SOUTHERN OKRA
This recipe dates back generations in my family. I enjoy it so much because I can use the fresh vegetables that are so abundant here in the South.

Steps:
- In a small shallow bowl, combine the sugar, flour, salt and pepper; set aside. In a small saucepan, cover and cook okra in boiling water for 10 minutes or until tender. Drain and set aside. , In a large skillet, saute onion and green pepper in oil until tender. Stir in the tomatoes and reserved sugar mixture; cook for 5 minutes. Add okra. Heat through, stirring as little as possible. Serve with rice if desired.

ROASTED OKRA
As a good Southern gardener, I find myself bringing in okra by the armload nearly every other day. Stewed okra is great, but for a little variety, we like to roast ours from time to time. This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

- Preheat an oven to 425 degrees F (220 degrees C).
- Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 10 to 15 minutes.

BOILED OKRA
In a 1930's cook book a mention on how southern cooks kept the "slime" off of okra. I tried it and man-oh-man! Tis good!

- Place okra in a sause pan and cover with water, and add lemon juice.
- Add salt and pepper to taste.
- Bring to boil.
- Simmer for 8-10 minutes.
- No longer!
- The taste is great!
- Not mushy, but not crisp at all.
- I used the frozen, cut okra.
- The lemon juice adds a wonderful kick to the taste.

- To steam okra: In a double boiler, heat water to boiling. Place the whole okra in the top of the double boiler. Cover and let steam for 10 minutes. Remove and serve. Sprinkle vinegar on the okra along with salt and black pepper to taste. Steaming okra prevents the slime that some people have an aversion to.
- To boil okra: In a medium saucepan, bring water to a boil and pour 1/4 cup vinegar in the water. Add the okra and boil for 8 to 10 minutes until okra is tender. Drain water. Add salt and black pepper to taste.
