TERIYAKI SAUCE
The beauty of teriyaki sauce is in its balance of salty and sweet without the noise of sharp garlic, hot chiles or any other ingredients. You can add seasonings, if you like, or stick to the original, which calls for only sake, soy and mirin. Brown sugar gives this blend gloss and a syrupy consistency ideal for drizzling over ready-to-eat ingredients. But you could also skip the sugar and simmer just sake, soy sauce and mirin in the proportions below with your dish, thickening it into a glaze that clings to the main ingredient.

Steps:
- Combine the sake, soy sauce, mirin and brown sugar in a small saucepan. Bring to a light boil over medium heat, stirring to dissolve the sugar. Continue boiling, stirring occasionally, until the liquid thickens and a raft of tan foam bubbles on the surface, 7 to 10 minutes.
- Remove from the heat and use immediately or refrigerate in an airtight container for up to 2 weeks. When ready to use, reheat until warm and runny, and drizzle over grilled, seared or broiled salmon, sablefish, yellowtail, chicken, pork, steak, tofu, eggplant, asparagus, broccoli, or summer or winter squash. Use as a seasoning to mix into meatballs or patties.

Quick, easy, and delicious. Perfect for a filling lunch or dinner. Serve this over warm rice, noodles, or zoodles if desired! You could also wrap up in lettuce leaves for tasty lettuce wraps.

- Combine ground beef, carrots, and bell pepper in a large skillet over medium to medium-high heat; saute for 4 minutes. Sprinkle with salt and pepper. Add zucchini and continue to cook until ground beef is fully cooked through and vegetables are crisp-tender (to your preferred "doneness"), about 5 more minutes.
- Meanwhile, combine soy sauce, 1/3 cup plus 2 tablespoons water, sugar, brown sugar, vinegar, cornstarch, onion powder, ginger, and garlic powder in a small bowl for the sauce. Whisk until well blended.
- When the meat and veggies are cooked, whisk sauce once more and pour into the skillet. Use a spatula to mix and get everything off the sides and bottom.
- Turn the heat up until sauce begins to bubble, stirring occasionally until mixture becomes thickened and glossy. Turn heat off. Taste and adjust seasonings.

- In shallow glass or plastic dish or resealable plastic food-storage bag, mix all ingredients.
- Add about 1 pound boneless or 2 to 3 pounds bone-in beef, pork or chicken, turning to coat with marinade. Cover dish or seal bag and refrigerate, turning meat occasionally, at least 1 hour but no longer than 24 hours.
- Remove meat from marinade; reserve marinade. Cook meat as desired, brushing occasionally with marinade.
- Remaining marinade must be boiled to be served as a sauce. In 1-quart saucepan, heat marinade to boiling, stirring constantly; boil and stir 1 minute.

I got this recipe from The Happy Herbivore, and it is excellent. My two children love it! If you use hot sauce cut it back, 1 tbsp will make it very spicy.

- Combine chickpeas, teriyaki sauce, Szechuan sauce, and sugar in a large frying pan.
- Allow to marinate for at least 5 minutes.
- Cook over medium heat, stirring regularly, until most of the liquid has absorbed, about 10 minutes.
- Spoon over cooked rice and top with salsa. (For a lighter dish, you can substitute cooked greens, such as steamed kale, for the rice.).
- Chef Note: To create your own pineapple/peach/mango salsa mix equal parts chopped fruit with minced red onion, fresh cilantro, and lime juice to taste.
