3 to 4 pounds pork boneless country-style ribs
1/2 teaspoon salt
1/2 teaspoon dried marjoram leaves
1/4 teaspoon pepper
1 cup chili sauce
1/4 cup orange marmalade
2 tablespoons Worcestershire sauce
1 teaspoon ground mustard
2 tablespoons chopped fresh chives, if desired

Steps:

  • 1. Heat oven to 350°.
  • 2. Place ribs in rectangular pan, 13x9x2 inches. Sprinkle both sides with salt, marjoram and pepper. Cover tightly with aluminum foil.
  • 3. Bake 1 hour 30 minutes to 1 hour 45 minutes or until tender; drain.
  • 4. While ribs are baking, mix chili sauce, marmalade, Worcestershire sauce and mustard in 1-quart saucepan. Cook over medium-low heat 5 minutes, stirring occasionally, or until flavors are blended. Stir in chives. Brush sauce over ribs.
  • 5. Bake uncovered 15 minutes. Brush again with sauce. Bake 10 to 15 minutes longer or until ribs are glazed. Serve with remaining sauce.

I have used this simple rub to make ribs on the barbi in both Memphis, where I learned, and England, where I now live. The dry rub will stop the ribs from burning on the outside, as happens with some wet sauces. This rub is hot and sweet, which makes it perfect for ribs. The proportions of ingredients can be adjusted to taste. On two continents, I've received nothing but compliments for this recipe. I use this for approximately 2 kilograms ribs.

2 tablespoons granulated garlic
1 tablespoon smoked paprika
1 tablespoon dry mustard
1 tablespoon kosher salt
1/4 teaspoon chili flakes
2 tablespoons olive oil
1 rack spare ribs 6- 7 pounds

Steps:

  • Mix dry rub together by combining brown sugar, granulated garlic, smoked paprika, dry mustard, salt and chili flakes.
  • Drizzle olive oil over ribs, rubbing all over.
  • Sprinkle ribs with chili rub, rubbing into meat.
  • Prepare grill fire to 300° with hickory or oak for wood smoke flavor.
  • Place ribs over indirect heat and cook with the lid closed for 1 1/2 - 2 hours.
  • Internal temperature should reach at least 165°. For the most tender ribs, cook to 185°.
  • Remove from grill and allow to rest 10 minutes before slicing.

1 tablespoon black pepper
1 tablespoon chili powder
2 tablespoons paprika

Steps:

  • Mix the dry spices together in a small bowl. This shold equal about 1/2 Cup of rub. Mix dry ingredients well. Put the pork ribs in an aluminum pan, then rub both sides of the meat with rub evenly coating. You can rub the spices in with your fingers. Be SURE to wash your hands before and after handling the meat.
  • Transfer meat from pan to grill and cook 8-10 minutes on each side until thoroughly cooked. Cut into the meat to check doneness.

1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon ground nutmeg
3 to 4 pounds boneless country-style pork ribs

Steps:

  • In a small bowl, combine the apple juice, oil, cola, brown sugar, honey, garlic, Worcestershire sauce, Liquid Smoke if desired and seasonings. , Pour 1-1/2 cups marinade into a large resealable plastic bag; add ribs. Seal bag and turn to coat; refrigerate for 5 hours or overnight, turning once. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade.
