SPAM MUSUBI
Spam Musubi is a popular snack in Hawaii. It is a type of sushi that has marinated cooked spam in sushi. I got this recipe from a local Hawaiian friend when I was living there.

Steps:
- Soak uncooked rice for 4 hours; drain and rinse.
- In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Stir in rice vinegar, and set aside to cool.
- In a separate bowl, stir together soy sauce, oyster sauce, and sugar until sugar is completely dissolved. Slice luncheon meat lengthwise into 10 slices, or to desired thickness, and marinate in sauce for 5 minutes.
- In a large skillet, heat oil over medium high heat. Cook slices for 2 minutes per side, or until lightly browned. Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press rice tightly inside. Top with a slice of luncheon meat, and remove press. Wrap nori around rice mold, sealing edges with a small amount of water. (Rice may also be formed by hand in the shape of the meat slices, 1 inch thick.) Musubi may be served warm or chilled.

Steps:
- Wrap the sumaki with plastic wrap. This will prevent rice from sticking on to the surface of the sumaki. Place the half sheet of nori horizontally. Lightly wet your hands, and cover the nori with layer of rice. TIP: It is better to make a narrow rice ball the length of the nori first, and place the rice ball on the bottom edge and spread the rice by pushing the rice towards the upper portion of the nori.
- Sprinkle sesame seeds as desired. After the rice is evenly spread out, flip the nori, so that the rice side is facing the sumaki, and the nori side is facing up. Place your ingredients in the bottom portion of the nori (not too close to the bottom edge). TIP: Mix crab meat with mayo to make a dressing. For imitation crab, dice up the imitation crab into smaller pieces first before making a dressing.
- Using the sumaki, fold the bottom portion inwards so that it covers the ingredients. It is ideal to have about an inch or inch and half of nori left over (you do not want to over stuff the roll).
- Apply pressure on the sumaki so that the roll is tight, and continue to wrap the remaining portion. The inside ingredients should be wrapped about 1.5 times, rather than just once.
- When cutting the roll, place the roll out of the sumaki onto a cutting board. Moisten the knife with a wet towel, and cut it into halves first. Then, line up the two halves and cut it into 3 evenly spaced pieces so that you will get a total of 6 pieces from a single roll. TIP: When cutting a sushi roll, do not attempt to "chop" it by pressing hard. Rather begin with the front edge of the knife, and while pressing down, pull the knife backwards towards you, so that you are "slicing" it. It will prevent the roll of being squashed and give you a cleaner cut.
SPAM SUSHI MAKI ROLLS
Spam lovers unite! This was just an experimental dish, but it turned out pretty good. If you're in the mood for a fun and different dish... give this recipe a try! Don't knock it before you try it! =D This recipe is starting off assuming you have already fried the spam strips. *You can also use the reduced sodium Spam Lite version if you prefer.

Steps:
- Place sheet of nori on bamboo mat and align with edge nearest you.
- Using a moistened hand, spread about 3/4-1 cup of rice evenly over 5 x 8-inch area leaving 2 inches nori at the far end. Using a knife, spread a light layer of mayo on the rice surface. If adding wasabi, spread a light layer now.
- Arrange cucumber stick(s) 1 inch from edge nearest you, followed by Spam strip(s). Lift mat with thumbs; keep cucumber and meat in place with fingers, and roll mat over meat and away from you.
- When mat touches the rice, lift mat and continue to roll as you would for a jelly roll. Roll again in mat and apply slight pressure to tighten roll.
- To serve, cut each roll into eight pieces. Arrange sushi slices on platter, cut side up.
- I like to just sprinkle a dash of Maggi seasoning sauce onto each sushi, rather than dipping the entire thing in soy sauce, but the choice is yours!
- Enjoy!

- Japanese Cucumbers. Cucumbers are perhaps the most common filling used in sushi that lends a crunchy feel to it. I prefer Japanese cucumbers because they have fewer seeds.
- Ripe Avocado. Avocados are an excellent filling that gives an amazing flavor to sushi rolls ranging from the California rolls to the shrimp tempura rolls.
- Cucumbers and Avocado. Another fun and easy vegan filling for your sushi is a mix of cucumbers and avocado. You can make thin or thick strips of both based on your preference (following the cutting technique mentioned above).
- Carrots and Cucumbers. Carrots add beautiful color and texture to your sushi roll fillings. They are one of the easily available vegetables so just go for it.
- Sushi-grade raw Tuna or Salmon. Always make sure you buy sushi-grade raw fish from a trusted fishmonger or you can get frozen fish from my favorite website.
- Mango and Cucumber. Pick ripe but firm mango to make slices. The fruit not only adds an excellent flavor to the sushi but also makes it look colorful.
- Shrimp, Sriracha hot sauce, Mayonnaise, Masago. To try this filling, take 1lb of cooked or frozen deveined shrimp. You may use salad-sized shrimps, raw shrimps, full-size shrimps, or cooked shrimps.
- Spicy Crab and Masago. You will need imitation crab sticks, Sriracha hot sauce, Mayonnaise and Masago(optional). To prepare the filling, cut the crab sticks into half and peel out thin strips.
- Smoked Tofu. For this filling, use 1/4 lb. tofu drained and pressed for 15 minutes. Make thin slices of tofu and marinade with 1 tsp. canola oil, 1/2 tsp.
- Salmon, Avocado, Cheese. Get sushi-grade raw salmon from a trusted fish seller. Make slices of the raw fish and then cut out thin strips to use as fillings.

10 IRRESISTIBLE SUSHI ROLLS YOU’LL ONLY FIND IN AMERICA ...
From sheknows.com
- Philadelphia roll. Hard to believe that a roll with Philadelphia cream cheese was invented here, but this beauty made from cream cheese and smoked salmon was.
- Avocado, cream cheese and cucumber roll. Again, the cream cheese is a sign that this is an American roll. However, the addition of avocado, which is a distinctly Mexican ingredient, makes this roll another American gem.
- California roll. The California roll actually got its start (or at least its rise to stardom) in California. Though it’s very similar to rolls served in Japan, the California roll is thought to be from the U.S. and is one roll that is now very popular across the world.
- Barbecue beef rolls. Leave it to Guy Fieri to give us a barbecue beef and hot sauce roll.
- Spam rolls. Hailing from the Hawaiian Islands, itself a place where many cultures collide and produce wonderful food, the Spam sushi roll is a piece of dubious Americana.
- Teriyaki chicken rolls. Americans, in general, seem to have more of a squeamishness around raw fish than their Japanese counterparts. That’s why there’s a movement to include cooked items in our sushi.
- Buffalo chicken rolls. This same need to have cooked protein in the sushi sometimes goes to eleven with the addition of a very strong piece of American cooking: Buffalo wing sauce.
- Rolls covered in sauce. Actually, that’s a good segue. Americans love to drown their rolls in eel sauce, Sriracha, spicy mayo, kiwi sauce, etc. That’s an American tradition not found as much in Japan.
- American sports rolls. One will never find a roll celebrating the Kansas City Royals in many Japanese sushi restaurants.
- Pink Lady rolls. Last but not least, we end our list with a roll that’s both cream cheese-based and sweet. Yes, the Pink Lady roll (on the left) is a dessert roll filled with sweetened cream cheese that’s wrapped in rice and soy paper, then topped with chocolate and raspberry sauce.
