1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
4 pork chops (3/4 inch thick)
2 tablespoons vegetable oil
1 medium onion, sliced
3/4 cup sliced celery
1 garlic clove, minced
1 can (13-3/4 ounces) beef broth
1 teaspoon dried thyme
1 bay leaf

Steps:

  • In a large resealable plastic bag, combine flour, salt and pepper. Add chops; seal bag and shake to coat. , In a skillet over medium-high heat, cook chops in oil for about 3 minutes per side or until well browned. Remove chops and set aside. Cook onion, celery and garlic in drippings until tender. , Return chops to the skillet; add broth, thyme and bay leaf. Simmer, uncovered, for 30 minutes or until pork juices run clear. Remove bay leaf. , Transfer chops to a serving plate. With a slotted spoon, remove celery and onion; spoon over chops. Thicken juices for gravy if desired.

2 tablespoons canola oil
Six 6-ounce boneless center-cut pork chops, trimmed of any fat
1 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
2 tablespoons light-brown sugar
1 tablespoon Worcestershire or soy sauce
1 teaspoon garlic salt
Sprigs fresh parsley, for garnish

Steps:

  • Heat oil in a large heavy-bottomed skillet over medium-high heat. Brown pork chops on all sides, 2 to 3 minutes per side.
  • Meanwhile, in a medium bowl, stir together mustard, vinegar, sugar, Worcestershire sauce, and garlic salt with 1/3 cup water. Pour over pork chops. Reduce heat, cover, and cook until tender, about 1 hour.
  • Transfer pork to a serving platter. Raise heat to medium-high and cook sauce until thickened, about 5 minutes. Pour sauce over pork chops; garnish with parsley and serve immediately.

1/4 cup dried parsley flakes
2 teaspoons paprika
1 teaspoon rubbed sage
1 teaspoon dried thyme
1 teaspoon ground mustard
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
7 bone-in pork loin chops (1/2 inch thick)
2 tablespoons vegetable oil
2 cups thinly sliced onions
4 large garlic cloves, sliced
5 medium carrots, cut into 2-inch pieces
2 cups chicken broth
Hot mashed potatoes
Chopped fresh thyme, optional

Steps:

  • Combine the first 8 ingredients; rub over both sides of pork chops. In a Dutch oven, brown chops in oil for 2-3 minutes on each side. Remove and set aside. In the same pan, saute onions and garlic for 2 minutes. Add carrots and broth. Bring to a boil; reduce heat., Return chops to pan. Cover and bake at 325° until meat and vegetables are tender, 1-1/2 to 2 hours. If desired, thicken pan juices. Serve with potatoes and if desired, top with chopped fresh thyme. Freeze option: Cool pork mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 145°, stirring occasionally.

1 onion, slivered
1 each small green and red bell pepper, cut into thin strips
3 Tbsp. flour
1/2 tsp. ground black pepper
6 center-cut boneless pork chops (1-1/2 lb.), 1/2 inch thick
1 jar (24 oz.) CLASSICO Florentine Spinach & Cheese Pasta Sauce
1/2 cup dry white wine
1/2 tsp. dried thyme leaves
3-1/2 cups penne pasta, uncooked

Steps:

  • Heat 1 Tbsp. oil in large skillet on medium-high heat. Add onions and bell peppers; cook 4 to 6 min. or until crisp-tender, stirring occasionally. Remove from skillet. Reserve for later use.
  • Combine flour and black pepper in shallow dish. Dip chops, 1 at a time, in flour mixture, turning to evenly coat both sides of each chop.
  • Mix pasta sauce, wine and thyme until blended. Heat remaining oil in same skillet on medium-high heat. Add chops; cook 2 to 3 min. on each side or until evenly browned on both sides. Pour pasta sauce mixture over chops; turn to evenly coat chops with sauce. Cover; simmer on medium-low heat 25 to 30 min. or until chops are done (145ºF), turning after 15 min.
  • Meanwhile, cook pasta as directed on package, omitting salt.
  • Transfer chops to platter, reserving sauce in skillet. Cover chops to keep warm; let stand 3 min. Meanwhile, stir cooked vegetables into sauce mixture in skillet; cook 2 to 3 min. or until heated through, stirring frequently.
  • Drain pasta. Serve with chops and sauce.

