoor grills, medium-hot coals.
- Grill the prawns until they are pink and the flesh is opaque, about 3 minutes on each side.
- Serve hot with salsa and/or grilled lime wedges.
