1/4 pound unsalted butter
1 1/2 cups chopped yellow onion (1 large)
1 cup chopped fennel
1/2 cup all-purpose flour
3 cups fish stock or clam juice
1/2 pound large shrimp, peeled and deveined
1/2 pound sea scallops, sliced in half horizontally
1 tablespoon Pernod
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
3 tablespoons heavy cream
3/4 pound cooked fresh lobster meat
1 1/2 cups frozen peas (not "baby" peas)
1 1/2 cups frozen small whole onions
1/2 cup minced flat-leaf parsley
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 pound cold unsalted butter, diced
1/4 to 1/3 cup ice water
1 egg, beaten with 1 tablespoon water or heavy cream, for egg wash

Steps:

  • Melt the butter in a large saute pan over medium heat. Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent. Add the flour and cook over low heat for 1 more minute, stirring occasionally.
  • Meanwhile, bring the stock to a simmer in a large saucepan. Add the shrimp and scallops and cook for 2 minutes, just until firm. Remove the seafood to a large bowl with a slotted spoon, reserving the stock.
  • When the flour is cooked in the onion and fennel mixture, slowly add the stock, the Pernod, salt, and pepper and simmer for 3 minutes. Stir in the heavy cream.
  • Cut the lobster meat into medium-size cubes and add it to the onion and fennel mixture with the shrimp and scallops. Add the frozen peas, frozen onions, and parsley and pour the mixture into a 9 by 13 by 2 baking dish.
  • For the pastry, mix the flour, salt, and baking powder in a food processor fitted with a steel blade. Add the butter and pulse 10 times, until the butter is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough on a floured surface and knead quickly into a ball. Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
  • Meanwhile, preheat the oven to 375 degrees.
  • Roll the dough out to fit the baking dish with about 1/4-inch overlap. Use the egg wash to paint the outside rim of the dish. Place the dough on the filled baking dish and press it lightly to adhere to egg wash. Brush the dough with egg wash. Make 3 slashes in the top to allow the steam to escape. Place the dish on a sheet pan lined with parchment paper and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

1 cup shredded Swiss cheese (4 oz)
3/4 cup Original Bisquick™ mix
1 1/4 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer shrimp, onions, basil and cheese in pie plate.
  • In medium bowl, stir remaining ingredients until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.

4 cups flour
1 tablespoon butter, at room temperature
1 cup shortening (Crisco)
2 eggs
2 teaspoons salt
1 1/2 cups cold water
1 lb shrimp
1 tablespoon oil
1 small onion, finely chopped (about 1/4 cup)
1 clove garlic, minced
1 bay leaf
2 tablespoons tomato paste
salt and pepper
3 tablespoons flour
1/4 cup cooked peas
8 pitted green olives, , chopped
cayenne pepper
1 egg, beaten
1 pinch salt
1 lb chicken (breast or thighs)
1 clove garlic
1/2 small onion
1 bay leaf

Steps:

  • Make the dough.
  • Place the flour in a large mixing bowl and make a well in the center.
  • Place the butter, shortening, eggs, salt, and 1 cup water in the well.
  • Using one hand to mix, squeeze these ingredients through your fingers to make a paste.
  • Gradually work in the flour, squeezing the dough between your fingers to mix it.
  • Add water as necessary: the dough should be quite soft.
  • Let the dough rest for 30 minutes.
  • Prepare the filling.
  • Peel and devein the shrimp (my favorite yucky part...).
  • Heat the oil in a large saucepan.
  • Sauté the onion and garlic over medium heat for 2-3 minutes, or until soft but not brown.
  • Add the shrimp, bay leaf, tomato paste, salt, and pepper, plus water to cover.
  • Bring to a boil, reduce heat, and simmer for 10 minutes, or until the shrimp is cooked.
  • Strain the shrimp, reserving the broth.
  • Finely chop the shrimp by hand or in the food processor.
  • Stir in the flour, peas, and olives.
  • Stir in 3-4 tablespoons of the reserved broth: the filling should be moist but not runny.
  • Add enough cayenne to give the shrimp mixture a little bite.
  • Pinch off cherry-sized pieces of dough and use them to line the tartlet molds.
  • Push the dough in with your thumb.
  • The dough should just reach over the top of the mold.
  • Place a spoonful of filling in each crust.
  • Roll out the remaining dough and cut out tops for the empadinhas.
  • Try to capture an air bubble when you place the top over the filling: this is what makes the pie light.
  • Seal the tartlets by pinching together the top and bottom crust.
  • Note: the empadinhas can be prepared ahead to this stage and frozen.
  • Preheat the oven to 375° F.
  • Brush the tops of the empadinhas with egg glaze.
  • Bake for 30 minutes, or until golden brown.
  • Unmold and serve.
  • If you're lazy like me, try this big pie version, called empadão: make the filling and use Pillsbury pie crusts, one for the bottom and one for the top.
  • Fantastic dinner stuff!
  • To make chicken empadinhas-------------.
  • Cook the chicken and prepare the broth.
  • Place the chicken in a small saucepan with the garlic, onion, bay leaf and water to cover.
  • Bring to a boil, reduce the heat, and gently simmer for 20 minutes, or until the chicken is tender.
  • Drain the chicken, reserving the broth.
  • When the chicken is cool enough to handle, remove the skin and bones and finely shred the meat.
  • Discard the onion, garlic, and bay leaf.
  • Heat the oil in a large saucepan.
  • Sauté the onion and garlic over medium heat for 2-3 minutes, or until soft but not brown.
  • Add the chicken, bay leaf, tomato paste, salt, and pepper, plus water to cover.
  • Bring to a boil, reduce heat, and simmer for 5 minutes.
  • Procede as in step 3 above, stirring in the flour, peas, and olives.
  • And so on.

