2 cups fresh blueberries
¾ cup water, divided
2 teaspoons lemon juice
1 ½ teaspoons unflavored gelatin
3 tablespoons white sugar

Steps:

  • In a heavy saucepan over medium-high heat, combine blueberries, 1/2 cup water and lemon juice. Bring to a boil, then reduce heat and simmer gently for about 8 minutes, stirring frequently.
  • Meanwhile, soak gelatin in 1/4 cup cold water.
  • Remove blueberries from heat and stir in gelatin and sugar. Pour into hot, sterilized jars and seal. Cool and store in the refrigerator.

6 cups sugar
3 Tbsps lemon juice
2 tsps ground cinnamon
2 tsps grated Lemon peel
0.5 tsp ground Nutmeg

Steps:

  • Place blueberries in a food processor; cover and pulse just to break up the berries. Transfer to a stockpot.
  • Stir in the sugar, lemon juice, cinnamon, lemon peel and nutmeg. Bring to a full rolling boil over high heat, stirring constantly.
  • Stir in pectin. Boil for 1 minute, stirring constantly. Remove from the heat; skim off foam. Ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

This recipe for blueberry preserves is from "Mes Confitures: The Jams and Jellies of Christine Ferber." Try it on Popovers.

2 1/4 pounds blueberries
3 3/4 cups sugar
Juice of 1 small lemon

Steps:

  • Rinse the blueberries in cold water without soaking them.
  • Place blueberries in preserving pan with the sugar and lemon juice. Bring to a simmer.
  • Pour simmering mixture into a ceramic (or glass) bowl. Cover with parchment round and transfer to refrigerator. Refrigerate overnight.
  • The next day, transfer mixture to a large pot and bring to a boil over high heat, stirring gently.
  • Continue to cook over high heat for 5 to 10 minutes, stirring and skimming as necessary.
  • Check set (mixture should reach 221 degrees).
  • Pour the jam into sterilized jars, filling to the fill line. Repeat process with remaining jars. Put lids and rings on jars and tighten; do not overtighten. At this point, jam may be kept refrigerated up to 1 month.

Steps:

  • Combine blueberries, 1/2 cup water, and lemon juice in a heavy saucepan.
  • Bring to a boil; simmer gently for about 8 minutes, stirring frequently.
  • Meanwhile, soak gelatin in remaining 1/4 cup cold water.
  • Remove blueberries from heat; add gelatin and sweetener and mix well to dissolve.
  • Turn into small, hot jars; cover lightly and allow to cool.
  • Cover tightly and store in refrigerator no longer than two weeks.
