1 cup milk
3 tablespoons milk
⅔ cup quick-cooking oats
2 tablespoons raisins, or to taste

1 teaspoon vanilla extract

salt to taste

Steps:

  • Beat egg in a microwave-safe bowl; add 1 cup plus 3 tablespoons milk, oats, raisins, brown sugar, vanilla extract, butter, cinnamon, and salt and mix well.
  • Microwave on high for 1 minute; stir and microwave for 1 minute more. Stir oatmeal and microwave until cooked, about 1 minute more.

1 pound old-fashioned rolled oats (about 5 2/3 cups)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch kosher salt
10 ounces unsalted butter, at room temperature
6 ounces dark brown sugar, packed (about 3/4 cup)
3 1/2 ounces granulated sugar (about 1/2 cup)
1 teaspoon vanilla extract
1 large egg
4 ounces raisins, optional, soaked overnight in rum and drained, optional (about 2/3 cup)

Steps:

  • Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
  • Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
  • Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

Steps:

  • In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.

  • In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.

1/2 cup unsalted butter (1 stick), very soft
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt, or to taste
1 cup semi-sweet chocolate chips, plus more for after baking (or substitute with raisins, walnuts, etc.)

Steps:

  • Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray; set aside.
  • To a large bowl, add the egg, butter, sugars, vanilla, and mix with a spoon aggressively for about 90 seconds, or until smooth and slightly fluffed, i.e. your bicep and shoulder should be burning if you've mixed well enough.
  • Add the oats, flour, baking soda, salt, and stir to combine.
  • Add the chocolate chips and stir to combine.
  • Using a 2-tablespoon cookie scoop, form mounds and place on prepared baking sheet spaced about 2 inches apart (I baked 12 cookies on the first sheet)
  • Bake for about 10 to 13 minutes (short for super soft cookies, longer for more well-done cookies), or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool.
  • Immediately upon taking the baking sheet out of the oven, add about 5 additional chocolate chips per cookie. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.

2 cups water
2 cups milk
1 cup Irish steel-cut oats
1 pinch salt
1/2 cup apple juice
1/2 cup golden raisins or dried cherries
1/2 cup heavy cream
1 teaspoon brown sugar
1/8 teaspoon cinnamon

Steps:

  • In a medium saucepan, bring the water and milk to a boil. Stir in the steel-cut oats and salt and cook a few minutes to thicken. Reduce the heat and simmer uncovered for 30 minutes stirring occasionally.
  • Meanwhile, in a small saucepan bring the apple juice to a boil, add the raisins, and cook a few minutes to help them plump. In a mixing bowl, with a whip attachment combine the heavy cream, brown sugar, and cinnamon and whip until stiff. Keep chilled.
  • Remove the cooked oatmeal from the heat and serve piping hot in bowls. Sprinkle the plumped raisins on top of the oatmeal and spoon a dollop of the brown sugar cinnamon whipped cream in the center and serve.
  • Notes about the recipe: To cut some of the cooking time, soak the oats in water overnight by bringing the water to a boil, turn off the heat, and add the oats. Cover the pot and let sit over night. The next morning cook on low heat 9 to 12 minutes stirring occasionally.

6 cups rolled oats
2 teaspoons baking soda
1/2 cup brown sugar
4 tablespoons vegetable oil
3 tablespoons unsweetened cocoa
4 teaspoons vanilla extract
1 cup flax seed meal
1 teaspoon cinnamon, heaping
1/2 teaspoon nutmeg
1 cup semi-sweet chocolate chips
2 1/4 cups milk, dairy free if needed
1 cup dried cranberries (omit cocoa powder and chocolate chips)

Steps:

  • 1) Add all dry ingredients to large mixing bowl, stir until well combined.
  • 2) Add Chocolate Chips and stir again until thoroughly distributed.
  • 3) Add in oil, vanilla, and milk, stirring to thoroughly moisten all ingredients.
  • 5) Let rest for aprox. half an hour while preheating oven to 350 degrees F.
  • 6) line baking sheets with parchment (or grease).
  • 7) Scoop dough with large ice cream/cookie scoop and drop onto prepared baking sheet. Flatten each cookie.
  • 8) bake for about 25-30 minutes or until firm. Allow to cool on the baking sheet for 5 minutes before removing to a flat surface to cool completely.

1 1/2 cups mixed dried fruits and nuts, such as golden raisins, currants, coarsely chopped dried apricots, dried cherries, coarsely chopped pecans, or a combination of above

Steps:

  • Heat oven to 350 degrees. Line baking sheets with Silpats; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, brown sugar, and granulated sugar on medium speed until light and fluffy, about 3 minutes. Add eggs; mix on high speed to combine. Mix in vanilla; set aside.