I suppose you could cheat on this crust, but it is very easy to make, it's simply pressed into a deep-dish pie plate, no rollling out of the dough is needed. Judging from the other reviews on myrecipes.com, I advise to use a glass pie pan. It also might take more than 40 minutes to set up. Like a quiche, I can imagine adding onions, shrooms, broccoli, etc..., possibilites are endless. This also warms up well for lunch the next day. Adapted from Cooking Light, June 2005. 1 1/4 cups all-purpose flour
1/4 cup semolina or 1/4 cup pasta flour
2 teaspoons sugar
1/4 teaspoon salt
2 tablespoons butter, chilled and cut into small pieces
1 tablespoon vegetable shortening
1/4 cup ice water
1/2 teaspoon cider vinegar
cooking spray
12 ounces uncooked large shrimp, peeled, deveined, and chopped
1/4 cup fat free cream cheese, softened
1 egg
2 teaspoons all-purpose flour
1 cup fat-free evaporated milk
1/2 cup havarti cheese or 1/2 cup Fontina cheese, shredded
1 1/2 tablespoons chopped fresh dill
1/8 teaspoon salt

Steps:

  • Preheat oven to 375°.
  • To prepare pastry, lightly spoon 1 1/4 cups all-purpose flour and semolina flour into dry measuring cups; level with a knife.
  • Combine flours, sugar, and 1/4 teaspoon salt in a medium bowl; cut in butter and shortening with a pastry blender or 2 knives until the mixture resembles coarse meal.
  • Combine ice water and vinegar in a small bowl.
  • Add water mixture to flour mixture; toss with a fork until mixture is well combined (mixture will be crumbly and will not form a ball).
  • Press mixture into bottom and up sides of a 9-inch deep-dish pie plate coated with cooking spray.
  • Bake at 375° for 5 minutes.
  • Remove from oven; cool on a wire rack.
  • To prepare filling:
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  • Add the shrimp; cook 1 minute or until shrimp turn pink. Remove from heat.
  • Combine cream cheese and egg in a medium bowl; beat with a mixer at medium speed until well blended.
  • Add 2 teaspoons flour; beat 1 more minute, beat in milk.
  • Add shrimp, Havarti cheese, dill, and 1/8 teaspoon salt, stirring well.
  • Pour shrimp mixture into prepared crust.
  • Bake at 375° for 40 minutes or until set.
  • Remove from oven; let stand 10 minutes before serving.

2 -3 tablespoons instant coffee
3 tablespoons powdered cocoa mix
2 5/8 cups milk
1 cup whipping cream
1 baked pie shell
1/4 cup sliced almonds

Steps:

  • In a saucepan, combine pudding, coffee, cocoa, and milk.
  • Cook over medium heat, stirring frequently, until mixture comes to a full boil.
  • Remove from heat and continue to stir frequently until cool.
  • Place plastic wrap directly onto pudding and chill in refrigerator for 1 hours.
  • Beat slightly.
  • Fold in whipping cream which has been beaten until stiff.
  • Pour into pie shell.
  • Garnish with sliced almonds.
  • Refrigerate until ready to use.

1 1/4 lbs large shrimp
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 garlic cloves, minced
1/4 cup fresh lemon juice
1 (14 ounce) can diced tomatoes, with juice
1 medium onion, finely chopped
1 green pepper, finely chopped
1 1/2 tablespoons oil
1/2 teaspoon cayenne
5 tablespoons coarsely chopped cilantro
1 cup coconut milk, well stirred
1 tablespoon palm oil, don't use another, just leave it out if you don't have it. Can be found in African markets

Steps:

  • Toss shrimp with garlic, 1/2 tsp salt and pepper and lemonjuice, chill for 20 minutes marinating time.
  • Puree tomatoes with juice in a blender til smooth.
  • cook onion and bell pepper in olive oil over moderately low heat.about 8-10 minutes. Add cayenne, tbs cilantro, remaining salt cook stirring one minute.
  • Add tomato puree and simmer for about 15 minutes, until mixture is very thick.
  • Stir in coconut oil and then bring to a boil, add shrimp mixture and cook 3 to 5 minutes until pink.
  • Stir in dende oil and remaining cilantro. Season to taste.

Steps:

  • Toss shrimp with black pepper, 1/2 teaspoon salt, garlic, and lemon juice and marinate, covered and chilled, 20 minutes.
  • Purée tomatoes with juice in a blender until smooth.
  • Cook onion and bell pepper in olive oil in a 12-inch heavy skillet over moderately low heat, stirring, until softened, 8 to 10 minutes.
