Sizzled Green Beans with Crispy Prosciutto & Pine Nuts image

Sizzling green beans in a little oil helps to bring out their natural sweetness. Prosciutto, pine nuts and lemon zest dress up the flavor without adding a lot of fat--a nice alternative to full-fat, creamy green bean casseroles.

2 pounds green beans, trimmed
2 1/2 teaspoons extra-virgin olive oil, divided
2 ounces prosciutto, thinly sliced, cut into ribbons
4 cloves garlic, minced
2 teaspoons minced fresh sage
1/4 teaspoon salt, divided
¼ cup toasted pine nuts
1 ½ teaspoons freshly grated lemon zest
1 teaspoon lemon juice
Freshly ground pepper, to taste

Steps:

  • Bring a large pot of water to a boil. Add beans, return to a boil, and simmer until crisp-tender, 3 to 4 minutes. Drain.
  • Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add prosciutto; cook, stirring, until crispy, 4 to 5 minutes. Drain on a paper towel.
  • Wipe out the pan; heat the remaining 2 teaspoons oil over medium heat. Add the beans, garlic, sage, 1/8 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the beans are browned in places, 3 to 4 minutes. Stir in pine nuts, lemon zest and the prosciutto. Season with lemon juice, the remaining 1/8 teaspoon salt and pepper.

These beans will complement any entree that you serve them with perfectly! The prosciutto and toasted pine nuts make for a smoky and earthy combination that you'll want to make again and again.

2 pounds green beans, (trimmed)
2 ½ teaspoons oil, (divided)
2 ounces prosciutto, (cut into thin ribbons)
4 garlic cloves, (diced)
2 teaspoons fresh sage, ((1 teaspoon dried sage))
¼ teaspoon salt
freshly ground pepper, (to taste)
¼ cup pine nuts, (toasted)

Steps:

  • Over medium-high heat, toast the pine nuts in a dry skillet (do not add oil), stirring frequently, so they don't burn. This process should take about 5 minutes, and they should be golden and fragrant. Set aside.
  • Prepare beans by washing and trimming the ends and then cutting to the desired length.
  • Bring a large pot of water to a boil. Add beans, return to boil, and simmer until crisp-tender, 3 to 4 minutes (less time for crunchier beans). Drain the beans and, rinse with cold water, set aside.
  • Heat ½ teaspoon oil in a large skillet over medium heat. Add prosciutto; cook until crispy, 4 to 5 minutes. Drain on a paper towel-lined plate.
  • Using the same pan you cooked the prosciutto in (pour out any excess oil from the prosciutto), heat the remaining 2 teaspoons of oil over medium heat. Add the beans, garlic, sage, salt, and several grinds of pepper. Cook, stirring occasionally until the beans are brown in places, 3 to 4 minutes.
  • Plate the beans and sprinkle with prosciutto and pine nuts. Season as needed with additional salt and pepper.

3 slices Parma prosciutto
Kosher salt and freshly ground black pepper
2 pounds Blue Lake green beans, stems removed
2 tablespoons extra virgin olive oil
1 shallot, minced

Steps:

  • Preheat oven to 350ËšF. Separate prosciutto slices and lay flat on a cooling rack over a baking sheet pan. Bake until crisp, about 10 minutes. Let cool on rack. Crumble into bite-size pieces. Set aside. Bring a large pot of well-salted water to a boil. Add the green beans and cook, approximately 2-3 minutes or until just tender. Remove beans with a slotted spoon and place in an ice water bath to cool. Drain beans into a colander. In a large heavy-bottomed sauté pan over medium heat, sauté the shallot in the olive oil until translucent. Add the green beans and toss to coat. Toss beans with crispy prosciutto, season with salt and pepper and serve.

8 pieces prosciutto, thinly sliced and cut into 1-inch pieces
3 tablespoons extra-virgin olive oil
1/2 shallot, diced
1/4 cup sliced skinless almonds
1/4 cup sultana (golden) raisins
1/4 cup raisins
1/4 cup pitted kalamata olives
Juice of 1 lemon
1 teaspoons honey
Salt and freshly ground black pepper
8 ounces green beans, trimmed and blanched in salted water
1 bunch asparagus, bottoms trimmed and blanched in salted water

Steps:

  • For the crispy prosciutto:
  • Heat a nonstick saute pan over medium-high heat. Put the prosciutto pieces in the pan and cook until crisp. Remove the prosciutto from the heat and reserve for the green bean and asparagus salad.
  • For the warm lemon dressing:
  • Put 1 tablespoon olive oil in a pan over medium- high heat. Add the shallots and season with salt. Saute the shallots until tender. Add the almonds, raisins, and olives, and mix to incorporate. Add the lemon juice and honey, stir to combine. Add the remaining olive oil, season with salt and pepper and remove from the heat.
  • For the green bean and asparagus salad:
  • Cut the green beans and asparagus into 1-inch pieces and put in a bowl. Pour the warm lemon dressing over the green beans and asparagus. Toss to combine and garnish with the crispy prosciutto.

4 slices prosciutto, thin,coarsely chopped
3 cloves garlic, pressed
1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary
1 lb fresh green beans, ends snipped
1/3 cup water, plus
2 tablespoons water
1 sprig fresh rosemary (to garnish) (optional)
salt & pepper

Steps:

  • Saute the prosciutto in wok or fry pan until just beginning to get crisp, remove& set aside.
  • Add garlic rosemary and 2 tbsp water to the pan and stir fry for 30 seconds.
  • Add beans and 1/3 cup water, season with salt& Pepper, cover and cook apprx 4 minutes or until the beans are heated through but still crisp.
  • Arrange beans on a heated platter and sprinkle the proscuitto on top garnish with a sprig of fresh rosemary- Serve.
