BLUEBERRY STUDDED BOO BERRY CEREAL TREATS
These whimsical Blueberry Studded Boo Berry Cereal Treats are a nostalgic treat. These cereal bars are packed with dried blueberries, drizzled with a vanilla glaze and a bit of sparkle.

Steps:
- Spray a 9x13 pan with nonstick spray and set aside.
- In a heavy bottomed saucepan, melt the butter. Add the marshmallows and stir with a non-stick spatula until everything is combined and melted. Remove from the heat.
- Pour the melted marshmallow mixture over the cereal and dried blueberries, folding to combine.
- Pour into the prepared pan and flatten using a spatula. The mixture will be sticky - you might want to also spray your hands with a bit of the nonstick spray.
- To make the glaze:
- In a small bowl, add the powdered sugar, one tablespoon of the glaze and the vanilla extract.
- Whisk to combine. Add more water as needed to get to the perfect drizzling consistency.
- Drizzle the glaze over the bars and sprinkle with sanding sugar.
- Let set for about an hour or two.
- Cut into bars and serve.
- Enjoy!

STRAWBERRY-BANANA CEREAL TREATS
These sweet and tangy cereal treats get a flavor punch from freeze-dried fruit (often sold in pouches at specialty food stores).

- Line a 9-by-13-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
- Melt the butter in a large pot over medium heat. Add the marshmallows and honey and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt. Add the cereal and 1 cup each of the crushed strawberries and bananas. Stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. Transfer to the prepared baking dish and pat down into an even layer. Scatter the remaining crushed fruit on top and press into the top (use the bottom of a measuring cup to help). Let sit at room temperature until firm, about 30 minutes.
- Cut into 24 bars. Store at room temperature in an airtight container for up to 3 days.
CHOCOLATE MATCHA PUFFED CEREAL TREATS
Steps:
- Spray an 8-by-8-inch baking dish with nonstick cooking spray.
- In a medium saucepan, melt the butter. Add the marshmallows and stir until they melt. Remove the pan from the heat, add the puffed rice cereal and matcha powder and mix to combine. Press the mixture into the prepared dish and let stand until the treats have set, about 10 minutes. Cut into 2-by-2-inch squares and transfer to a plate.
- Set a wire rack on a baking sheet. Melt the dark chocolate and coconut oil together in a microwave or double boiler. Dunk the bottom of each square into the melted chocolate mixture to coat and place on the wire rack to set.

- Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening, or spray with cooking spray. Place cereal in food-storage plastic bag; coarsely crush with rolling pin. Set aside.
- In large bowl, mix water, orange peel, orange juice, oil, vanilla and egg until blended. In medium bowl, mix crushed cereal, flour, sugar, baking powder, baking soda and salt; stir into ingredients in large bowl. Gently stir in blueberries. Pour into pan.
- Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan to cooling rack. Cool completely before slicing, at least 1 hour.

- Spray 30 mini muffin cups with cooking spray.
- In large microwavable bowl, microwave butter and marshmallows uncovered on High about 2 minutes, stirring after each minute, until mixture is smooth. Stir in cereal until evenly coated. Spoon mixture by heaping tablespoonfuls into muffin cups. Insert paper lollipop stick into each cup, forming cereal mixture around stick.
- Refrigerate at least 1 hour or until cereal mixture is completely set. Carefully remove pops from muffin cups.
- Dip and decorate half of the pops at a time: In 1-quart microwavable bowl, microwave 12 oz of the candy coating uncovered on High 1 minute 30 seconds; stir. Continue microwaving and stirring in 15-second increments until melted; stir until smooth. Color melted candy coating with liquid food color of choice. Dip part of each cereal treat pop into melted candy coating to partially cover with coating. Immediately sprinkle with candy sprinkles. Place on waxed paper-lined cookie sheet. Melt remaining candy coating; color as desired. Dip remaining pops, and sprinkle with candy sprinkles. Allow to set until candy coating is completely hard, about 1 hour.
- Use remaining candy coating to attach 1 or 2 candy eyes to each pop.

CEREAL TREATS I
This version has no chocolate topping, but it would be easy to melt chocolate chips and spread them over the top. We have a nut allergy in our family and I omit the peanut butter and substitute 1/2 cup of butterscotch chips melted with the margarine instead.

BLUEBERRY AND VANILLA CUSTARD TART
This tart may take a bit of time to assemble, but it's worth the effort! With a rich vanilla custard sitting atop a cinnamon-y shortbread crust and finished off with a fresh blueberry topping, it's sure to wow! This is also fantastic with a simple shortbread crust, so feel free to omit the cinnamon and cream of tartar from the crust, if desired. Make sure to allow for plenty of time for cooling!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9-inch tart pan with a removable bottom.
- Mix flour, sugar, cinnamon, cream of tartar, and salt for crust together in a medium bowl until combined. Mix in melted butter, egg yolk, and vanilla until combined. Firmly press 2/3 of the mixture into an even layer in the bottom of the prepared tart pan. Sprinkle remaining 1/3 of the mixture around the edges, then press firmly and evenly into the sides of the pan, creating a slightly raised edge over the top. Lightly prick the bottom of the crust with a fork several times, not going all the way through.
- Mix egg white and water together until combined. Brush a light layer of egg white over the bottom of the crust. Place the tart pan onto a baking sheet.
- Bake in the preheated oven just until the crust begins to brown, 25 to 27 minutes. Remove from the oven and allow crust to cool for 15 minutes. Leave the oven on.
- While crust is cooling, make the custard. Whisk together egg yolks, sugar, and salt until thick and light in color. Mix in vanilla extract. Gradually add heavy cream, mixing gently but thoroughly, to avoid incorporating too much air. Carefully pour custard into the cooled crust. (You may or may not have extra; just don't overfill.)
- Place tart back into the oven and bake until custard is just set and lightly browned, about 30 minutes. Remove from the oven and cool to room temperature, at least 1 hour.
- While tart cools, make blueberry topping. Place blueberries and sugar in a medium saucepan over medium heat. Cook, stirring occasionally, until berries begin to burst and release their juices, about 15 minutes. Combine lemon juice and cornstarch in a small bowl or measuring cup. Add cornstarch mixture to the blueberries, stirring constantly, and cook until thickened, 1 to 2 minutes. Remove from heat and allow to cool to room temperature.
- When both the tart and the blueberries have cooled, carefully spoon blueberries over the top of the tart, and spread gently into an even layer. Place tart into the refrigerator and chill for at least 2 hours. Remove sides of tart pan, slice, and serve.
