TUSCAN KALE WITH CARAMELIZED ONIONS AND RED-WINE VINEGAR
Tuscan kale, also known as cavolo nero, dinosaur kale, and lacinato kale, is sweeter and more tender than regular kale, which can be used instead but may require more cooking time.

Steps:
- Combine oil, onion, garlic, and 1/4 teaspoon salt in a large saute pan; cook over medium heat, stirring occasionally, until onion is lightly browned, about 5 minutes. Reduce heat to medium-low; cook until onion is soft, about 10 minutes.
- Add vinegar to pan, and raise heat to medium-high. Add kale, 1/4 cup water, and remaining 1/2 teaspoon salt; cook, stirring, until kale begins to soften, about 3 minutes. As the pan becomes dry, add another 1/4 cup water, and cook until the kale is tender, about 3 minutes more. Serve immediately.

BRAISED TUSCAN KALE WITH PANCETTA AND CARAMELIZED ONIONS

- Put oven rack in middle position and preheat oven to 350°F. Cut out a round of parchment paper to fit just inside a 5- to 6-quart heavy ovenproof pot, then set round aside.
- Blanch kale in a 6- to 8-quart pot of boiling salted water in 2 batches, 2 minutes per batch, transferring with tongs to a colander as blanched, then drain well.
- Warm oil in 5- to 6-quart pot over moderate heat, then add pancetta and cook, stirring frequently, until crisp, 10 to 15 minutes. Transfer pancetta with a slotted spoon to a plate and reserve, discarding all but 1/4 cup of fat in pot (if necessary).
- Tie thyme, bay leaf, and parsley together with kitchen string to make a bouquet garni and add to pot along with onions and garlic. Cook over moderate heat, stirring frequently, until onions are golden brown, about 20 minutes. Return pancetta to pot then add butter and heat, stirring occasionally, until melted. Stir in kale and add enough stock to cover three fourths of kale. Increase heat to high and bring to a simmer. Cover kale directly with parchment round, then transfer pot to oven and braise, stirring once or twice, until kale is very tender, about 45 minutes.
- Transfer pot to stovetop and discard parchment, then boil mixture, stirring occasionally, until almost all of liquid is evaporated but kale is still moist, about 35 minutes. Discard bouquet garni and garlic and season kale with salt and pepper.
BRAISED KALE WITH PINTO BEANS AND PANCETTA
This is a really delicious recipe from Cooking Light that is perfect to use up the bounty of kale that comes around this time of year. It is hearty enough with the beans and pancetta to please a more carnivorous crowd. Please be aware that the cook times are fairly relative--everyone considers greens "done" a bit differently. I altered the recipe a bit, so I will share what I did as well :). This was great served with hot cooked farro, and I'm sure any other grain would be just as good.

- Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray.
- Add onion, pancetta, and garlic; sauté 5 minutes or until pancetta browns.
- Stir in kale, pepper, and salt.
- Add beans and broth; bring to a boil.
- Cover, reduce heat, and simmer 15 minutes or until kale is tender (mine didn't take nearly so long!).
- Uncover and cook 10 minutes or until liquid almost evaporates.

- Pulse hazelnuts in food processor until finely ground. Add kale, 1/4 cup Parmesan cheese, basil, 1/4 cup olive oil and 1/4 teaspoon salt; pulse until smooth and creamy, adding oil if pesto seems dry., In a large stockpot, cook linguine according to package directions. Meanwhile, in a large skillet, heat remaining 2 tablespoons olive oil over medium heat. Add onion; cook and stir until tender, about 5 minutes. Reduce heat to low; add garlic and honey. Cook, stirring occasionally, until onion caramelizes, about 5 minutes more., Drain linguine, reserving 1/2 cup pasta water. In a large serving bowl, combine kale pesto, onion mixture, linguine, chopped tomato and remaining salt. Toss until well coated, adding reserved pasta water if needed to reach desired consistency. Top with remaining Parmesan cheese. Serve warm.

CARAMELIZED ONION LASAGNA WITH PANCETTA
This elegant lasagna is a unique twist on the traditional meat lasagna. The caramelized onions take a bit of time, but the results are well worth it, or you can use my recipe for onions caramelized in the crockpot. Caramelizing the onions a day or two before serving this dish cuts down on the preparation time.

Steps:
- For the caramelized onions, heat the butter and olive oil in a large Dutch oven or heavy bottomed skillet over medium high heat.
- Add the onions, (the pan will be quite full at first), cover the pan with a lid (or with fil if the pan is too crowded), and cook, stirring occasionally, until the onions are completely limp, 10 to 15 minutes.
- REduce the heat to medium, remove the lid, add the sugar and cook uncovered, stirring often, until the onions are golden brown and sweet, 45 to 55 minuters.
- Do not let them burn; reduce the heat to medium low if the onions are browning too fast.
- About 2 minutes before removing the onions from the heat, stir in the thyme.
- Transfer the onions to a bowl, let cook and use immediately, or cover and refrigerate for up to 10 days or freeze for up to 2 months.
- For the bechamel, melt the butter in a medium saucepan over medium-low heat.
- Add the shallots and saute until soft, about 5 minutes.
- Add the flour and cook, stirring frequently for 3 minutes, (do not let brown).
- Increase the heat to medium and slowly whisk in the milk and cream.
- REduce the heat to medium low and simmer, whisking frequently, until the sauce thickens, 8 to 10 minutes.
- REmove from heat and season to taste with salt and white pepper.
- Use immediately, or let cool, cover and refrigerate for up to 1 day.
- If using the next day, warm the sauce over low heat before continuing.
- Saute the pancetta iin a medium skillet over medium heat until just cooked, 3 to 5 minutes, stirring often.
- Drain onto paper towels and set aside.
- Cook the lasagna noodles in boiling water to which you have added the olive oil and some salt, about 12 minutes, or according to package instructions.
- Drain well, rinse under cool water and drain again.
- Preheat oven to 350*F.
- Brush a 9 by 13 inch baking dish with olive oil.
- Spread 1/2 cup of the bechamel sauce in the bottom of dish.
- Cover with 3 noodles, touching but not overlapping.
- Spread the noodles with another 1/2 cup of the bechamel, then top with 1/4 each of the onions, pancetta, mozzarella cheese and top with another layer of noodles.
- Repeat this layering 3 more times.
- Top with remaining bechamel sauce.
- Cover the baking dish tightly with foil and bake for 30 minutes.
- Remove the foil and bake until the top is just beginning to brown, about 10 minutes more.
- If the top is not browning, turn on the broiler and cook under the broiler until the top begins to brown, about 5 minutes.
- To serve let the sasagna sit in the pan for 10 to 15 minutes, then cut into servings and arrange the lasagna on individual plates, garnishing each serving with a thyme or a parsley sprig.
