2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk
1/4 cup olive oil
2 tablespoons (1/4 stick) unsalted butter, melted
Topping
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons olive oil
3 large onions (about 2 pounds), halved, thinly sliced
1 tablespoon finely chopped fresh rosemary
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups (about 6 ounces) crumbled blue cheese

Steps:

  • For crust:
  • Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.
  • For topping:
  • Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.
  • Spread onion mixture evenly over dough. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.

Rich, sweet caramelized onions, the sweet bite of fig jam, and pungent thyme go oh-so perfectly together in this easy savory tart made on store-bought puff pastry. It's a vegetarian-friendly addition to any holiday party menu, but meat-eaters won't be able to keep their mitts off of it either.

1 sheet frozen puff pastry (thawed in the refrigerator)
2 tablespoons olive oil
1 tablespoon butter
2 large yellow onions (halved and cut into thin slices)
1 teaspoon fresh thyme leaves (minced)
1 teaspoon garlic (minced)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup vegetable broth
1/3 cup fig jam
1 cup shredded gruyere cheese
Additional fresh thyme leaves for garnishing

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Lay thawed puff pastry sheet on a floured surface and roll until approximately 10" wide and 16" long. Carefully transfer puff pastry to a baking sheet. Trim edges if desired for a neater look, and prick the pastry several times with a fork.
  • Bake the puff pastry sheet for about 10 minutes until puffed and golden. Remove from oven.
  • In a large skillet over medium-low heat, heat the olive oil and butter until melted. Add the onions and saute, stirring occasionally, until soft, golden brown, and caramelized, about 40 minutes. Add thyme, garlic, salt, pepper, and vegetable broth to the onions and continue to cook over medium-low heat for about five minutes, stirring frequently. Remove from heat.
  • Carefully spread 1/3 cup fig jam over the puff pastry, leaving a 1/2-inch border around the edges. Evenly spread the onions over the top, then sprinkle with the Gruyere cheese.
  • Bake at 400 degrees Fahrenheit for 4 - 5 more minutes or until the cheese melts.
  • Garnish with additional thyme leaves and serve immediately. This tart may be made several hours ahead and reheated before serving, but I recommend baking it right before serving, otherwise the pastry gets a tad soggy.

12 -16 figs, dried

2 onions, large sweet

Steps:

  • Preheat oven to 400°F.
  • Soak figs in hot/boiling water for 1/2 hr.to soften. Set aside.
  • Lightly coat baking tray with olive oil.
  • Spread pastry on baking tray, join edges and pierce with fork to allow air to escape during baking.
  • Bake until light brown (approx. 5-7 min.).
  • Cook onions in butter and olive oil over medium heat until soft caramelized.
  • Add brown sugar, salt and pepper, thyme and cook over low heat for 5 minute.
  • Add drizzle of balsamic vinegar in last 2 minutes.
  • Pour onion mixture over pastry covering to edges.
  • Add figs (cut into small chunks).
  • Sprinkle with cheese.
  • Drizzle with olive oil.
  • Bake at 400F fro 10-12 minutes.
  • Cool before cutting.
  • Cut into appetizer size pieces.

200g plain flour , plus a little extra for rolling pastry
100g plain wholemeal flour
175g cold butter , 150g diced into chunks
100g walnut , roughly chopped in a food processor
3 eggs , plus 2 yolks
400g shallot , sliced
1 tbsp fresh thyme leaves, plus extra to decorate
200ml pot crème fraîche
200ml double cream
140g blue cheese - Danish Blue is a good vegetarian one
3-4 figs , halved, cut sides brushed with a little oil

Steps:

