CHEF JOHN'S CHICKEN UNDER A BRICK



Chef John's Chicken Under a Brick image

You should use a big cast iron pan for this, but it will also work in a high-quality, heavy-duty stainless steel pan, or other oven-proof skillet. The key is to heat it very well before the chicken goes in. Other than that, there's really no way to screw it up, unless you under or overcook it, which won't happen, since you're going to check it with the thermometer.

1 (3 1/2) pound whole chicken, wings removed
salt and ground black pepper to taste
1 pinch herbes de Provence, or to taste
1 tablespoon vegetable oil, or as needed
2 heavy clay bricks, wrapped tightly in aluminum foil

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Use kitchen shears to cut down both sides of the backbone. Remove backbone and discard. Cut through breastbone from the inside until chicken folds out like a book and lays flat.
  • Season chicken all over with salt and black pepper, and sprinkle herbes de Provence on the inside. Let chicken sit for 20 to 30 minutes at room temperature; pat dry with paper towels. Brush skin-side of chicken with oil and season again with salt and black pepper.
  • Heat an oven-proof cast iron skillet over high heat until very hot, about 5 minutes. Place chicken, skin-side down, in hot skillet and place bricks evenly on top to weigh down chicken.
  • Roast chicken in the preheated oven for 25 minutes. Remove bricks, turn chicken over, and continue roasting until juices run clear and meat is no longer pink at the bone, 5 to 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Preheat the oven's broiler and broil the chicken until skin is crispy and golden, 1 to 3 minutes.

ROSEMARY BRICKED GRILLED CHICKEN

1 cup olive oil
1/4 cup fresh lemon juice
6 cloves garlic, finely chopped
2 tablespoons chopped fresh rosemary leaves
2 (3-pound) chickens, butterflied
Salt and freshly ground black pepper
Lemon wedges, for garnish

Steps:

  • Whisk together the oil, lemon juice, garlic and rosemary in a large baking dish. Add the chickens and turn to coat. Cover and marinate in the refrigerator for at least 1 hour, or up to 4 hours.
  • Preheat the grill to medium. Wrap 4 bricks in aluminum foil and set aside. Remove the chickens from the marinade, blot off excess oil, and season with salt and pepper on both sides. Place the chickens on the grill, skin-side down, and place 2 bricks on top of each chicken. Grill the chicken for 8 to 10 minutes, then turn over, and return the bricks to the chickens. Close the cover and continue cooking for 8 to 10 minutes or until cooked through. Let rest for 10 minutes and cut into quarters. Serve with lemon wedges.

It isn't easy to cook chicken so that its skin is crisp and its interior juicy. Grilling, roasting and sauteing all have their problems. But there is an effective and easy method for getting it right, using two ovenproof skillets. A split chicken is placed in one of them, skin side down. The other skillet goes on top as a weight, which helps retain moisture and insures thorough browning. A couple of clean rocks or bricks can be used instead of the second skillet. (If the weight of choice doesn't seem terribly pristine, it can be wrapped in foil.)

1 whole 3- to 4-pound chicken, trimmed of excess fat, rinsed, dried and split, backbone removed
1 tablespoon fresh minced rosemary or 1 teaspoon dried rosemary
Salt and freshly ground black pepper to taste
1 tablespoon peeled and coarsely chopped garlic
2 tablespoons extra virgin olive oil
2 sprigs fresh rosemary, optional
1 lemon, cut into quarters

Steps:

  • Place the chicken on a cutting board, skin side down, and using your hands, press down hard to make it as flat as possible. Mix together the rosemary leaves, salt, pepper, garlic and 1 tablespoon of the olive oil, and rub this all over the chicken. Tuck some of the mixture under the skin as well. If time permits, cover and marinate in the refrigerator for up to a day (even 20 minutes of marinating boosts the flavor).
  • When you are ready to cook, preheat the oven to 500 degrees. Preheat an ovenproof 12-inch skillet (preferably nonstick) over medium-high heat for about 3 minutes. Press rosemary sprigs, if using, into the skin side of the chicken. Put remaining olive oil in the pan and wait about 30 seconds for it to heat up.
  • Place the chicken in the skillet, skin side down, along with any remaining pieces of rosemary and garlic; weight it with another skillet or with one or two bricks or rocks, wrapped in aluminum foil. The idea is to flatten the chicken by applying weight evenly over its surface.
  • Cook over medium-high to high heat for 5 minutes, then transfer to the oven. Roast for 15 minutes more. Remove from the oven and remove the weights; turn the chicken over (it will now be skin side up) and roast 10 minutes more, or until done (large chickens may take an additional 5 minutes or so). Serve hot or at room temperature, with lemon wedges.

