MEXICAN STYLE CORNBREAD



Mexican Style Cornbread image

A new spicy twist on cornbread. Very rich and flavorful with a crisp topping of cheese.

2 eggs
¼ cup corn oil
1 cup buttermilk
1 ½ cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
½ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.
  • In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.
  • In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
  • Bake for 30 to 35 minutes until center is set and top is golden brown.

1 (14.75 ounce) can Del Monte® Sweet Corn Cream Style, No Salt Added
1 (15.25 ounce) can DEL MONTE® Whole Kernel Corn, No Salt Added, well drained

Steps:

  • Preheat oven to 400 degrees F. Coat a glass or metal 9-inch square baking dish with non-stick cooking spray.
  • Stir together all ingredients in a large mixing bowl; batter will be slightly lumpy. Pour batter evenly into prepared pan.
  • Bake 40 to 45 minutes or until deep golden brown and wooden pick inserted in center comes out clean. Cool 10 minutes before cutting.

I'm such a lover of cornbread, that I couldn't pass up this version. Another wonderful recipe from her book "Friday Night Dinners". Bonnie writes that "she received this recipe from executive chef Anthony Rose of Toronto's Drake Hotel". Very easy and flavourful. She also mentions that the follow may be added: diced olives, sun-dried tomatoes or fresh herbs. We enjoyed the plain version very much. Easily halved and baked in a 9 x 9 pan.

2 cups all-purpose flour
1 1/2 cups cornmeal
2 tablespoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup granulated sugar
2 eggs
1/4 cup extra virgin olive oil or 1/4 cup butter, melted
2 1/2 cups buttermilk (see note below) or 2 1/2 cups soymilk (see note below)
1 cup corn kernel, grilled (optional)
1 jalapeno pepper, seeded and chopped (optional)

Steps:

  • In a large bowl, combine flour, cornmeal, baking powder, salt and sugar.
  • In a separate bowl, combine eggs, oil and buttermilk.
  • Add egg mixture to the large bowl and combine. Add corn and jalapeno, if using. Stir until all ingredients are moistened.
  • Transfer batter to an oiled 13 x 9 baking dish. Bake in a preheated 350*F oven for 35 minutes, or until bread springs back when pressed in center or a cake tester comes out clean.
  • Cool for 20 minutes before cutting.
  • NOTE: If using Soy Milk, sour by adding 1 tbsp of vinegar or lemon juice and let stand for 10 minutes before adding.

This is the only rice I serve with Mexican food for my family. It is a pretty dish, easy to prepare and has tons of south-of-the-border flavor. I made a large pot full for a Mexican theme party I gave a few years ago. I kept it warm in a crockpot for the meal, and there were no leftovers. I hope you enjoy this recipe.

1/4 - cup red pepper diced
1/4 - cup onion diced
2 - tablespoons cooking oil
1 - cup uncooked long grain rice, rinsed in strainer
1/2 - cup tomatoes with green chilis
1/4 - teaspoon ground turmeric
1 - teaspoon ground cumin
1/4 - teaspoon garlic powder
1/2 - teaspoon salt
2 to 3 - tablespoons chopped fresh cilantro, optional
2 cup(s) water

Steps:

  • Use a medium heavy pot with a tight fitting lid to make this rice. Saute the onion and pepper in oil for 2 minutes. Add rice and stir until it is coated with oil.
  • Add tomatoes, turmeric, cumin, salt, garlic powder and water. Bring to a full boil, put the lid on and simmer on low for 25 minutes. (NO PEEKING!) Flake with a fork, put the lid back on and let it sit until you are ready to serve. Add cilantro before serving. Enjoy!

1/3 cup onion, diced finely
1 (15 ounce) can creamed corn
4 eggs, beaten
1/3 cup oil
3 tablespoons chopped jalapeno peppers

Steps:

  • Put all ingredients except the cornbread mixes into a large bowl and mix well with a spoon.
  • Now add the cornbread mixes and stir just until moistened.
  • Pour into a greased 9x9 baking dish.
  • Bake at 350 degrees for 30-35 minutes or until lightly browned and the edges pull away from the sides of the pan.
  • Serve warm and refrigerate leftovers.
