CHERRY SURPRISE CAKE
This Cherry Surprise Cake is ultra moist and filled with cherry pie filling, for a fun surprise!

Steps:
- Preheat oven to 350 degrees F. Coat a bundt cake pan with non-stick spray and then sprinkle in about 2 tbsp of flour, coat the pan with the flour, discard any excess flour.
- In a large bowl combine the cake mix, vanilla pudding mix, greek yogurt, coconut oil, and eggs. Mix on low for 30 seconds, then medium speed for 2 minutes. Add the cake sprinkles if desired and stir until combined. Batter should be thick.
- Scoop half of the batter into the prepared bundt cake and spread to an even layer. Use a spatula or spoon to create a valley in the batter, bringing it up on the sides and middle of the pan.
- Spoon the cherry pie filling into the valley of batter and then top with the remaining batter, being careful to enclose all the pie filling and not let it touch the sides of the pan.
- Bake for 45 to 50 minutes, or until set. Let cool for 10 minutes before inverting onto your cake plate. Let cool completely.

- Preheat oven to 325 degrees F. Spray or lightly grease 13 x 9 baking pan.
- Measure 1/3 cup of cherry pie filling and set aside to use in frosting. (see below)
- With a mixer on low speed, combine dry cake mix, eggs, baking powder, both extracts, and remaining cherry pie filling until combined. Increase speed to medium and beat until creamy, a minute or so.
- Pour batter into prepared pan, and level with a spatula.
- Bake for 45 minutes or until toothpick comes out clean. Remove cake from oven and allow to cool completely in pan on a wire rack.

- Preheat oven to 350°F.
- Lightly grease and flour the bottom of the pan.
- Combine flour, salt and baking powder.
- Beat together butter and sugar until light and fluffy. Beat in eggs one at a time, beating well after each addition; stir in vanilla.
- Alternately stir flour mix and milk into butter mixture. Mix until smooth batter forms. Pour batter into pans and bake for 30 minutes. Cool on wire rack.
- After cool, run knife around the side of the pan. Turn one cake out on serving tray. Spread pie filling over cake. Place second cake on top and ice all over with cherry icing.
- Icing Directions: Run 1/4 cup cherry pie filling in food processor for 1 to 2 seconds. Dissolve gelatin in 1/4 cup hot water. Mix all ingredients until light and fluffy.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in melted chocolate and extracts. In another bowl, whisk flour, salt and baking powder; add to creamed mixture alternately with cream, beating well after each addition., Transfer batter to prepared pan. In a microwave, melt chocolate and shortening; stir until smooth. Dip cherries in chocolate mixture; allow excess to drip off. Place on waxed paper; let stand until set., For frosting, in a large bowl, beat butter until creamy. Add melted chocolate and extracts. Beat in confectioners' sugar alternately with reserved cherry juice, adding enough confectioners' sugar to reach desired consistency; beat until smooth. Frost cake. Serve with chocolate cherries.

- In a medium bowl, stir together the shortening and cream cheese until well blended. Stir in the flour, you may need to use your hands to help it form a dough. If the mixture seems too dry, add a couple of teaspoons of water. Cover and chill several hours or overnight.
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
- Before rolling out the dough, dust the rolling surface heavily with confectioners' sugar. Roll the dough out to 1/8 inch thickness. Cut into 1x4 inch strips. Place a cherry on the end of each strip. Roll up each strip starting with the cherry. Place on prepared cookie sheets and dust with a little of the confectioners' sugar.
- Bake for 7 to 10 minutes in the preheated oven. Cookies should brown slightly. Dust again with the confectioners' sugar. Allow cookies to cool before serving, the cherries are very hot!

- Mix oil and sugar thoroughly. Add eggs, one at a time, and beat until fluffy. Add vanilla.
- Sift flour and baking powder. Add to liquid and beat. Mix sugar and cinnamon for topping.
- Grease a 13 1/2 x 9 x 2 inch pan, and pour half the batter across the bottom. Sprinkle 1/2 the topping over batter. Spoon cherry pie filling over batter. Pour remaining batter over filling and sprinkle rest of sugar mixture on top.
- Bake at 325 degrees for 50 minutes.
