2 teaspoons garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 tablespoons lemon juice
oil for frying
3 skinless, boneless chicken breasts, cubed

Steps:

  • Mix flour, garlic powder, salt, and black pepper together in a bowl. Beat eggs and lemon juice together in a separate bowl.
  • Heat 1 1/2 to 2 inches of oil in a large pot over medium heat.
  • Dip the chicken pieces into the flour mixture, then the egg mixture, and again into the flour mixture.
  • Test the oil to make sure it is hot enough: a small amount of flour dropped in should sizzle. Place 10 pieces of chicken into the hot oil; cook until golden brown, about 8 minutes. Remove from the oil and drain on a paper towel lined plate and season with salt. Repeat with remaining chicken.

3 boneless chicken thighs, chopped into 1-inch chunks
3 cloves garlic, finely minced
2 tablespoons ginger, finely grated or minced
2 tablespoons soy sauce
2 tablespoons sake
1 tablespoon sesame oil
1 tablespoon sugar
½ cup potato starch
oil, for frying
lemon wedge
fresh parsley

Steps:

  • Combine the chicken with the garlic, ginger, soy, sake, sesame oil, and sugar in a bowl until evenly coated. Cover and refrigerate for about 1 hour.
  • Heat oil in a pot over high heat until about 340°F (170°C).
  • Give the chicken a stir to re-incorporate the marinade, then sprinkle the potato starch on top. Lightly toss until somewhat combined, but do not mix until each chicken piece is evenly coated because the uneven pockets of potato starch will give the chicken its signature unique texture.
  • Fry half of the chicken at a time, until light golden and bubbly, about 5-7 minutes. The oil temperature will drop to about 320°F (160°C). Rest the chicken on paper towels and increase the heat.
  • Heat oil to about 390°F (200°C), then fry the chicken again for about 2-3 minutes until golden brown. Drain the chicken on paper towels.
  • Serve with lemon and parsley.

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Whisk egg in a small bowl until smooth. Pour tempura batter mix into a second small bowl. Dip chicken pieces one at a time into the egg, then dredge in tempura batter mix, shaking off any excess. 3 lb chicken breast (cut into 1-inch pieces)
5 tbsp all purpose flour
1 1/2 tbsp salt
1 tsp garlic powder
1 cup buttermilk
2 cups panko crumbs
1 cup oil (vegetable or canola)

Steps:

  • In a medium bowl, combine the flour, salt, and garlic powder.
  • Pour the buttermilk into a separate bowl and the panko crumbs onto a plate.
  • Dredge a piece of chicken into the flour mixture until evenly coated then dip in buttermilk, letting excess drip off. Lastly, roll in panko bread crumbs until evenly coated. Transfer to a platter.
  • Preheat 1-inch of oil in a deep frying pan over medium heat. Adjust the heat to keep the oil at 350˚F. Fry the popcorn chicken in small batches, leaving space between each piece and flipping as needed. Fry until golden brown and 165˚F at the deepest part of the chicken on a thermometer.
  • Remove the popcorn chicken from the oil and let it rest on a paper towel-lined plate. Serve immediately with your favorite dipping sauce!

1 pound boneless skinless chicken thighs
2 teaspoons ground fennel seed
2 teaspoons ground mustard seed
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup buttermilk
1 small onion, sliced
1/2 cup all-purpose flour
2 eggs
1 1/2 cups panko breadcrumbs
2 teaspoons ground fennel seed
2 teaspoons paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
Canola oil, for frying

Steps:

  • For the chicken and marinade: Cut each chicken thigh into bite-size pieces, approximately 1 1/2 by 1 1/2 inches.
  • In a large resealable plastic bag, combine the fennel, mustard, salt and black pepper. Add the chicken and massage the bag so the chicken is thoroughly coated in the spices. Add the buttermilk and onions, and massage the bag again to mix the ingredients. Marinate the chicken in the refrigerator for at least 1 hour and up to overnight.
  • For the breading: Set up a breading station by lining up 3 small baking dishes or pie plates. In one dish, add the flour. In the second, whisk the eggs with 3 tablespoons water. In the third, mix together the panko, fennel, paprika, salt and black pepper.
  • A few pieces at a time, remove the chicken from the marinade and let the excess drip off before dredging in the flour. Shake off the excess flour and then dunk the chicken in the egg wash, letting the excess drip off. Finally, dredge in the panko mixture, making sure the chicken pieces are completely coated.
  • Place the breaded chicken on a wire rack set over a baking sheet and refrigerate, uncovered, for 15 to 20 minutes.
  • Fill a large, heavy skillet with about an inch of canola oil and heat to 350 degrees F over medium heat.
  • In batches, fry the chicken in the oil until golden brown all over, 3 to 4 minutes per side. Drain on a paper-towel-lined baking sheet.

  • In a large bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pineapple. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.
  • Meanwhile, microwave chicken according to package directions. Stir into pineapple mixture. Serve immediately over rice.
