BLUE RIBBON OVERNIGHT ROLLS
Found on Allrecipes by Pam Vienneau. This is a delicious sweetish roll and great with breakfast. This mixture has to be left overnight - this time has not been included in the preparation time.

Steps:
- In large bowl mix together yeast, milk and sugar then let stand for 30 minutes.
- Mix eggs, butter and salt into yeast mixture.
- Mix in flour 2 cups at a time then cover with wax paper.
- Let dough stand at room temperature overnight.
- In the morning divide dough in half then roll each half into a 9" round circle.
- Cut each round into 12 pie shaped wedges.
- Roll up each wedge starting from wide end to the tip.
- Place on greased cookie sheets.
- Let stand until ready to bake then bake at 375 for 15 minutes.

BLUE-RIBBON HERB ROLLS
These rolls have been a favorite of ours for nearly 25 years. I even baked them in an old wood stove when we lived on a farm. I developed the recipe using several techniques I learned while studying the art of bread making. The recipe won a blue ribbon at our county fair. -Mary Ann Evans, Tarpon Springs, Florida

Steps:
- In a large bowl, dissolve yeast in 1/2 cup warm water. Add the oil, honey, salt, seasonings, egg, whole wheat flour and remaining water. Beat until smooth. Stir in enough all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 6 portions. Divide each into 24 pieces. Shape each into a 1-in. ball; place 3 balls in each greased muffin cup. Cover and let rise until doubled, 20-25 minutes., Bake at 375° for 12-15 minutes or until tops are golden brown. Remove from pans to wire racks.

HERBED DINNER ROLLS
The original recipe came from Allrecipes, but I increased the amounts of herbs because they were barely discernable. These are really good, a little more interesting than plain dinner rolls!

Steps:
- 1. Dissolve yeast and sugar in warm water; let stand to proof, about 10 min.
- 2. Into yeast mixture, add milk, eggs, salt, butter, parsley, chives and 4 C. flour; add remaining flour 1/2 C. @ tie until dough comes together. I mix this in my KA stand mixer, use paddle at first and then attach dough hook when dough starts getting stiffer. NOTE: You can use dried herbs instead of fresh, but only use about 1/3 the amount!
- 3. Turn out onto lightly floured board, knead til smooth and elastic (about 10 min.) **I leave it in mixer bowl and let the machine do the kneading** Cover w/damp towel and let rise until doubled, about 35-45 minutes in warm place.
- 4. Grease two 13" x 9" baking pans. Punch down dough, then shape into 18-24 rolls, you can make them any size you want. Arrange rolls in pan, cover again and let rise another 30-45 min. until doubled.
- 5. Preheat oven to 350°F. In small bowl, beat egg white with 2 Tbsp. water; brush over tops of rolls. ***I usually do NOT glaze before baking, instead I will brush rolls w/butter when removed from oven.***
- 6. Bake about 30 minutes, or til golden. Let cool on rack.
EASY BIG FAT YEAST ROLLS
Christine is right, this is a super easy yeast rolls recipe. They bake up warm and soft with golden brown tops. Serve with butter or a bit of jam and you too will fall in love with these delicious dinner rolls.

- 1. Pre-heat oven 350 degrees. Put water and yeast in large mixing bowl and add next 4 ingredients. Beat with dough hook until well blended.
- 2. Add 3 1/2 to 4 cups flour and mix until soft dough forms (should not be sticky).
- 3. Put out onto floured board and knead a few times until smooth.
- 4. Place in greased bowl, cover with plastic wrap and let rise in warm place for approximately 45 minutes.
- 5. Punch down and turn out onto floured board.
- 6. Shape into 12 rolls and place in greased 13x9 inch baking pan. Let rise again about 30 minutes.
- 7. Bake at 350 degrees for 20 minutes.
- 8. Brush tops of rolls with butter (or equivalent).
HERB FOCACCIA ROLLS

- Combine flour, yeast, 1 tablespoon thyme, 1 tablespoon rosemary, sugar and 1 teaspoon salt. Add water and 2 tablespoons oil; beat 1 minute (dough will be very sticky). , Divide dough among 18 greased muffin cups. Let rise in a warm place until doubled, about 30 minutes., Preheat oven to 375°. In a small saucepan over medium-low heat, stir together remaining herbs, salt and olive oil just until herbs are fragrant and oil is hot, about 1-1/2 minutes. - In a bread machine pan, place the water, butter, egg, sugar, salt, seasonings, flour and yeast in order suggested by manufacturer. Select dough setting(check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is complete, turn dough onto a lightly floured surface.