6 pork chops, 1 inch thick
salt
pepper
1/2 cup flour
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons vegetable oil
1 1/2 cups thinly sliced onions
2 tablespoons chopped garlic
2 tablespoons white wine vinegar
1 bay leaf
1 cup heavy cream
1 tablespoon Dijon mustard
1/4 teaspoon lemon juice
1 tablespoon chopped chives (optional)
1 tablespoon chopped parsley (optional)

Steps:

  • Preheat oven to 325-degrees F.
  • Seaon the pork chops with salt and pepper, dip them in flour and shake off excess flour.
  • Melt the butter and oil in a heavy frying pan over medium heat.
  • Add chops and saute for 2-3 minutes per side until golden.
  • Transfer chops to a 9 x 13- inch baking dish or other baking dish that is large enough to hold chops in one layer.
  • After browning chops, discard all but 2 tablespoons of the fat and cook the sliced onions and garlic in the pan until they color lightly.
  • Remove pan from heat and add the vinegar to pan.
  • Pour drippings and onions over chops.
  • Crumble in the bay leaf over all and heat on top of the stove until casserole bubbles.
  • Cover tightly with lid or tin foil and place in oven.
  • After 10 minutes, baste chops with juices.
  • After another ten minutes turn chops over.
  • Cook for a total of 30 minutes before removing from oven.
  • Tip baking dish and skim fat from pan and discard.
  • Place casserole on top of stove and add cream to pan.
  • Bring to a boil over high heat and simmer until reduced by half.
  • Remove from heat.
  • Stir in the mustard and lemon juice.
  • Sprinkle with chives and/or parsley (if using).

The chops are served with pasta, the sauce and a robust green vegetable such as spinach or escarole. Correction: Soffrito is the correct spelling for this Italian mixture of aromatic vegetables, which is more often know by the French name, mirepoix. Sofrito is a slightly different Caribbean-Spanish mixture used for similar purposes.

2 -3 lbs pork chops (4 thick ones)
1/2 cup olive oil
1/2 cup water (may be used) or 1/2 cup broth (may be used)
8 ounces tomato sauce
2 medium carrots, finely chopped
2 stalks celery, finely chopped
1 medium onion, finely chopped
4 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes (edited per SugarPea's comment)
1/2 teaspoon thyme
1/2 teaspoon basil

Steps:

  • Wipe the chops with a damp paper towel and dry them.
  • Brown the chops in 1/4 cup of the oil at medium/high heat in a large skillet.
  • Remove the chops and set aside.
  • Add the vegetables and the remaining 1/4 cup of oil to the pan.
  • Caramelize the vegetables at medium heat (this is the sofrito).
  • Return the chops to the pan and spoon some of the sofrito over them.
  • Add the seasonings and wine.
  • Cover and simmer on low heat for 30 minutes.
  • Add a little water from time to time to prevent the pan from boiling dry.
  • Add the tomato sauce.
  • Cook covered 10 more minutes.
  • Remove the chops and strain the sauce.
  • Drizzle some sauce over the chops.
  • Dress pasta of your choice with the remaining sauce.

Brine or hot-pepper liquid (recipes follow)
3 tablespoons olive oil

Steps:

  • Soak the chops in brine or inject with hot-pepper liquid 1 to 24 hours before cooking. (To inject chops, fill the syringe with liquid, insert about 2 inches into the side of each chop and inject.)
  • Remove the chops from the brine and dry with paper towels.
  • Heat the oil in a Dutch oven or deep skillet over medium-high heat. Add the chops and sear until browned, about 1 minute per side. Reduce the heat to medium and add water to a depth of about 1/4 inch. Cover the pan and cook 7 minutes, adjusting the heat so the water simmers steadily, adding water as needed.
