Steps:
- Melt the butter in a large saute pan over medium heat. Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent. Add the flour and cook over low heat for 1 more minute, stirring occasionally.
- Meanwhile, bring the stock to a simmer in a large saucepan. Add the shrimp and scallops and cook for 2 minutes, just until firm. Remove the seafood to a large bowl with a slotted spoon, reserving the stock.
- When the flour is cooked in the onion and fennel mixture, slowly add the stock, the Pernod, salt, and pepper and simmer for 3 minutes. Stir in the heavy cream.
- Cut the lobster meat into medium-size cubes and add it to the onion and fennel mixture with the shrimp and scallops. Add the frozen peas, frozen onions, and parsley and pour the mixture into a 9 by 13 by 2 baking dish.
- For the pastry, mix the flour, salt, and baking powder in a food processor fitted with a steel blade. Add the butter and pulse 10 times, until the butter is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough on a floured surface and knead quickly into a ball. Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
- Meanwhile, preheat the oven to 375 degrees.
- Roll the dough out to fit the baking dish with about 1/4-inch overlap. Use the egg wash to paint the outside rim of the dish. Place the dough on the filled baking dish and press it lightly to adhere to egg wash. Brush the dough with egg wash. Make 3 slashes in the top to allow the steam to escape. Place the dish on a sheet pan lined with parchment paper and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

Steps:
- Make the dough.
- Place the flour in a large mixing bowl and make a well in the center.
- Place the butter, shortening, eggs, salt, and 1 cup water in the well.
- Using one hand to mix, squeeze these ingredients through your fingers to make a paste.
- Gradually work in the flour, squeezing the dough between your fingers to mix it.
- Add water as necessary: the dough should be quite soft.
- Let the dough rest for 30 minutes.
- Prepare the filling.
- Peel and devein the shrimp (my favorite yucky part...).
- Heat the oil in a large saucepan.
- Sauté the onion and garlic over medium heat for 2-3 minutes, or until soft but not brown.
- Add the shrimp, bay leaf, tomato paste, salt, and pepper, plus water to cover.
- Bring to a boil, reduce heat, and simmer for 10 minutes, or until the shrimp is cooked.
- Strain the shrimp, reserving the broth.
- Finely chop the shrimp by hand or in the food processor.
- Stir in the flour, peas, and olives.
- Stir in 3-4 tablespoons of the reserved broth: the filling should be moist but not runny.
- Add enough cayenne to give the shrimp mixture a little bite.
- Pinch off cherry-sized pieces of dough and use them to line the tartlet molds.
- Push the dough in with your thumb.
- The dough should just reach over the top of the mold.
- Place a spoonful of filling in each crust.
- Roll out the remaining dough and cut out tops for the empadinhas.
- Try to capture an air bubble when you place the top over the filling: this is what makes the pie light.
- Seal the tartlets by pinching together the top and bottom crust.
- Note: the empadinhas can be prepared ahead to this stage and frozen.
- Preheat the oven to 375° F.
- Brush the tops of the empadinhas with egg glaze.
- Bake for 30 minutes, or until golden brown.
- Unmold and serve.
- If you're lazy like me, try this big pie version, called empadão: make the filling and use Pillsbury pie crusts, one for the bottom and one for the top.
- Fantastic dinner stuff!
- To make chicken empadinhas-------------.
- Cook the chicken and prepare the broth.
- Place the chicken in a small saucepan with the garlic, onion, bay leaf and water to cover.
- Bring to a boil, reduce the heat, and gently simmer for 20 minutes, or until the chicken is tender.
- Drain the chicken, reserving the broth.
- When the chicken is cool enough to handle, remove the skin and bones and finely shred the meat.
- Discard the onion, garlic, and bay leaf.
- Heat the oil in a large saucepan.
- Sauté the onion and garlic over medium heat for 2-3 minutes, or until soft but not brown.
- Add the chicken, bay leaf, tomato paste, salt, and pepper, plus water to cover.
- Bring to a boil, reduce heat, and simmer for 5 minutes.
- Procede as in step 3 above, stirring in the flour, peas, and olives.
- And so on.

SHRIMP PIE (SCANDANAVIAN)
I suppose you could cheat on this crust, but it is very easy to make, it's simply pressed into a deep-dish pie plate, no rollling out of the dough is needed. Judging from the other reviews on myrecipes.com, I advise to use a glass pie pan. It also might take more than 40 minutes to set up. Like a quiche, I can imagine adding onions, shrooms, broccoli, etc..., possibilites are endless. This also warms up well for lunch the next day. Adapted from Cooking Light, June 2005. - Prepare the pot pies dough: Place the flour, salt, and sugar in a bowl in the bowl of an electric mixer fitted with the paddle attachment. Beat in the butter at low speed until mixture is well combined yet lumpy. Add the egg and beat until just incorporated. Add the iced water and beat until obtaining an homogeneous mixture. You might need to stop the electric mixer a few times to scrape together dough from both bottom and sides of the bowl.
- Place the dough onto a floured surface, form a ball, and then press into a flat disk. Wrap in plastic wrap and refrigerate for about 1 hour.
- Meanwhile, prepare the pot pies filling. In a medium stainless steel saucepan, bring the chicken stock or broth to a boil over high heat. Reduce the heat to low and stir in tomato paste, whisking to dissolve.
- In a different saucepan, melt the butter over low heat, add the flour, and stir well to make a roux. Add a little bit of the warm stock, whisking well until combined. Add the remaining stock and continue to whisk well constantly, over medium heat, until it thickens. Season with salt and pepper to taste and set aside.
