For those wanting a bit more spice to start the day, there's nothing better then perfectly portioned tasty tortilla cups! These cups are packed with the wonderful flavors of eggs, cilantro, red bell pepper and Mexican cheese. For the added kick, Johnsonville Hot & Spicy Breakfast Sausage Links are used to give you the needed heat to wake up your taste buds and get you going. Serve with your favorite salsa for an added bonus to your morning fiesta.

1 (12 ounce) package Johnsonville Hot & Spicy Breakfast Sausage Links
9 flour tortillas (6-inches)
2 cups shredded Mexican blend cheese, divided
6 eggs, beaten
1/4 cup finely chopped red sweet bell pepper
1/4 cup finely chopped fresh cilantro
1/8 teaspoon salt
1/8 teaspoon pepper
salsa

Steps:

  • Cook sausages according to package directions; cut into ¼-inch slices; set aside.
  • On a piece of waxed paper, spray each tortilla on both sides with vegetable cooking spray. Cut tortillas into fourths.
  • Arrange three tortilla pieces (pointed end down) into muffin cups that have been sprayed with cooking spray. Overlap edges of tortilla pieces and press gently into muffin cups. Rounded edges will extend above muffin cups.
  • Divide 1 cup of cheese evenly into tortilla-lined muffin cups. Top with sausage slices and remaining cheese.
  • In a bowl, combine eggs, milk, bell pepper, cilantro, salt and pepper.
  • Carefully pour into tortilla cups.
  • Bake at 350ºF for 18-20 minutes or until eggs are set.
  • Carefully remove from muffin cups. Serve hot with salsa.

8 corn tortillas

Steps:

  • Preheat oven to 400 degrees. Invert 4 small ovenproof bowls or ramekins on a rimmed baking sheet and lightly coat with cooking spray. Coat both sides of 4 tortillas with cooking spray and drape tortillas over bowls. Bake until golden and crisp, 12 minutes, checking after 5 minutes to make sure tortillas are centered on bowls (if they slide off, put them back on bowls). Repeat with 4 more tortillas.

This recipe is called 'Breakfast Tortillas' but we eat them at dinner time. I put them together in the morning and refrigerate all day. I really like the combinations of flavors in this dish. (Prep time includes fridge time.)

2 cups cooked ham
1/2 cup onion, chopped
6 flour tortillas (8-inch)
2 cups cheese, shredded
1 tablespoon flour
2 cups milk
6 eggs, beaten
1 dash salt

Steps:

  • Mix together ham and onion, place about 1/3 cup of mixture in the center of each tortilla.
  • Sprinkle with cheese.
  • Roll and place seam side down in a greased 13x9-inch baking pan.
  • In another bowl, mix flour, milk, eggs and salt until smooth.
  • Pour over top of the tortillas and cover and refrigerate overnight.
  • Take casserole out of fridge 30 minutes BEFORE baking at 350 degrees for 25 minutes.
  • Uncover and bake another 10 minutes.
  • Sprinkle with remaining cheese and return to oven until melted.
  • Let stand for 10 minutes before serving.

¼ cup sugar
1 tablespoon cinnamon
2 tablespoons butter, melted
3 10-inch flour tortillas
1 cup heavy cream
1 teaspoon vanilla extract
2 tablespoons sugar
fresh fruit

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • In a small bowl, combine the sugar and cinnamon. Butter each side of the tortillas, sprinkle with cinnamon sugar, and cut into even quarters, making 12 pieces. Place 2 pieces in 6 cups of a muffin tin and push down so that they create a cup shape. Bake for 13-15 minutes, or until crisp. Remove the cups from the oven and allow to cool in the tin.
  • In a large bowl, beat together heavy cream, vanilla extract, and sugar with an electric hand mixer until stiff peaks form.
  • Assemble the cups by placing a spoonful of whipped cream in each toasted cup. Top the whipped cream with fresh fruit of your choice.
  • Enjoy!

3 large flour tortillas
¾ cup vegetarian refried beans
¾ cup egg, scrambled
¼ cup shredded mexican cheese blend
3 cherry tomatoes, quartered
fresh cilantro leaf, for garnish

Steps:

  • Preheat the oven to 375ºF (190ºC). Generously coat a 12-cup muffin tin with nonstick spray.
  • Stack the tortillas and cut off the edges so the tortillas are square. Then, quarter the squares so you have 12 small tortilla pieces.
  • Press a tortilla square into each cup of the prepared muffin tin.
  • Fill each cup with 1 tablespoon of refried beans, 1 tablespoon of scrambled eggs, and 1 teaspoon of cheese and top with a cherry tomato quarter.
  • Bake for about 10 minutes, until the edges of the tortillas are golden brown and the cheese has melted.
  • Garnish with cilantro.
  • Enjoy!
