2 1/2 pounds yellow onions, halved, and sliced 1/4-inch thick (8 cups)
1/4 pound unsalted butter
1 bay leaf
1/2 cup medium-dry sherry
1/2 cup brandy or Cognac
1 1/2 cups good dry white wine
4 cups beef stock
4 cups veal stock
1 tablespoon kosher salt
1/2 teaspoon freshly ground white pepper
Freshly grated Parmesan

Steps:

  • In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes.
  • Add the beef and veal stocks plus salt and pepper. Bring to a boil, then simmer uncovered for 20 minutes. Remove the bay leaf, taste for salt and pepper, and serve hot with grated Parmesan.

5 tablespoons olive oil, divided
1 tablespoon butter
8 cups thinly sliced onions (about 3 pounds)
3 garlic cloves, minced
1/2 cup port wine
2 cartons (32 ounces each) beef broth
1/2 teaspoon pepper
1/4 teaspoon salt
24 slices French bread baguette (1/2 inch thick)
2 large garlic cloves, peeled and halved
3/4 cup shredded Gruyere or Swiss cheese

Steps:

  • In a Dutch oven, heat 2 tablespoons oil and butter over medium heat. Add onions; cook and stir until softened, 10-13 minutes. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes. Add minced garlic; cook 2 minutes longer., Stir in wine. Bring to a boil; cook until liquid is reduced by half. Add broth, pepper and salt; return to a boil. Reduce heat. Simmer, covered, stirring occasionally, for 1 hour. , Meanwhile, preheat oven to 400°. Place baguette slices on a baking sheet; brush both sides with remaining 3 tablespoons oil. Bake until toasted, 3-5 minutes on each side. Rub toasts with halved garlic. , To serve, place twelve 8-oz. broiler-safe bowls or ramekins on baking sheets; place 2 toasts in each. Ladle with soup; top with cheese. Broil 4 in. from heat until cheese is melted.

7 slices French or Italian-style bread

Steps:

  • Place sliced onions and butter into slow cooker, and mix until onions are thoroughly coated. Stir in bread and chicken broth.
  • Cover, and cook on LOW for 10 to 18 hours or on HIGH 4 to 5 hours, stirring occasionally. Stir well during last hour.

6 tablespoons peanut oil
3 pounds onions, peeled, halved vertically through the root, and thinly sliced
1 tablespoon fine sea salt
4 tablespoons all-purpose flour
2 cups chicken stock
2/3 cup dry white wine, such as Sancerre
1 1/2 teaspoons freshly ground white pepper
Several sprigs fresh thyme, wrapped in cheesecloth
Several fresh or dried bay leaves
8 thin slices baguette, toasted
1 pound Swiss Gruyere, freshly grated

Steps:

  • In a 10-quart stockpot, melt the butter over low heat. Add the oil, onions, and salt, and stir to coat the onions. Cook, covered, over low heat, stirring occasionally so the onions do not scorch, just until the onions are soft but still pale, about 15 minutes.
  • Sprinkle the flour over the onions and stir to coat the onions. Immediately add the stock, wine, the white pepper, thyme sprigs, and bay leaves. Bring just to a boil. Immediately reduce the heat to low. Simmer, partially covered, for 30 minutes. Taste for seasoning. (The soup can be prepared up to this point 1 day in advance. Refrigerate in a covered container. Reheat gently at serving time.)
  • Preheat the broiler.
  • Ladle the soup into individual ovenproof soup bowls. Top each serving with a slice of toasted baguette. Cover the bread with a thick coating of grated Gruyere. Place under the broiler. As soon as the cheese begins to bubble, serve the soup.

1 cup white wine
1/2 cup sherry wine, plus
3 tablespoons sherry wine
10 tablespoons butter
1 teaspoon sugar
3 large yellow onions, thinly sliced
kosher salt
fresh ground black pepper
6 sprigs flat leaf parsley
6 sprigs fresh thyme
2 bay leaves
2 quarts beef broth or 2 quarts stock
baguette
2 garlic cloves, smashed
6 cups grated gruyere cheese
2 cups finely grated parmigiano-reggiano cheese

Steps:

  • Hear oven to 425°F.
  • Combine wine, 1/2 cup of the sherry, 8 tablespoons of butter, sugar, onions, and salt and pepper in a 9x13-inch casserole dish and braise, uncovered, stirring occasionally, until the onions just begin to brown, 40-45 minutes. Remove casserole from oven, cover with foil, and continuing braising in oven, about 1 hour. Keep onions warm.
  • Meanwhile, tie parsley, thyme, and bay leaves together with kitchen twine to make a bouquet garni. Put bouquet garni and broth into a pot and bring to a boil. Reduce heat to medium low and simmer, partially covered, for 30 minutes. Remove and discard bouquet garni. Stir in remaining sherry and cook for 5 minutes more.
  • WHile the broth simmers, spread the baguette slices with the remaining butter. Toast in a skillet over medium heat, turning once, until golden, 5-7 minutes. Rub slices generously with garlic and set aside. Discard any remaining garlic.
  • Heat broiler with rack 6" from element. Arrange 6 heatproof bowls on a foil lined baking sheet, divide onion and broth between bowls, and stir together. Place 2 baguette slices in each bowl. Top each with about 1 cup of gruyere cheese and 1/3 cup of parmigiano. Broil until cheese are browned and bubbly, 3-5 minutes. Serve immediately.

5 ¼ cups vegetable broth, divided
4 onions, sliced
⅛ teaspoon white sugar
2 tablespoons all-purpose flour
½ cup dry white wine
1 bay leaf
½ teaspoon ground thyme
½ teaspoon ground black pepper
1 tablespoon brandy
4 slices French bread, toasted
1 clove garlic, halved
2 tablespoons grated fat-free Parmesan cheese

Steps:

  • In a large non-stick saucepan, heat 1/4 cup vegetable broth. Stir in the onion and cook over medium heat until golden, 15 minutes.
  • Stir in the sugar and flour. Pour in the remaining 5 cups vegetable broth and the wine. Stir in the bay leaf, thyme and black pepper. Bring to a boil and let boil 8 minutes, stirring constantly; then reduce heat, partly cover, and simmer 30 minutes.
  • Preheat oven broiler.
  • Remove from heat, remove bay leaf and stir in brandy. Rub garlic clove over toast. Ladle the soup into 4 ovenproof bowls and float a piece of toast on top of each bowl. Sprinkle with the Parmesan.
  • Place bowls under broiler until cheese melts.

  • Place butter and oil in a medium pot over medium heat. When butter is melted add onions, stirring to coat in the butter mixture. Place a lid over the top of the pot and let the onions simmer for about 15 minutes, until onions are opaque and softened.
  • When 15 minutes is up, remove the lid and let the onions saute in the pot. You cant turn the heat up just a bit to help them caramelize. Let them cook for another 20-30 minutes. Be sure to continue stirring to scrape up all of the brown bits. If pot becomes dry add a little more oil to help prevent the onions from frying in the pot. Season with salt and pepper.
  • Once onions are caramelized add garlic and saute for a minute or two to release the flavors. Next, add brandy or cognac to the pot and let the onions deglaze. After about 5 minutes or so add the broth, bay leaf and, thyme to your pot. Bring to a boil and then cover and reduce heat to low. Let the soup simmer for 15 minutes.
  • While soup is simmering place bread slices on a cookie sheet. Sprinkle each slice with parmesan cheese and place under the broiler until the bread is toasty brown and cheese is melted. Remove from the oven and place each slice in an oven proof bowl. Note: of the slices don't fit break them in half.
