1 large knob of butter
olive oil
1 x 2 kg fillet of higher-welfare veal leg, tied with string
2 onions
2 cloves of garlic
400 g leeks
300 g baby carrots
2 fresh bay leaves
350 ml white wine
2 handfuls of mixed mushrooms
300 ml double cream

Steps:

  • Place a casserole pan on a medium heat and melt half the butter with a splash of oil. Season and brown the veal on all sides, then remove from pan and set aside.
  • Peel and finely slice the onions and garlic, then trim and cut the leeks into large chunks. Sauté in the same pan until soft but not coloured, then add the carrots and cook for a few minutes.
  • Make a space in the middle, and place in your veal, surrounded by the veg. Tuck the bay into the veal and pour in the wine and 100ml water.
  • Bring to the boil, then cover with a circle of greaseproof paper and simmer for 2 to 2 hours 30 minutes, till the veal is tender. Check the liquid level every 20 minutes or so, adding water as necessary.
  • When the veal is ready, place a frying pan on a medium-high heat with the remaining butter. Tear in the mushrooms and fry until they start to turn golden.
  • Season, and stir into the veal with the double cream. Bring back to the boil then simmer uncovered for 10 minutes, till reduced.
  • Transfer the veal to a board and slice. Serve with braised veg, buttered spätzli or noodles and cabbage gratin.

4 (1-inch thick) veal chops
Salt and freshly ground black pepper
6 sprigs fresh sage, leaves stripped and chopped, about 4 tablespoons
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 tablespoons butter
1/2 cup dry white wine, eyeball it

Steps:

  • Heat a heavy-bottomed skillet over medium high heat. Season chops with salt and pepper and rub them each with about 1 tablespoon of chopped sage. Rub the sage into meat on both sides of each chop. Add oil to the pan. Melt butter into the oil and add chops to the pan. Cook chops 5 minutes on each side and transfer to warm platter and let them rest. Add wine to the pan and scrape up drippings. Spoon drippings down over the chops and serve.

  • Heat 4 tablespoons olive oil with butter in a skillet over medium-high heat. Cook chops until browned, 2 to 3 minutes per side.
  • Once browned, stir in mushrooms and cook for 1 minute. Add chicken broth and rosemary; cover, and simmer 10 minutes. Stir in red wine, increase heat, and cook, uncovered, until sauce is reduced by half. Veal chops may be removed at any time to prevent over-cooking, then returned to the pan for the final minute.

1 1/2 lbs veal shoulder, blade chops
1/4 teaspoon fresh ground black pepper
1/2 teaspoon salt
2 carrots, sliced
1 onion, sliced
2 tablespoons butter
1/2 lemon, cut in half
3 bay leaves
3 garlic cloves, minced
3 whole cloves
1/2 cup veal stock or 1/2 cup chicken stock
1/4 cup dry white wine
2 teaspoons balsamic vinegar

Steps:

  • Preheat oven to 400 degrees F; season veal with pepper and half the salt.
  • Place in a baking dish and surround with carrots and onions; dot veal with butter and roast until veal is lightly brown, about 25 to 30 minutes.
  • Add lemon, bay leaves, garlic, and cloves to dish and mix with vegetables; add stock, wine and remaining salt.
  • Reduce heat to 350 degrees F and braise, uncovered, basting every 10 minutes, until tender, about 90 minutes.
  • Transfer veal and vegetables to a serving platter and keep warm.
  • Strain pan juices into a heat proof bowl, skimming off and discarding fat.
  • Heat a saucepan over medium heat and boil vinegar until reduced and syrupy and about 1 teaspoon.
  • Stir in pan juices, increase heat to high and boil until reduced by half; taste and adjust seasonings.
  • Spoon sauce over veal or serve on the side.

4 shoulder veal chops, about 12 ounces each
salt and pepper to taste
4 tablespoons olive oil
1 carrot, peeled and diced
1 rib celery, peeled and diced
3/4 cup finely chopped onions
1 cup marsala
1 teaspoon tomato paste
1 cup chicken stock (preferably homemade)
1/2 teaspoon dried thyme
1/8 teaspoon dried marjoram
4 anchovy fillets (about 1 ounce) minced
10 ounces frozen spinach, defrosted and drained
1 glove garlic, minced
3 tablespoons pine nuts
1/4 pound Italian Fontina, shredded
2 tablespoons freshly grated parmesan

Steps:

