CHICKEN WITH PEAR AND BLUE CHEESE SALAD



Chicken With Pear and Blue Cheese Salad image

I discovered this recipe in a cook book I recently purchased. It sounds delicious! I have not tried it, but I have chosen to share the recipe with you. Cook time is marinade time for the chicken. Hope you enjoy!

2 ounces olive oil
6 shallots, sliced
1 clove garlic, crushed
2 tablespoons chopped fresh tarragon
1 tablespoon English mustard
6 boneless skinless chicken breasts
1 tablespoon flour
2/3 cup chicken stock
1 apple, diced finely
1 tablespoon chopped walnuts
1 tablespoon heavy cream
salt and pepper
3 1/2 cups cooked rice
2 large pears, diced
1 cup blue cheese, diced
1 red bell pepper, diced
1 tablespoon chopped fresh coriander
1 tablespoon sesame oil

Steps:

  • In a deep bowl, mix olive oil, shallots, garlic, tarragon and mustard.
  • Salt and pepper to taste.
  • Place the chicken breasts in this mixture, coating well.
  • Chill for 4 hours.
  • Drain the chicken, reserving the marinade.
  • Quickly fry the chicken in a deep non-stick pan for 4 minutes on each side.
  • Transfer the chicken to a large serving platter.
  • Add the marinade to the pan, bring to a boil and sprinkle with the flour.
  • Add the chicken stock, apples and walnuts.
  • Gently simmer for 5 minutes.
  • Return the chicken to the pan with the sauce in it.
  • Add the heavy cream and cook for 2 minutes.
  • Mix the salad ingredients together and place a small amount on each plate.
  • Top each plate with a chicken breast and a spoonful of the sauce.
  • Serve immediately.

3 ripe but firm Anjou pears
Freshly squeezed lemon juice (3 lemons)
3 ounces coarsely crumbled sharp blue cheese such as Stilton
1/4 cup dried cranberries
1/4 cup walnut halves, toasted and chopped
1/2 cup apple cider
3 tablespoons port
1/3 cup light brown sugar, lightly packed
1/4 cup good olive oil
6 ounces baby arugula
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
  • Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
  • In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
  • Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

1 cup chicken stock
1/2 cup white wine
2 pears, peeled and sliced
2 tablespoons butter
2 minced garlic cloves (use more or less if you like)
1 cup heavy whipping cream
1/4 cup blue cheese (original recipe calls for 1/2 cup)
salt and pepper

Steps:

  • Place chicken breasts in the crock pot.
  • Pour chicken stock and wine on top of filets.
  • Top with sliced pears and dot with 2 tablespoons of butter.
  • Cook on low heat for 4-5 hour or until the chicken slides off a knife.
  • When done, stir in the whipping cream and blue cheese simmer until cheese melts.

1/2 cup reduced-calorie, fat-free or regular blue cheese salad dressing
1 1/4 cups cooked chicken strips
1 medium yellow or green bell pepper, thinly sliced
1 can (15 oz.) Del Monte® Lite Sliced Pears, drained
(Optional) 1 oz. crumbled blue cheese (about 1/4 cup total)
(Optional) coarsely ground black pepper
(Optional) chopped walnuts

Steps:

  • 1. Arrange equal amounts of the salad greens on each of 4 dinner plates.
  • 2. Spoon equal amounts of the dressing evenly over all.

1 1/2 cups lukewarm water
2 teaspoons granular yeast
1 teaspoon dark brown sugar
3/4 cup rye flour
2 3/4 cups, approximately, all-purpose flour, plus enough for rolling out dough
Salt to taste, if desired
1 tablespoon olive oil
Oil for greasing a bowl
4 firm, ripe, unblemished pears, about half a pound each
1/2 lemon
Cornmeal for sprinkling on tin
2 1/4 cups grated Gruyere cheese
1 1/3 cups crumbled blue cheese
1/4 cup melted butter, approximately

Steps:

  • Put the water in a warm bowl and sprinkle the yeast and brown sugar on top. Stir to dissolve and set aside.
  • Combine the rye flour, all-purpose flour, salt and olive oil in a mixing bowl and blend well. Add the yeast mixture and blend. Turn the dough out onto a lightly floured board and knead about 10 minutes. The dough should not be sticky. Add a litle more flour if necessary.
  • Shape the dough into a ball. Lightly oil the inside of a mixing bowl, place the dough in it and cover closely with a sheet of clear plastic wrap. Let the dough stand in a reasonably warm place until it is doubled in bulk, 45 minutes to an hour. Punch the dough down, shape into a ball and return it to a clean, lightly oiled bowl. Let stand again until doubled in bulk, 30 minutes or so.
  • Meanwhile, peel the pears and rub them with the lemon to prevent discoloring. Cut the pears in half lengthwise and remove the cores with a melon-ball cutter. Cut the pear halves into the thinnest possible slices. There should be about six cups.
  • Preheat the oven to 500 degrees.
  • Punch the dough down and divide it into thirds. Roll out each third into a 10- to 11-inch circle. Sprinkle three pizza tins or baking sheets lightly with cornmeal and place a circle of dough on each.
  • Arrange a first layer of pear slices close together in concentric circles on each round, leaving a margin of about one inch from the outer rim of dough. Scatter a third of the grated Gruyere over each. Cover with a slightly smaller portion of pear slices and sprinkle with crumbled blue cheese. Brush the rim of each pizza with melted butter.
  • Place the pizzas on a rack in the oven and bake 10 to 12 minutes.

Coat chicken with flour mixture, then dip in butter mixture and coat with pecans., Transfer to a greased baking sheet. Bake at 375° for 20-25 minutes or until a thermometer reads 170°., Meanwhile, place cream in a small saucepan. Bring to a boil; cook and stir for 8-10 minutes or until thickened. 4 sweet onions, thinly sliced

  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.

1 cup crumbled blue cheese
1 egg
