WHISKY BBQ CHICKEN AND SECRET SPICE RUB

- Preheat the oven to 400 degrees F. Preheat a double burner grill pan to medium-high heat.
- To spatchcock a chicken, place the bird breast-side down on a cutting board with its wing tips facing up and away from you. Feel down the back of the bird to find the spine then, using poultry shears or kitchen scissors, cut up and along the spine on each side. Remove the backbone and discard or save it to flavor a chicken stock. Flip the bird over, breast-side up. Place your hands at the center of the breast and press down to crack breastbone and flatten the bird. Trim the wing tips and discard or save for stock as well.
- In a small skillet set over medium heat, toast the caraway, cumin, coriander and black pepper until fragrant. Transfer to a spice grinder and grind to a powder. Place the spices in a small mixing bowl and add the pimento, granulated garlic, granulated onion and 2 teaspoons salt.
- Shove half of the rub under the skin and sprinkle the remainder all over the outside. Be sure to wash your hands. Spray the bird well with cooking spray.
- Place the chicken skin-side down on the grill pan to mark it, and then flip it. Place the chicken on a rack set over a baking sheet and bake until the internal temperature registers 165 degrees F, 30 to 40 minutes. During the last 5 minutes of cooking, baste the chicken with half of the Whisky BBQ Sauce. (Place the other half of sauce in a bowl and pass at the table.) Remove from oven, let cool for 5 to 10 minutes and cut into pieces. Garnish with scallions. Serve with the Ranch Slaw.
- While the chicken is in the oven, make the Whisky BBQ Sauce. Place a small to medium pot over medium heat and add the oil. Add the garlic and onions, and cook until fragrant and translucent. Add the chicken stock, sugar, Worcestershire sauce, cider vinegar, hot sauce, bourbon and tomato sauce. Bring to a simmer and reduce to thicken, about 30 minutes.
- In a medium mixing bowl, stir together buttermilk, sour cream, chives, dill, parsley, sugar, white wine vinegar, celery salt, kosher salt, black pepper, garlic, lemon juice and adjust the flavor if needed. Add carrots, cabbage and red onions. Stir to combine and let hang out for flavors to come together. Set aside.
BONNIE'S WHISKEY BARBECUED CHICKEN
My family loves this delicious barbecued chicken, and it took a few years to get the recipe tweaked just right. Simple seasonings and a winning cooking technique combine to make this the richest, most succulent and tender, barbecued chicken you will ever eat! I am happy to share my recipe with you. Enjoy!

- Brine: Take a one gallon pot of cold water, add 1/2 cup of kosher salt, stir until the salt has disolved. (Do not use iodized salt.) Submerge the chicken pieces in the brine water. Refrigerate. Brine for no more than 2 hours, then remove the chicken pieces, rinse them and put them in the refrigerator until it is time to cook the chicken. You can do the brining in the morning and the cooking in the evening if you wish. Discard the brine.
- Select a baking pan just large enough to hold all the chicken pieces, and line it with foil and spray it with Pam. Preheat the oven to 410 degrees. Place a flat pan on the bottom rack with about 1 inch of water. This pan will be below your chicken which is on the middle rack in the oven.
- Season the brined chicken pieces with a sprinkle of pepper and garlic powder on both sides and dredge in the flour. Pre-heat a large non-stick skillet with some olive oil and fry the chicken until golden brown. As each piece browns, place it in the foil-lined baking pan.
- Empty the entire bottle of barbecue sauce in a small mixing bowl. Add the whiskey and brown sugar and mix well. Spoon the sauce with a large tablespoon over the chicken until all pieces are covered.
- Bake the chicken in the 410 degree oven for 15 minutes, then remove from the oven and turn the pieces over and spoon sauce over the chicken and return to the oven and bake 15 minutes more. Let chicken rest 5 minutes in the oven before you serve it.
- Cook's Tip: Every oven is different. So watch the chicken closely the first time you make it. It is a very forgiving recipe and you can tweak this dish to your individual taste very easily. I would suggest you make it as written the first time, then tweak away if you feel the need. The pre-frying technique seals in the juices and makes the sauce stick to the skinless chicken. The pan of water, and the brining is a must do if you want, tender, juicy chicken. Enjoy!
BOURBON WHISKEY BBQ SAUCE
This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend.

- In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
- Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

- Note: I used an electric pressure cooker, that has a browning cycle. If you don't own pressure cooker, you can brown the chicken on the stove and then bake this in a Dutch oven. I will provide both ways of preparing this. Pat the chicken dry, and season with salt & pepper. For a pressure cooker: Heat oil and butter, using the brown cycle (for an electric pressure cooker) or on medium high on the stove. Likewise, you can make this in a heavy pot over medium-high heat. Place chicken thighs, four at a time, in the pot, skin side down. Brown both sides, then remove to a plate and repeat until all chicken is browned. Remove to a plate and set aside. Pour off half the grease, then return pan to stove. Add onions to pan and stir, cooking for 2 minutes. Pour whiskey into the pot, being very careful if you're using an open flame. Stir and scrape the bottom of the pan, allowing whiskey to reduce for a minute or two. Pour in barbecue sauce, peach preserves, peaches (if using) water, and Worcestershire sauce. Throw in garlic cloves. Stir until combined, then return chicken to the pot, skin side up. For a pressure cooker: Lock the lid on, and set the pressure to HIGH for 10 minutes. Do a quick release, carefully removing the lid away from you. For the oven method: Cover and put pot in oven. Cook for 1 1/2 hours, then remove from oven at 300°F. Serve pieces of chicken over a big pile of smashed potatoes. Sprinkle sliced green onions over the top.
BARBECUED CHICKEN
Steps:
- Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
- Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
- Serve with extra barbecue sauce on the side.
- In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
- Yield: 1 1/2 quarts

This is my sisters recipe and it is our absolute favorite fried chicken. Prep time includes soaking the chicken The weight for the cicken is approximate. I just use a whole cut up chicken

- Soak chicken in cold salted water for an hour.
- Remove and pat dry.
- Combine all ingredients in a bowl or bag.
- Toss in chicken and coat well.
- Put about an inch of oil in heavy pan .
- fry chicken for about 10 minutes on each side to brown.
- Place on a foil lined baking sheet.
- Bake at 350 F approximatly 25 minutes or until juices run clear.

BONNIE'S BUFFALO CHICKEN DIP
Shredded poached buffalo sauce soaked chicken topped with a layer of ranch and cream cheese baked with celery and monterey jack on top. Great for parties! Got this from the web some time ago. Similar to some other recipes posted here, but we like this version best.

- Preheat oven to 350 degrees. Combine shredded chicken and Frank's Hot Sauce and spread in the bottom of a 13" x 9" pan.
- In a large saucepan over medium heat, combine cream cheese and ranch dressing, stirring until smooth and hot. Pour this mixture over chicken forming a second layer.
- Sprinkle celery on top.
- Bake uncovered for 20 minutes, then sprinkle cheese on top and bake another 15-20 minutes until hot & bubbly (do not let it get browned or it will be hard).
- Let stand 10 minutes. Serve with celery sticks and tortilla chips.
