10 ounces broccoli florets, about 2 cups
1 1/2 cups leftover rotisserie chicken
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons mayonnaise
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 (8-ounce) tubes crescent rolls

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside. Place broccoli florets into a steamer or colander set over a pan of boiling water. Cover and steam for 5 mins, or until cooked through and vibrant green; set aside. In a large bowl, combine chicken, cheese, sour cream, mayonnaise and garlic powder; season with salt and pepper, to taste. Remove rolls from the can, separating them into 8 rectangles, 2 triangles each. Press each rectangle to form a 6×4-inch rectangle, firmly pressing perforations to seal. Top half of each rectangle with chicken mixture and broccoli. Fold dough from the top over the filling, pressing the edges to seal. Place onto the prepared baking sheet and bake until golden brown, about 12-13 minutes.* Serve immediately.

4 large chicken breasts
4 tablespoons olive oil (divided)
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon paprika
2 cups chopped broccoli (smaller pieces)
1/2 cup shredded cheddar cheese
6 ounces cream cheese (softened)
1 clove garlic (minced)
Dash of salt and pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Combine the salt, pepper, onion powder, garlic powder, and paprika in a small dish. Drizzle the olive oil over the chicken breasts. Rub the seasoning mixture on the chicken and coat entirely.
  • Combine the filling ingredients in a bowl. Set aside.
  • Cut out a wide pocket in each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the filling.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once heated, sear the stuffed chicken breasts on each side, but don't cook through. You may need to do this in two batches depending on the size of your chicken breasts. Place all 4 breasts in the skillet and transfer the skillet to the oven.
  • Bake for 25-35 minutes until the chicken breasts are cooked through.

2 cups finely chopped broccoli floret
8 thin chicken breast cutlets (about 3 to 4 ounces each)
1 large egg
2 teaspoons water
3/4 cup whole wheat or gluten-free seasoned breadcrumbs
4 slices cheddar cheese (cut in half 3 oz)
3/4 teaspoon kosher salt
olive oil spray
toothpicks

Steps:

  • Preheat oven to 425F. Spray a sheet pan with oil.
  • Place broccoli in the microwave with 1 tablespoon water, cover and cook 1 minute until soft. Drain and season with 1/4 teaspoon salt.
  • In a small bowl, combine egg, water and a little salt and beat with a fork; set aside. Fill a second bowl with breadcrumbs.
  • If the chicken isn't 1/4-inch thin, pound it thin with wax paper and a mallet. Season both sides of the chicken with 1/2 teaspoon salt. Place a 1/2 slice cheese in the center of the chicken and top with 2 tablespoons broccoli.
  • Roll the chicken around to completely cover cheese, using toothpicks to secure the ends, if needed.
  • Dip chicken into egg wash, then breadcrumbs and transfer to a sheet pan. Spray both sides of the chicken with oil and bake about 25 minutes, until cooked. Remove toothpicks and eat.
  • Preheat air fryer to 400F. Spray a sheet pan with oil.

½ teaspoon garlic powder
¼ teaspoon dried basil
¼ teaspoon salt (or to taste)

¾ cup chicken broth (more as needed)
4 cups broccoli florets
4 ounces cream cheese (cubed)
½ cup sharp cheddar cheese (shredded)
2 tablespoons parmesan cheese (shredded)

Steps:

  • Sprinkle chicken with seasonings.
  • Heat oil in a skillet over medium-high heat. Add the chicken to the pan and cook 2 minutes or until browned. Flip over and cook an additional 2 minutes.

8 ounces cooked potatoes
8 ounces peeled raw potatoes
8 ounces (heaping 1 1/2 cup) white flour
1/4 teaspoon baking powder, sifted
1 to 1 1/2 cups buttermilk (for the right consistency - you want the batter somewhat stiff, but not thick)
salt to taste (the biggest knock on boxty's is that they don't contain enough salt)
Butter for pan frying
For the Filling:
2 tablespoons butter
2 tablespoons white flour
1 cup hot milk
salt to taste
pinch white pepper
1/3 cup grated swiss cheese
1/4 cup grated sharp cheddar cheese
1 bunch broccoli (trimmed to florets)
12 Morningstar Farms® Chik' n Nuggets

Steps:

  • For the Boxtys: Peel cooked potatoes while still hot, transfer to a bowl and mash immediately. Grate raw potatoes, add to mashed potatoes along with the flour and sifted baking soda. Mix well, and add enough buttermilk to make a stiff batter. Heat pan/griddle to med/med-hi, grease with butter and prepare like pancakes. For the filling: Steam broccoli for 5-7 minutes (firm but steamed through thoroughly). Prepare Chik'n nuggets according to package, cut nuggets in fourths with a sharp knife (about the size of cubed chicken). Melt butter in a saucepan over medium heat. Add flour and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens. Simmer, stirring frequently, over very low heat for 5 minutes. Season with salt and pepper to taste, add shredded cheeses and stir until blended (sauce should be velvetty). Add broccoli florets, stir to coat, add chik'n nuggets. Remove coated florets and nuggets to a bowl, reserving remaining sauce. To present: Lay cooked boxty on plate, Spoon 1/4 of broccoli/Chik'n Nugget mixture to one half of boxty, fold other half of boxty over mixture. Spoon 1/4 of reserved bechamel sauce over folded boxty, garnish as desired.

2 cups flour

Steps:

  • Peel and grate the raw potato, then wrap in a clean towel and squeeze out as much of the liquid as you can.
  • Put the grated potato into a large bowl and stir in the cooked mashed potato and the flour.
  • Stir in the melted butter and season if necessary.
  • Add a bit of milk and stir, then add a bit more milk - keeping doing this until all of the milk is combined into the mixture and you have a somewhat sticky dough, if it's too wet add a bit more flour.
  • Dust your hands and work surface in flour and grab a palm sized amount of the mixture, flattening it out to about 1-cm (¼ in) thick.
  • Spoon some grated cheese and some bacon bits into the center and drop another flattened out dough mixture piece on top.
  • Cut into a nice round shape using a cookie cutter making sure it's fully sealed. NOTE: Try not to make these too thick or they might not cook all the way through, if they are thick, lower the temperature to a low-medium heat instead.
  • Fry in butter over a medium heat for about 4-6 minutes on each side until golden brown.
  • Serve topped with a tablespoon of soured cream and a few bits of scallions.
  • Enjoy!
