60 maraschino cherries with stems
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating

Steps:

  • Drain cherries and set on paper towels to dry.
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
  • Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

It calls for but two ingredients and 10 minutes of your time, and results in a delicious, romantic and extremely simple grace note to any meal. Be forewarned: the cherries aren't pitted. It's like a metaphor -- for dating certainly, and maybe for life.

30 bing cherries, with stems

Steps:

  • Melt the chocolate over hot water in a double boiler. Remove from heat. Holding the cherries by their stems, dip each into the melted chocolate, twirling to coat. Place on a tray covered with aluminum foil and refrigerate for at least 1 hour.

I've been making this recipe for many years. I'm not sure where it originally came from. The recipe is somewhat time consuming, but well worth it. I usually make two batches because one just isn't enough. This candy is easy to make and it also makes a great gift.

1/3 cup soft butter
1/3 cup light corn syrup
1/2 teaspoon vanilla
1/2 teaspoon salt
4 cups sifted confectioners' sugar
2 cups red maraschino cherries, with stems (16 oz. jar)
16 ounces milk chocolate (cut up candy bars)

Steps:

  • Drain juice from cherries, set cherries aside until ready to use. To make fondant: Using a electric mixer at medium speed beat together butter, corn syrup and vanilla in a mixing bowl until smooth. Gradually add salt and 3 cups of the sugar, mixing well. When mixture becomes too stiff to beat, stir with spoon. Add 1/2 - 1 cup of sugar to make a mixture that can be kneaded. Form mixture into 10" roll. Wrap in plastic wrap and refrigerate roll until firm.
  • Cut roll into 1" slices. Cut each slice into quarters. Flatten each piece in palm of hand; place cherry in center. Fold up fondant around cherry until it is completely covered. Place on waxed paper-lined baking sheet. Chill until firm.
  • Melt milk chocolate in the top of double boiler over hot water. Cool slightly. Holding each fondant-covered cherry by the stem, quickly dip it in the melted chocolate until the fondant is covered. Place on waxed paper-lined baking sheets. Refrigerate until chocolate sets. Store in air-tight container in the refrigerate. Make 40-50 cherries, depending on the size of the cherries.

This recipe is great, the talk of the party. My husbands Great great aunt passed it down to his mother and she passed it on to me. It is very quick and easy.

1 (12 ounce) bag of nestle semisweet chocolate morsels
2 (16 ounce) containers of pennant red cherries
4 ounces of parowax paraffin wax (Household wax)

Steps:

  • Melt 4oz of Parowax in Double Boiler.
  • Add the 12 oz bag of Nestle Semi-Sweet Morsels.
  • Stir occassionally untill melted.
  • Stick a cherry with a tooth pick in then dip it in the chocolate then place on a cookie sheet that is covered with wax paper.
  • Repeat untill all cherries are gone.
  • Let cool.
  • The tooth pickes can be removed.
  • When cooled peel of wax paper and place chocolate covered cherries in refrigerater untill cold.
  • They are ready to be eaten.

I wanted to use up all the candy I had in my pantry, so I put it all on the counter and created these great tasting chocolates. My husband adores chocolate covered cherries, and he says I have the job of making his chocolate covered cherries from now on because they are better than the store-bought kind. When you put one of these chocolates in your mouth, you will notice how fresh they taste and how the cherry just pops when you bite into it. Yummo! You can make half covered cherries or fully covered ones. They look so pretty in a dish. Enjoy! Recipe and photos are my own.

3 - heaping tablespoons semi sweet chocolate chips
3 - heaping tablespoons peanut butter chips
2 - heaping tablespoons chopped german chocolate, sweetened
3/4 - cup chopped white almond bark
1 1/4 - cup chopped chocolate almond bark
65 - maraschino cherries with stems removed

Steps:

  • Assemble all the ingredients before you begin.
  • You will need to melt the chocolate using a double boiler. I use the Wilton Chocolate Pro to melt the chocolate. You might consider getting one if you want to start making candy, as they are reasonably priced and have great reviews. It is a nonstick appliance, fast and so easy to operate that it makes making chocolates fun. I also use chocolate molds, but if you want, you can spread the chocolates on wax paper.
  • Drain the cherries first.
  • Remove the stems if they have them.
  • Blot the cherries on paper towels. Remove them to a dry paper towel and let them sit and air dry while you prepare the chocolate.
  • Chop the chocolate bark into pieces about the size of the chocolate chips.
  • It should look like this.
  • Chop the almond bark into small pieces, too.
  • Mix bark and all candy ingredients together
  • Place the candy in the heated Wilton pot or double boiler to melt it. This recipe is enough candy to fill the Wilton pot, slightly mounded in the center. Stir it occasionally with a wooden spoon as it starts to melt. Once it is melted, you are ready to make chocolates. You can make half cherries, or cover them. If you are using a mold, put a dab of chocolate in the bottom of each mold with an ice tea spoon, and place the cherry on top, then cover the cherry with chocolate. Let the chocolates sit on the counter until they are hardened, then remove from the mold.

  • This recipe makes about 65 chocolates, and I have molds for only 30 chocolates, so I spread the remainder of my cherries with chocolate on a sheet of wax paper. I made a few marshmallow covered chocolates, too. Store the chocolates in an air tight container with wax paper between the layers. Refrigerate. They just taste better as they sit.