  • First make the pastry. Tip the flours into a food processor with ½ tsp salt and the diced butter. Pulse until you can't feel any lumps, then tip in the walnuts. Mix the egg yolks with 3 tbsp cold water, then dribble this into the machine while you pulse again until the pastry comes together. Tip the pastry out onto a floured surface, lightly bring it together into a ball, then roll out and line a deep 20-23cm tart tin with overhang. The pastry may crack, but just patch it back together, then cover and chill for 1 hr.
  • To make the filling, melt the remaining butter in a large pan, then add the shallots and soften for 10-15 mins, until golden and squishy. Stir in the thyme for 1 min, then remove from the heat. Beat the eggs in a jug with the crème fraîche and cream. Crumble in the cheese and season with pepper and a small amount of salt.
  • Heat oven to 200C/180C fan/gas 6. Blind bake the pastry for 20 mins, remove the baking beans and paper, then bake for a further 15-20 mins until golden and sandy. Reduce the oven temp to 180C/160C fan/gas 4. Add the cooled onions to the cream mixture and pour into the case. Sit the fig halves on top, cut side up, sprinkle with some more thyme and bake on the middle shelf for 1 hr-1hr 10 mins until the tart is browning and has a slight wobble - the cheese middle will firm up on sitting. Cool for about 15-20 mins, then remove from tin and serve with a green salad.

I made these up using some left over grilled steak from dinner the night before. Use a leftover steak with basic seasoning...such as salt and pepper or a soy based flavor. They are a great quick crowd pleaser that lets you get away with using leftovers.

1 large yellow onion, peeled and thinly sliced
1 sheet puff pastry, thawed
1/3 cup blue cheese, crumbles
3/4 cup steak, leftover cut into small pieces
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 garlic clove, minced
salt
pepper
1 egg, beaten lightly with a teaspoon of water

Steps:

  • In a hot skillet, heat oil. Add onions and cook until brown and caramelized. Stir frequently and be careful not to burn. Add garlic and vinegar. Reduce heat to medium low and cook a few more minutes until the liquid is fully absorbed. Remove from heat.
  • Stir in meat and cheese.
  • In the meantime, use a rolling pin to seal the creases of the puff pastry. Use parchment paper on either side to keep from sticking instead of flour. Cut into squares in any size of your choice. I like to do small ones (about 4 inches or so). Curl up the edges slightly to make an edge. They do not need to be perfect however -- this dish looks its prettiest rustic style.
  • Brush the outside edge of the pastry with the egg wash.
  • Fill each pastry square the mixture.
  • Bake in a 375 degree oven for about 8-12 minutes, or until browned on the edges.
  • Enjoy!

1 package puff pastry (thawed in the fridge overnight)
4 large yellow onions (halved, then thinly sliced)
2 teaspoons butter
4 teaspoons olive oil
1 teaspoon granulated sugar
1 tablespoon dry white wine
Kosher salt
fresh cracked pepper
1 egg + 1 teaspoon water, beaten
3/4 cup fig jam
5 oz. blue cheese (crumbled)
1 tablespoon fresh thyme leaves
honey for drizzling

Steps:

  • Heat butter and oil in a large saute pan over medium heat. Add onions and and stir to coat in oil. Grab a glass of wine and a magazine and plop yourself in front of the stove because you are going to be here for a while. You will cook the onions for 60 minutes total, stirring every 4-5 minutes or so. After they've cooked for 10 minutes add a pinch of salt. After they've cooked for 40 minutes add a teaspoon of sugar. After they've finished cooking for 60 minutes and are a gorgeous dark brown color, deglaze the pan with the white wine, season with salt and pepper to taste, then set aside. Preheat oven to 400 degrees. Unwrap the puff pastry and cut along the seams of each sheet, creating 6 rectangles total. Lightly flour your work surface and roll each piece into a 3.5″ x 12″ rectangle. Use a 3″ cookie cutter to make four tarts out of each rectangle. Transfer tarts to (2) parchment lined baking sheets. Combine puff pastry scraps into a ball, roll them out to the same thickness as your previous tarts and use the cookie cutter to make 10-12 more tarts. Arrange tarts on the two baking sheets about an inch apart. You will have 30-32 tarts total. Use a 2″ cookie cutter to score each tart in the center, creating a half inch wide crust. Brush the crust portion of the tart with the egg wash. Heat fig jam in a small saucepan over medium heat just until it becomes loose and spreadable. Spread a teaspoon or so of fig jam in the center of each tart. Top that with a teaspoon or so of caramelized onions. And then, you guessed it, top that with a teaspoon or so of blue cheese. Divide thyme evenly between the tarts, sprinkling a few leaves in the center of each tart. Bake tarts for 15-18 minutes or until the crust starts to get dark golden brown Remove tarts from the oven and drizzle with honey. Serve warm and enjoy! NOTES These tarts are also delicious at room temperature!
