Ham and Cheese Breakfast Quiche image

Here's one great idea for what to do with that leftover ham!! My picky eaters loved it and it is easy to make!

2 (12 ounce) packages frozen hash brown potatoes
⅓ cup butter, melted
1 cup cooked diced ham
1 cup shredded Monterey Jack cheese
2 eggs
½ cup heavy whipping cream

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Squeeze any excess moisture from the potatoes and combine them with the melted butter or margarine in a small bowl. Press this mixture into the bottom and sides of an ungreased 10 inch pie pan.
  • Bake at 425 degrees F (220 degrees C) for 25 minutes.
  • Remove pan from oven and arrange the ham and cheese evenly over the potatoes. In a separate small bowl, beat together the eggs and the cream. Pour this over the ham and cheese.
  • Return pan to oven and bake for 425 degrees F (220 degrees C) for 30 minutes, or until the custard has completely set.

1 9-inch pie shell
1 1/2 cups grated swiss cheese
1/4 cup chopped green pepper (optional)
2 tablespoons chopped onions
4 eggs, slightly beaten
1 cup light cream

Steps:

  • Cook sausage until done.
  • Crumble, and then drain.
  • Mix cheese and sausage.
  • Sprinkle in pie shell.
  • Lightly beat eggs in a bowl.
  • Combine remaining ingredients and add to egg mixture.
  • Pour in shell.
  • Bake at 375 degrees for 40-45 minutes .
  • Cool on rack 10 minutes.

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. , In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water

1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream

1/4 teaspoon sugar

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. 1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.

Wisconsin Breakfast Cheese Pie image

In 1980 while living in Western NY I took 5 teenagers to Green Lake, WI for Camp. We had this Cheese Pie in the dining hall twice while we were there. When I returned a couple of years later with a group on a mission trip I scoured local shops for a cookbook with the recipe. It has become a favorite of our brunch dishes.

FILLING
2 lb ricotta cheese
2 large eggs
1/4 tsp kosher salt
1/4 tsp lemon juice, fresh
1/2 tsp lemon zest
BATTER
1 c all purpose flour
1/2 c sugar
1 Tbsp baking powder
1/4 tsp kosher salt
1 c butter, unsalted, melted
2 large egg
1/4 c milk
1 tsp pure vanilla extract

Steps:

  • 1. In a large mixing bowl, combine all the filling ingredients and blend well. Set aside.
  • 2. Preheat oven to 300-degrees. In a large bowl combine the flour, sugar, baking powder, and salt; mix well. Add the melted butter, eggs, milk and vanilla and mix lightly but thoroughly by hand.
  • 3. Spoon half of the batter into 2 greased 9-inch pie pans. Top with filling, spreading out with a spoon, but don't mix in.
  • 4. Drop remaining batter on top of the filling by small spoonfuls, spreading out gently to cover filling as thoroughly as possible. (It will all come together during baking.)
  • 5. Bake for 1 1/2 hours. Cut into wedges and serve with fresh fruit sauce and bacon.
  • 6. I have served this with stewed rhubarb, applesauce and a strawberry/raspberry sauce. It depends on the season and what I have on hand.
