SWEET BRAISED LAMB PASTA

Sweet Braised Lamb Pasta image

Provided by Claire Robinson

Time 3h5m

Yield 6 to 8 servings

Number Of Ingredients 7

4 lamb shanks
Coarse salt and freshly ground black pepper
3 tablespoons garlic infused olive oil
1 (750ml) bottle ruby port
Water
3 tablespoons mulling spices
2 pounds fresh pappardelle pasta

Steps:

  • Season the lamb shanks with salt and pepper, to taste. Heat the oil in large heavy pot over medium-high heat. Working in batches, if necessary, to not overcrowd the pan, sear the shanks on all sides until deep brown, about 7 minutes. Remove the shanks to a plate and add the port. Bring to a simmer, scraping any brown bits off bottom of pan and reduce by 1/3. Add the mulling spices, wrapped in cheesecloth or in a muslin tea bag. Return shanks to the pot, adding water if needed, to cover the meat. Cover and simmer until the meat is tender, about 2 1/2 hours. Remove the shanks to a cutting board and let rest. Discard the mulling spices. Simmer the braising liquid until reduced and thickened, about 20 minutes.
  • Meanwhile, cook the pasta to al dente according to package directions in a large pot of salted boiling water, about 4 minutes. Pull the meat from the bones, chop it and add it to the sauce. Drain the pasta, and add it to the meat and sauce. Toss and serve immediately. Enjoy!

SABA-BRAISED LAMB SHANKS

Saba-Braised Lamb Shanks image

If you're looking for a foolproof, wintry braised meat dish, this is virtually impossible to screw up! The only way to screw this up is to undercook the meat. The sauce has no thickeners, just pure 100% natural goodness.

Provided by Chef John

Categories     Meat and Poultry Recipes     Lamb     Shanks

Time 3h50m

Yield 4

Number Of Ingredients 12

4 lamb shanks
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 teaspoon ground cinnamon
½ teaspoon dried rosemary
1 large onion, sliced
6 cloves garlic, crushed
1 cup chicken broth
⅓ cup saba
½ teaspoon chopped fresh rosemary

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place lamb shanks into a large bowl; drizzle with olive oil. Sprinkle with salt, black pepper, smoked paprika, cinnamon, and rosemary. Toss the lamb shanks to spread oil and seasonings over the meat.
  • Spread onion slices and garlic cloves into the bottom of a heavy 9x12-inch baking dish. Lay lamb shanks over onions and garlic.
  • Bake lamb in preheated oven for 30 minutes. Reduce oven temperature to 200 degrees F (95 degrees C).
  • Combine chicken broth and saba in a bowl. Pour mixture over the lamb shanks. Cover baking dish tightly with foil and place baking dish on a baking sheet.
  • Bake lamb in the oven until a knife pierces the meat easily, 2 1/2 to 3 hours. The meat will be tender but not falling off the bone. Use tongs to turn the shanks over in the pan sauce. Increase temperature to 350 degrees F (175 degrees C).
  • Return shanks to oven and bake, uncovered, until meat is fork-tender and the sauce has thickened slightly, 10 to 15 minutes. Turn shanks over in the sauce after 10 minutes and check for tenderness; if still not tender enough, return to oven for 10 to 15 more minutes and test again.
  • Transfer lamb shanks to a bowl and keep warm. Strain pan juices into a saucepan and place over medium heat. Bring to a boil and cook, stirring often, until thickened, about 5 minutes. Skim any excess grease from top of sauce. Taste and season with salt; stir in fresh rosemary. Serve sauce drizzled over lamb shanks.

2 celery stalks, coarsely chopped
6 sprigs fresh thyme
2 cups dry red wine
4 to 6 cups homemade chicken stock
2 serrano peppers, finely diced
1/2 cup dark brown sugar
1 cup red wine vinegar
Sweet Potato Risotto with Roasted Chanterelles, recipe follows
8 to 10 cups water
2 tablespoons unsalted butter
1 tablespoon olive oil
1 large onion, finely chopped
Salt and freshly ground pepper
2 cups arborio rice
1 cup dry white wine
1 large sweet potato, baked, peeled and pureed
2 tablespoons cold unsalted butter
1/2 cup grated Parmesan
2 tablespoons pine nuts, lightly toasted
2 cups balsamic vinegar, reduced to 1/4 cup
Roasted Chanterelles, recipe follows
2 teaspoons truffle oil
1/2 pound chanterelles
2 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season shanks on both sides with salt and pepper, to taste. Heat oil in a large rondeau until almost smoking. Add shanks and sear on both sides until golden brown. Remove shanks to a plate.
  • Add onion, carrots, celery, and thyme to the pan, season with salt and pepper and cook until the vegetables are golden brown. Return the lamb to the pan, add the wine, and cook until completely reduced. Add stock to cover and bring to a boil. Cover and place in the oven. Cook for approximately 2 1/2 hours or until the meat is very tender.
  • Strain sauce through a fine strainer into a medium saucepan. Add the serrano, sugar, and vinegar and cook until reduced by 1/2. Season with salt and pepper, to taste.
  • Serve with Sweet Potato Risotto with Roasted Chanterelles.

