BRAIDED PORK TENDERLOINS

- Cut tenderloins in half lengthwise; cut each half into three strips to within 1-in. of one end. In a large resealable plastic bag, combine the mango nectar, 1/4 cup rum, oil, 1 tablespoon jerk seasoning and garlic; add pork. Seal bag and turn to coat; refrigerate for up to 4 hours., Drain and discard marinade. Place tenderloin halves on a clean cutting board and braid; secure loose ends with toothpicks. Sprinkle with remaining jerk seasoning., Grill braids, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Discard toothpicks. Let stand for 5 minutes before slicing., Meanwhile, place the cream, remaining rum and mango in a food processor. Cover and process until smooth. Transfer to a small saucepan; heat through. Serve with pork.

BREADED PORK TENDERLOIN
This is the most tender, tasty recipe for pork tenderloin.

- Slice tenderloin into 1/4 inch rounds. Place rounds between sheets of plastic wrap and pound until thin.
- Preheat oven to 325 degrees F (165 degrees C).
- Beat eggs and milk together and pour into a shallow dish or bowl. Set aside. In a separate dish or bowl combine breadcrumbs with garlic salt, oregano, salt and pepper. Mix all together. In a large skillet heat oil over medium high heat. Meanwhile, dip tenderloins in egg mixture, then coat with bread crumb mixture. When oil is hot, add coated tenderloin to skillet and fry until golden brown on both sides (not cooked through)!
- Place browned tenderloin in a 9x13 inch baking dish lined with aluminum foil. Fry any leftover eggs and bread crumbs together for 'breadings'. Add 'breadings' to baking dish. Cover tightly and bake in the preheated oven for about 45 minutes or until meat has reached an internal temperature of 145 degrees F (63 degrees C).

BREADED PORK TENDERLOIN SANDWICH

- Cut the pork tenderloin crosswise into 4 even pieces. Cut each piece crosswise again, but do not go all the way through; you should be able to open it like a book. Pound each piece with a mallet until 1/4-inch thick and 6 to 8 inches across.
- Whisk together the buttermilk, garlic powder, onion powder, paprika, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a shallow dish. Add the pork cutlets. Make sure all the pieces are coated well with the buttermilk marinade. Cover and refrigerate for at least 4 hours and up to overnight.
- Set up a breading station with 3 shallow dishes: the flour in the first dish, eggs in the second and breadcrumbs in the third. Sprinkle all 3 dishes with salt and pepper.
- Fill a large, high-sided skillet with about 1/2-inch oil, attach a deep fat fry thermometer and heat to 350 degrees F.
- Dredge each pork cutlet in the flour first, then in the egg and finally in the breadcrumbs. Gently place into the hot oil without overcrowding the skillet. You will need to fry the cutlets in batches. When the cutlets are golden brown on one side, about 2 minutes, carefully turn and cook for another 2 minutes. Drain well on a paper-towel-lined plate.
- Build the sandwiches by putting the cutlets between the burger buns and garnishing with lettuce, tomato, onion, pickle, mayonnaise and mustard. The cutlet should hang generously over the bun.
PAN-SEARED PORK TENDERLOIN WITH BRAISED TURNIPS AND PARMESAN

- Combine the cumin, garlic salt, oregano and mustard powder in a small bowl. Sprinkle the pork medallions on all sides with salt, followed by the rub.
- In a large straight-sided saute pan, heat the canola over high heat until it begins to smoke, then turn down the to medium. Add the pork medallions and sear until caramelized on one side, 3 to 4 minutes. Flip, then sear on the other side until the pork reaches an internal temperature of 130 degrees F, about 4 more minutes. Remove the pork and set aside to rest. Return the pan to the heat and add the scallions and garlic. Cook over low heat until softened, about 3 minutes. Add the turnips and cook, stirring to coat the vegetables, for 1 minute. Add the white wine and chicken stock, scraping up any brown bits on the bottom of the pan. Bring to a simmer over medium heat and reduce by three-quarters, about 5 minutes. Chiffonade 1/2 cup of the turnip greens and add to the sauce with the butter and rosemary. Return the pork and any accumulated juices to the pan. Remove from the heat and top with the Parmesan. Divide among plates and garnish with the chives.

- Cut pork crosswise into 1/2-in. slices. In a shallow bowl, mix flour, cornbread mix, salt and pepper. Place egg in a separate shallow bowl. Dip pork in egg, then in flour mixture, patting to help coating adhere., In a large skillet, heat 2 tablespoons oil over medium heat. Add half of the pork; cook until a thermometer reads 145°, 3-4 minutes on each side. Drain on paper towels. Wipe skillet clean; repeat with remaining oil and pork. If desired, serve with sauce.

This is an outstanding recipe I found in Cooking with Herb Scents Cookbook many years ago. It smells wonderful while cooking and is very nice for company or a special occasion.

Steps:
- Preheat oven to 300°F.
- Lightly grease 1 1/2-quart casserole.
- Cut pork into 2 x 1/2 inch strips, cutting at right angle to the grain of meat.
- Dredge meat in seasoned flour.
- Heat oil in large frying pan over medium-high heat.
- Add meat and cook until well browned.
- Remove meat to prepared casserole.
- Cook mushrooms in same frying pan, adding another tablespoon of oil if necessary.
- When browned, transfer to the casserole.
- Add chicken broth and wine to frying pan.
- Scrape up any remaining bits of meat.
- Add summer savory and onion.
- Simmer for about 2 minutes, then pour over meat and mushrooms.
- Cover and bake for about 45 minutes, or until meat is very tender.
- Serve with hot cooked rice or noodles.

- Set the smoker to 300 degrees FahrenheitTake 2 pork tenderloins out of their packaging and pat dry with a paper towel. Take a chef’s knife and 1 inch from the end of each tenderloin, run your knife down the muscle length wise, cutting the muscle into 3 strips, making sure to leave it connected at the end. When you are done this step the tenderloin should look like it has tentacles that are all connected at one end. Repeat this step for the second tenderloin as well. Next you want to coat the muscle in a light coating of Motley Mustard all over and follow that with a healthy coating of the Maple Fixx BBQ seasoning. Once the tenderloin is seasoned you want to braid it by placing the left tentacle over the center one and then the right and then repeat until the whole loin has been braided together, nice and tight. If you notice that the second one looks better than the first one, it’s OK to re-do the first one now that you are good at it.
- Place both pork tenderloins directly on the smoker and cook until you reach an internal temperature of 140 degrees (about 30-40 minutes). Sometimes you can cook pork to medium rare, but in this instance it is best to take it up to medium or medium well because you put the outside of the pork on the inside. Once you have reached the desired internal temperature, baste the loin in the Motley Mustard. Let the sauce set on the smoker before removing from the grill.
- Let the loin rest for 5 minutes prior to serving. I find it’s best to place the whole loins on the table unsliced because once you start slicing this the braids can come apart, so it looks the best when it’s left whole until you are ready to plate. You will notice when serving this that the seasoning penetrates the whole loin and therefore has a lot of flavour. Serve a side of Motley Mustard and enjoy!
