Brazilian Homemade Peanut Brittle (Pé de Moleque) image

Brazilian homemade peanut brittle is similar to the American peanut brittle recipe, except it is nuttier and more buttery. The addition of baking soda helps to crack it nicely even when it is made in hot and humid weather.

11 tablespoons unsalted butter
¾ cup sugar
1 teaspoon salt
½ cup light corn syrup
2½ cups unsalted dry roasted peanuts (whole and/or halved)
1 teaspoon pure vanilla extract
1 teaspoon baking soda

Steps:

  • Grease the bottom of a large baking sheet with non-stick cooking spray or butter. Set aside.
  • Place the butter, sugar, salt, and light corn syrup in a large non-stick saucepan. Cook over medium heat (large burner), stirring slowly and constantly with a wooden spoon for about 3 minutes.
  • As soon as the butter is completely melted and the mixture reaches a pale yellow color, add the peanuts and reduce the heat to medium-low.
  • Cook for 13-15 minutes, stirring constantly or until caramel has thickened and peanuts stick onto each other -- as opposed to falling immediately off the lifted wooden spoon.
  • Remove mixture from heat and stir in both the vanilla and baking soda until obtaining a homogeneous mixture. Pour the mixture immediately onto the greased baking sheet.
  • Place a sheet of parchment paper on top and spread the brittle thin using a rolling pin. Be careful to not get burned. Let the peanut brittle cool completely at room temperature before breaking into 2-inch pieces with your hands. Enjoy!

This sweet and salty peanut brittle has the perfect crunch and sheen. With a little patience, you'll have a delicious brittle to serve to party guests or as an edible gift around the holidays.

Yield 8 to 10 servings; makes about 20 pieces

Number Of Ingredients 6

Nonstick cooking spray
2 cups sugar
1/2 cup light corn syrup
6 tablespoons unsalted butter, cubed
1/2 teaspoon baking soda
1 1/2 cups roasted salted peanuts

Steps:

  • Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
  • Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
  • Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.