Add rice and toss to coat in the mixture. Add wine and cook until completely reduced. Add 2 cups of the boiling water and cook until absorbed. Continue adding 1 cup of water at a time and cook, stirring often, until all liquid is absorbed. Repeat until rice is al dente.
  • Stir in the sweet potato and mix until combined. Add the butter and Parmesan, and season with salt and pepper, to taste. Fold in the pine nuts and reserved chanterelles, and scrape the mixture into a bowl. Drizzle with the balsamic glaze and the white truffle oil.
  • Preheat oven to 425 degrees F.
  • Place mushrooms in a medium baking pan, toss with oil and season with salt and pepper, to taste. Roast until golden brown, about 15 to 20 minutes.

BRAISED LAMB FILLETS WITH A CREAMY RISOTTO

Braised Lamb Fillets With a Creamy Risotto image

This is a wonderful recipe, the lamb comes out moist and juicy and the risotto is a wonderful accompaniment, that is full of flavour and lovely and creamy. It is my son's favourite risotto recipe and he is always asking me to make it.

Provided by The Flying Chef

Categories     Lamb/Sheep

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 25

olive oil
4 lamb fillets (you could also use one large fillet of about 600g if that is all you can get.)
1 small leek, finely diced
3 garlic cloves, crushed
1 small carrot, finely diced
300 ml water
2 teaspoons beef bouillon granules
200 ml dry red wine
25 g butter
50 ml balsamic vinegar
2 1/2 teaspoons cornflour
truffle oil
2 tablespoons shaved parmesan cheese (extra)
30 g butter
1 onion, finely chopped
2 garlic cloves, crushed
3/4 cup risotto rice
2 1/2 cups water
1/2 cup dry white wine
1 tablespoon thyme leaves
1 1/2 teaspoons instant chicken bouillon granules
20 g parsley, finely chopped
3 tablespoons parmesan cheese
1 1/2 tablespoons mascarpone cheese
pepper

Steps:

  • Heat some olive oil in a large pan, add lamb fillets and sear to brown both sides.
  • Add leek, carrot and garlic stirring a couple minutes to soften leek, do not allow vegetables to brown.
  • Pour in water and wine, add stock, balsamic vinegar and butter, stir to combine.
  • Cook over a very low heat for 45 min's to 1 hour, until lamb is tender. Turn lamb a couple of times during cooking. (If using a whole lamb fillet cooking time will be longer becuase of the weight.).
  • Remove lamb and keep warm, turn the heat back up, mix a little water with the cornflour and pour into pan, stir until sauce thickens. ( I use this more just to drizzle a little over the meat, rather than as a sauce, as it is already full of flavour, as is the risotto.).
  • Serve meat over risotto, drizzle a small amount of pan sauce over, top with shaved parmesan ans drizzle with truffle oil.
  • Risotto.
  • Melt butter in a pan, add onion and garlic stir until onion softens, add rice and stir to coat in butter.
  • Pour in water and wine, stir, add chicken stock and bring to the boil, turn heat down and simmer over a low heat until liquid is absorbed and rice is cooked about 20 min's.
  • Just before all the liquid has been absorbed add herbs, stir to combine.
  • Once it is cooked remove from heat and add cheeses and pepper to taste, stir gently until cheese has melted.
  • To Serve: Place risotto in the centre of a plate, slice lamb fillets into thin slices, drizzle a very small amount of reserved pan juice, top with parmesan shavings and drizzle with truffle oil.

LAMB FILLET WITH ORANGE, REDCURRANT AND MINT SAUCE

Lamb Fillet with Orange, Redcurrant and Mint Sauce image

This was in Melbournes Herald Sun Newspaper yesterday. It looks fast and tasty, and I love lamb! They suggested 3 minutes would be enough cooking time for the fillets, but I think a little more would suit me!

Provided by JustJanS

Categories     Lamb/Sheep

Time 10m

Yield 6 serving(s)

Number Of Ingredients 9

6 lamb fillets (large enough for 1 per person)
1 teaspoon finely grated orange rind
1/2 cup orange juice
2 tablespoons lemon juice
1/3 cup red currant jelly
2 tablespoons port wine or 2 tablespoons chicken stock
2 teaspoons French mustard
salt and pepper
1 tablespoon fresh mint leaves, roughly chopped

Steps:

  • Mix everything (except the lamb) together in a small saucepan and bring to the boil, stirring to melt the redcurrant jelly.
  • Cook for a couple of minutes (this can be done in advance).
  • Season the lamb and oil the outside lightly.
  • Put in a hot pan and brown on all sides.
  • Cook until done to your liking-I would cook a small thin fillet for about 5 minutes.
  • Remove to a warm plate and cover loosely with foil or another plate.
  • Tip the sauce into the lamb cooking pan, and boil quickly.
  • Serve the lamb sliced diagonally with plenty of sauce poured over.
