BONDI-TYPE CHICKEN BURGER
In my search for Australian/New Zealand recipes for ZWT, I came across this recipe for the Bondi Chicken Burger. This is a copy cat recipe of the burger made famous at Oporto, an Australian and New Zealand restaurant of Portuguese influenced foods. Time does not include marinating.

Steps:
- Pound chicken breasts to desired thickness, cut in half if desired for size.
- Combine the habanero, lemon juice, ginger, vegetable oil, paprika, garlic, sugar, and chili flakes in a metal mixing bowl. Stir quickly to help combine the lemon juice and vegetable oil.
- Pour half the sauce into a separate bowl and set aside.
- Marinate the chicken breasts in one bowl of sauce in the refrigerator for 1 hour. Be sure the bowl is covered.
- Mix the flour and salt in a bowl. Take out the chicken breasts, allowing any excess to drip before dredging the chicken breasts in the flour mixture.
- Heat a medium non-stick pan with some vegetable oil or canola oil. Pan-fry each side until done.
- Spread mayonnaise on the hamburger buns. Place lettuce on the bottom part of the bun, place chicken on the lettuce, top with Provolone cheese and spoon some of the reserved chili sauce.
BONZAI BURGER (FROM RED ROBIN RESTAURANT)
I found this recipe on the recipegoldmine website. It was submitted by GayleL, which she attributes the original source as Steven Brummer with Red Robin Restaurants. The Bonzai Burger is my favorite burger when we go to that restaurant. I have also broiled the beef patties with equal success, so you can still have your favorite burger even when rainy weather makes grilling impossible.

Steps:
- Shape ground beef into a round burger patty. Marinate the burger patty in bowl #1 of teriyaki sauce for 30 minutes.
- Marinate pineapple ring in bowl # 2 of teriyaki sauce for 30 minutes.
- Remove burger patty and grill on high heat to desired doneness. Melt cheese on top of patty while still on grill pan by covering with lid.
- Grill pineapple ring on medium heat for 1 minute on each side.
- Spread mayo on both halves of the bun.
- On bottom bun, place tomato slices, followed by the broiled hamburger patty with cheese (tomato on the bottom!).
- On top of burger patty, stack the pineapple ring and shredded lettuce.
- Put the two together and you've got a signature Red Robin Bonzai Burger.
