I cooked some bow tie pasta (farfalle) and tossed with some sauteed vegetables. Simple and delicious. Makes for a great side dish with chicken or meat loaf.

1 (8 ounce) package farfalle (bow tie) pasta
1 tablespoon olive oil
1 zucchini, chopped
1 large onion, chopped
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, saute zucchini and onion in olive oil until tender. Toss farfalle pasta with vegetables and season with salt and pepper; serve.

A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

1 (12 ounce) package bow tie pasta
2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled
½ teaspoon red pepper flakes
½ cup diced onion
3 cloves garlic, minced
1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

1 small spaghetti squash (about 1-1/2 pounds)
12 ounces uncooked bow tie pasta (about 4-1/2 cups)
2 tablespoons olive oil
1 pound sliced fresh mushrooms
1 cup chopped sweet onion
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
6 ounces fresh baby spinach (about 8 cups)
3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons butter
2 tablespoons sour cream

Steps:

  • Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down. Microwave, uncovered, on high until tender, 9-11 minutes. Cool slightly. Meanwhile, in a 6-qt. Dutch oven or stockpot, cook pasta according to package directions. Drain; return to pot., In a large skillet, heat oil over medium-high heat; saute mushrooms and onion until tender. Add garlic; cook and stir 1 minute. Separate strands of squash with a fork; add to skillet. Stir in tomatoes, spinach, salt and pepper; cook until spinach is wilted, stirring occasionally. Stir in butter and sour cream until blended., Add to pasta. Heat through, tossing to coat.

BROCCOLI AND BOW TIES

Kosher salt
8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 teaspoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1/4 cup toasted pignoli (pine) nuts
Freshly grated Parmesan, optional

Steps:

  • Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  • In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  • Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
  • To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

BOW TIES WITH PESTO, FETA AND CHERRY TOMATOES



Bow Ties with Pesto, Feta and Cherry Tomatoes image

This is just one example of how a good pesto can be used so well in so many ways. People always rave about this combo and I can't blame 'em - it's one of those matches made in heaven. The pesto coats the warm pasta to make a creamy, rich sauce, which is accented by the crumbled feta and contrasted by the sweet and tart cherry tomatoes.

1 pound bow tie pasta (farfalle)
3/4 cup Pesto, recipe follows
1/2 pint cherry tomatoes, halved
1 cup crumbled feta cheese
Kosher salt and freshly ground black pepper
Olive oil, as needed

Steps:

  • Bring a large pot of salted water to boil. Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes. Drain the pasta and run it under cold water just until it stops steaming. Bounce the pasta around to get rid of as much water as you can.
  • Dump the pasta into a large serving bowl. Stir in the pesto until the pasta is coated. Toss in the cherry tomatoes and the crumbled feta. Taste the salad and season it as you like with salt and pepper. You can make the salad up to about 1 hour before you serve it. Check out the salt and pepper just before you serve the salad. If it's looking a little dry, add some olive oil and stir it around.
  • Pesto:
  • 5 big handfuls basil leaves (about 2 hefty bunches)
  • 1/2 cup pine nuts or 3/4 cup walnuts
  • 1/2 cup fresh grated Parmesan or Pecorino cheese
  • Juice of 1 small lemon
  • 2 cloves garlic, peeled
  • Kosher salt
  • About 20 grinds freshly ground black pepper
  • 3/4 cup extra-virgin olive oil
  • Place all ingredients with 1/2 cup of the oil in a blender and blend. Gradually drizzle in the remaining 1/4 cup of oil until pesto is thick and smooth.
  • Yield: about 1 1/2 cups

1/8 teaspoon cayenne pepper
2 boneless skinless chicken breast halves (5 ounces each)
2 bacon strips, diced
1/2 cup sliced fresh mushrooms
1 green onion, sliced
1 garlic clove, minced
1 cup uncooked bow tie pasta
1 tablespoon butter
4 teaspoons all-purpose flour
1/2 cup half-and-half cream
2 tablespoons chicken broth
1/2 cup plus 2 tablespoons shredded Asiago cheese, divided
1-1/2 teaspoons cream cheese, softened
1 plum tomato, seeded and diced

Steps:

  • Rub pepper and cayenne over chicken. Broil 4-6 in. from the heat for 4-5 minutes on each side or until juices run clear. Set aside and keep warm. , In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 teaspoons drippings. In the drippings, saute mushrooms, onion and garlic. Remove from the heat; set aside., Cook pasta according to package directions. Meanwhile, in a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add cream and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add 1/2 cup Asiago cheese and cream cheese; stir until cheese is melted. , Cut chicken into strips. Drain pasta. Toss chicken, pasta, bacon and mushroom mixture with cream sauce. Top with tomato and remaining Asiago cheese.

¼ cup butter
1 clove garlic, minced
¼ cup all-purpose flour

2 ½ cups shredded Colby cheese
4 ounces cooked ham, julienned
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

Steps:

  • Cook and drain pasta as directed on package, omitting salt.
  • Meanwhile, break off tough ends of asparagus as far down as stalks snap easily. Wash asparagus; cut into 1-inch pieces.

4 tablespoons soy sauce
2 tablespoons honey
2 tablespoons lime juice
3 teaspoons Dijon mustard, with seeds
1 lb boneless skinless chicken breast, cubed
1/2 cup chicken broth
2 small red bell peppers, thinly sliced lengthwise
6 scallions, trimmed and thinly sliced
fresh ground pepper
4 tablespoons chopped fresh parsley

Steps:

  • Stir soy sauce, honey, lime juice & mustard in a sm. bowl until honey is dissolved. Add chicken pieces and turn until coated w/ marinade. Refrigerate for 30 minutes.
  • Transfer chicken and marinade to a lg. nonstick skillet. Cook over med. heat until chicken is cooked through, about 4 minute Remove from heat and pour in chicken broth.
  • Prepare pasta according to pkg. directions. Drain thoroughly in colander. Return pasta to pot, add contents of skillet, red peppers and scallions. Heat to simmering over low heat. Toss pasta once or twice, add pepper to taste. Sprinkle with fresh parsley.

2 large eggs
1 tablespoon sugar
1 teaspoon olive oil
1 teaspoon pure vanilla extract
2 cups (about) all-purpose flour
Vegetable or olive oil for deep frying
confectioners' sugar

Steps:

  • 1 In a large bowl, beat the eggs, sugar, olive oil, and vanilla until well blended. 2 Gradually add 2 cups flour, stirring until the mixture is smooth and forms a soft dough. If the dough is sticky, add an additional spoonful of flour. 3 Shape the dough into a ball and cut it in half. Keep one half covered while working with the other. 4 On a lightly floured surface, roll out the dough to a 1/8-inch thickness. With a fluted pastry wheel, cut the dough into 6 × 1-inch strips. Tie each strip into a loose knot. Place the knots on a tray or baking sheet. Repeat with the remaining dough. 5 In a deep heavy saucepan, pour enough oil to reach a depth of 2 inches, or if using an electric deep-fryer, follow the manufacturer's directions. Heat the oil to 370°F on a frying thermometer, or until a bit of the dough placed in the oil sizzles and browns in 1 minute. Have ready a tray lined with paper towels. 6 Add as many of the dough pieces to the pan as will fit without crowding. Cook, turning once, until golden brown, about 3 minutes. 7 Remove the bows with a slotted spoon or skimmer and drain on paper towels. Fry the remainder in the same way.