  • Pre-heat oven to 350 Season the veal shops with salt and pepper on both sides. In a large, nonstick skillet gently brown the chops on both sides in 2 tablespoons of olive oil. Place the browned chops in a wide shallow baking pan. Add the carrot, celery and 1/2 cup onion to the skillet and saute until lightly browned. Deglaze the pan with the marsala. Stir in the tomato paste and boil for 3 minutes. Pour this liquid over the chops, cover the baking pan and bake in a preheated 350 degree oven for 1 1/2 hours. Mean while, heat remaining olive oil in a skillet. Add remaining onion, thyme, marjoram, and anchovies and cook over moderate heat until the onion is softened about 2 minutes. Add the spinach and garlic and cook until the mixture is dry. Stir in pine nuts, season to taste with salt and pepper. Set aside. To serve reheat spinach mixture over low heat, stir in cheese, Serve alongside veal chop, spoon sauce on top of chop.

1 veal shoulder
2 tablespoon paprika
2 tablespoon ground chipotle powder
1 tablespoon cinnamon
1 tablespoon ground cumin
4 ounces butter
2 Vidalia onions, cut into large dice
2 organic carrots, cut into large dice
1 bulb celery root, cut into large dice
4 ounces flour
3 quarts chicken stock
3 quarts whole milk

Steps:

  • Dry rub veal shoulder with spices and let sit in the refrigerator for 24 hours.
  • Preheat oven to 325 degrees F.
  • Heat butter in roasting pan over medium heat. Add veal shoulder and brown on all sides. Remove from pan. Add vegetables and cook until tender. Add flour to make roux. Whisk in your liquid and add veal shoulder. Bring to simmer on top of stove and cover with foil. Cook in the oven for 3 hours.
  • Remove veal and puree sauce until smooth. Slice veal and coat with sauce to serve.

Double Veal Chops With Braised Spring Vegetables image

4 tablespoons olive oil
2 tablespoons butter
1/2 pound lean veal trimmings for stew, cubed
2 thick loin veal chops, 1 1/2 pounds each
10 garlic cloves, unpeeled
Sea salt and freshly ground pepper to taste
1 1/2 cups homemade chicken broth, or canned
4 ounces pancetta, cut into 4 pieces
1 pound small new potatoes, halved
4 large carrots, 1/2 pound, peeled and trimmed, halved on a bias
20 pearl onions, peeled
4 stalks salsify, peeled and cut into the same length as carrots
4 scallions, cleaned and trimmed
8 asparagus spears, peeled and trimmed
2 cups sugar snap peas, trimmed
1 bunch broccoli rabe, hard stems removed

Steps:

  • In a heavy skillet large enough to hold the veal chops in one layer, add 2 tablespoons of olive oil and 1 tablespoon butter. Add the veal trimmings. Over medium-high heat, brown for 5 minutes, stirring. Add the veal chops and garlic. Season well with sea salt and pepper. Cook the veal chops for about 10 minutes a side, moving the chops around the pan periodically. Remove the veal chops, leaving the garlic and the veal trimming in the pan. Drain all fat from the skillet.
  • Add the chicken broth to the pan. Deglaze over high heat, reducing by half. Check seasonings. Return the veal chops to the pan with any of their accumulated juices. Remove from the heat, and keep warm.
  • Meanwhile, in a large skillet, preferably cast iron, brown the pancetta over medium heat in 2 tablespoons olive oil. Cook for 2 minutes, stirring, and add the potatoes, carrots, onions, salsify and scallions. Reduce heat to medium-low. Cook, stirring, for 30 minutes.
  • Bring 4 cups of salted water to a boil. Add the asparagus, sugar snap peas and broccoli rabe. Return to a boil, and cook for 1 minute. Drain well.
  • Add remaining butter to the vegetable skillet. Add the drained vegetables. Check for seasonings.
  • Slice the veal thinly and serve with vegetables and reduced pan juices. Include garlic cloves if desired.

Pat the chops dry. Dip the chops in the flour and shake off the excess. Add the chops to the skillet and brown them about 3 minutes. Turn the chops over with tongs and brown on the other side, about 2 minutes. 3 Scatter the onion, carrot, pancetta, sage, and rosemary around the chops. Cook until the vegetables are softened, about 5 minutes. 4 Add the wine and broth and bring to a simmer. Reduce the heat to low. Cover and cook 1 hour, turning the chops occasionally, until the veal is very tender when pierced with a fork. Add a little water if the sauce becomes too thick. Serve hot.
