EASY CROATIAN BUREK RECIPE



Easy Croatian Burek Recipe image

You can't miss trying burek when in the Balkans - and you'll fall in love. So, here is an easy to make Croatian burek recipe.

Number Of Ingredients 15

500g all-purpose flour (3.5 cups)
1 teaspoon of salt
300-350mls lukewarm water (1 1/4 - 1 1/2 cups)
Vegetable oil
150 g cottage cheese (2/3 cup)
100 g crumbled feta cheese (2/3 cup)
1 large beaten egg
1 tablespoon of olive oil
1 medium, diced onion
300 g lean beef mince (10 oz)
1 potato, boiled cut into small cubes
2 grated garlic cloves
Half teaspoon chopped rosemary, fresh is best
Half tablespoon smoked paprika
Half tablespoon salt

Steps:

  • Take a large bowl and combine the flour and the salt
  • Add the water bit by bit, mixing until the mixture forms a dough
  • Knead the dough for around five minutes, until it turns quite stretchy
  • Split the dough mixture into batches of four and press down to flatten
  • You need to find a bowl or a pan which is large enough to hold the dough when it is piled up on top of each other
  • Add a little bit of vegetable oil to the pan or bowl and put the first flattened piece of dough inside
  • Add a bit more oil (not too much), and add another piece of dough - repeat until you've done the same with all four pieces
  • Add more vegetable oil on top of the last piece and place to one side to rest
  • Preheat your oven to around 200°C (390°F)
  • Add a little vegetable oil over your work surface (a table is best) - just a little!
  • Remove one piece of dough from the bowl and remove the excess oil
  • Flatten the piece of dough until it reaches a thickness of no more than around half a centimeter
  • Handle the dough and stretch it outwards, over and over, so that you pull it to around 1 meter in diameter - you might end up with a few holes but don't worry about it too much. By the end, you should be able to see through the dough
  • Take one side of the dough disc and fold it over, towards the center
  • Repeat this process until you have a shape that resembles a pentagon
  • Repeat with the second piece of dough
  • Add your filling (see below for the filling instructions) to the dough piece
  • Add the first piece of stretched dough into the middle of the second one, and cut away the thick edge of the second piece - you can throw this away, you won't need it
  • Fold over the edges of the dough, so that you get a pentagon shape once more, and put it into a baking pan or tray
  • Put the pan in the oven and bake for around half an hour, until it is a golden color
  • Remove from the oven and let it cool down
  • Cut into 12 pieces
  • Repeat the process with the rest of the dough
  • Bake until the pastry turns golden, and serve while warm!
  • Take a mixing bowl and add in both kinds of cheese, combining together
  • Add the egg and combine once more
  • Take a large pan and heat up the oil over a medium heat
  • Add the onion and cook until soft
  • Now, add the mince and cook for around 2 minutes, stirring regularly
  • Now, add the potato, the rosemary, the garlic, and the paprika, and stir to combine
  • Add the salt and continue to cook, ensuring the beef mince is cooked through
  • Once cooked, drain the beef with a sieve to get rid of any excess oil and press down to dry it out

6 tablespoons extra-virgin olive oil
1 pound mild green peppers, such as cubanelles or Anaheims, stemmed, seeded and coarsely chopped
1 tablespoon pul biber pepper (Aleppo pepper)
1 large onion, coarsely chopped
Salt and freshly ground black pepper
2 pounds ground beef
3/4 cup canola oil, plus more for brushing
5 large eggs
1 cup milk
One 16-ounce package yufka dough
2 tablespoons nigella sativa (black cumin seeds)

Steps:

  • In a large, deep skillet, heat the olive oil over moderate heat. Add the peppers, pul biber and onions, season with salt and pepper and cook, stirring frequently, until softened, about 10 minutes. Add the beef and cook until the liquid has evaporated, about 10 minutes. Season with salt and pepper. Continue cooking over moderate heat, stirring occasionally, until the vegetables are softened, about 15 minutes. Transfer the vegetables and meat to a bowl and let cool slightly.
  • Preheat the oven to 400 degrees F and lightly oil a 9- by 13-inch glass baking dish.
  • In a medium bowl, whisk the eggs with the milk and 1/2 cup of the canola oil. Lay a sheet of yufka on a work surface and brush with the egg mixture; repeat until you have a stack of 2 sheets. Transfer the stack to the baking dish and spread one-third of the beef mixture on top. Repeat the layering twice more with the brushed yufka sheets and beef filling, then end with a stack of brushed yufka.
  • Trim the overhanging yufka slightly and tuck it under itself. Brush any remaining egg mixture on top of the borek, top with the nigella sativa seeds and bake until deeply golden on top and sizzling, about 45 minutes. Let the borek rest for 20 minutes before cutting into squares and serving.

1 pound lean ground beef
1 tablespoon ground allspice
1 tablespoon paprika
salt and freshly ground pepper to taste
1 potato, finely chopped
1 onion, chopped
1 (16 ounce) package phyllo dough
¼ cup melted butter

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Brown ground beef in a large non-stick skillet over medium heat, 5 to 7 minutes. Drain fat; stir in allspice, paprika, salt, and pepper. Transfer beef to a large bowl and stir in potato and onion.
  • Unroll phyllo pastry and transfer 2 sheets to a work surface; stack sheets. Spoon 1/8th of the ground beef mixture down one long edge of the phyllo pastry. Roll phyllo into a tube, encasing beef. Shape the tube into a coil (snail shape). Place the roll on an ungreased baking sheet; brush with melted butter. Repeat, placing finished rolls up against one another to keep them from unrolling.
  • Bake burek in the preheated oven until golden brown, 20 to 30 minutes.

Try this classic borek for lunch or dinner, with crispy filo pastry and a tasty feta, herb and spring onion filling that doesn't require cooking in advance

270g filo pastry
1 tbsp olive oil, plus extra for brushing
2 egg yolks (freeze the whites for another recipe)
a pinch each of nigella seeds and sesame seeds, to serve
250g feta
1 green bird's-eye chilli, finely chopped
3 medium spring onions, finely chopped
handful of coriander, finely chopped
handful of mint, finely chopped
handful of dill, finely chopped
6 tbsp olive oil
1 egg, beaten
50ml olive oil
70ml milk

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Prepare the filling first. Mash the feta in a bowl with the back of a fork. Add the chilli, spring onions, herbs and olive oil, then mix everything well using the fork.
  • For the sauce, whisk the beaten egg with the olive oil and milk in a small bowl until fully combined.
  • Lay the filo sheets on a clean work surface and cover with a clean, damp cloth to ensure they don't dry out as you work. Brush the base of a shallow 20cm round ovenproof dish with some olive oil.
  • Layer six sheets of filo in the bottom of the dish, overlapping them by about 45 degrees and fanning them out, also ensuring that half of each sheet covers the base while the other half overhangs the dish. Between each addition, liberally brush the sheets with the sauce. The entire base should be covered with the filo, and the filo generously basted in the sauce.
  • Tip in all the filling, then fold the overhanging filo over the filling to enclose it, brushing the sheets with more sauce as you do. Cover the top with a final sheet of filo, but don't brush this with the sauce.
  • Whisk the egg yolks with the 1 tbsp olive oil and brush this on top of the borek. Sprinkle with the sesame and nigella seeds and bake for 30 mins until golden brown.