2 tablespoons canola oil
1 (3 to 4 pound) chicken, halved, backbone, rib cage, and thigh bones removed
Coarse salt and freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1/3 cup homemade or store-bought, low sodium chicken stock
Thinly sliced heirloom tomatoes, for serving

Steps:

  • Heat oil in a 10-inch skillet over high heat. Season chicken generously with salt and pepper; add chicken to skillet, skin side-down and place a 10-inch heavy-bottomed skillet on top of chicken. Place two heavy soup cans or a brick in second skillet to weigh down.
  • Reduce heat to medium and cook chicken until skin is golden brown and crisp, about 18 minutes. Remove top skillet and weights and turn chicken; pour off excess fat from skillet.
  • Squeeze lemon juice over chicken and add stock. Cook until an instant-read thermometer inserted into the chicken thigh registers 160 degrees, about 3 minutes.
  • Season tomatoes with salt and pepper and divide evenly between two plates. Place each chicken half on a plate and serve immediately with pan juices.

1 teaspoon olive oil
1 pinch salt and freshly ground black pepper to taste
heavy duty aluminum foil

Steps:

  • Place the chicken, breast side down, on a cutting board. Remove the backbone and 1 inch of the breast bone with kitchen shears. Remove the wing tips and any large pockets of fat near the tail. Flip the bird over and use the heal of your hand to flatten the chicken. Rub the skin with oil and lightly season with salt and pepper.
  • Cut 2 pieces of heavy duty aluminum to roughly 20 inches long each. Wrap each brick with foil, shiny-side out. Lightly oil the grill and add the bricks.
  • Lightly oil the grate of the grill and add the bricks. Preheat the grill to 400 degrees F (200 degrees C) and maintain the temperature until bricks are hot.
  • Turn off the middle burner and place the chicken over that area, flesh side down, on indirect heat. Place the bricks on the chicken and close the lid of the grill.
  • Grill for 40 minutes. Remove the bricks, turn the chicken, and continue grilling until the skin is crispy, 5 to 10 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove and let rest for 10 minutes.

3 chicken halves, breast and rib bones intact (1 1/2 to 1 3/4 pounds each)
Kosher salt and freshly ground pepper

1 tablespoon extra-virgin olive oil
1/2 tablespoon unsalted butter
5 to 6 sprigs thyme

Steps:

  • Partially debone the chicken halves, removing the wing, backbone and thighbone. Rinse and pat dry. Refrigerate, uncovered, at least 30 minutes to dry out the skin.
  • Season the chicken with salt and pepper on both sides. Heat a large nonstick skillet (preferably cast iron) over medium heat and add the oil and butter. Lay the chicken halves, skin-side down, in the skillet and scatter the thyme around them. Wrap a slightly smaller skillet with foil and place on top of the chicken. Set a large brick or 2 to 3 heavy cans in the skillet to weigh it down.
  • Cook the chicken 3 to 5 minutes, then remove the top skillet and check the skin; adjust the heat and rotate the pan as needed so the skin browns evenly. Replace the top skillet and continue to cook until the skin is golden and crisp and the chicken is cooked about three-quarters of the way through, 20 to 25 more minutes. Remove the top skillet and carefully flip the chicken. Cook, uncovered, until the chicken is cooked through, 8 to 10 more minutes. Transfer to a cutting board and let rest 5 minutes. Cut each piece in half to serve.

1 2 1/2-pound chicken, split in half as for broiling
4 thin slivers of garlic
6 small sprigs fresh rosemary
6 small sprigs fresh thyme
Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons lemon juice
1/2 cup, plus 6 tablespoons, olive oil
6 thin lemon slices, seeds removed
1 peeled garlic clove, thinly sliced
1/4 teaspoon finely minced rosemary leaves
1/4 teaspoon finely minced thyme leaves

Steps:

  • Cut off or have the backbone of the chicken cut off. Make a small incision through the flesh at the base of each chicken half. Push the leg end of each chicken half through this incision to hold the leg in place. Place each chicken half skin-side up on a flat surface and pound all over forcefully with a flat mallet or the bottom of a clean heavy skillet.
  • Turn the chicken halves skin-side down, and with a small paring knife make one small incision in the breast portion. Make one more small incision in the leg portion. Insert one sliver of garlic, one small rosemary sprig and one small thyme sprig in each incision.
  • Put the chicken pieces in a flat dish. Sprinkle the chicken pieces on all sides with salt and pepper. Sprinkle with one tablespoon of lemon juice and a half cup of olive oil, turning the pieces to coat well. Arrange the pieces skin-side up in the dish and arrange the lemon slices evenly over the skin. Scatter the remaining two rosemary sprigs and two thyme sprigs over the chicken. Cover with plastic wrap and refrigerate overnight.
  • When ready to cook, preheat the oven to 500 degrees.
  • Pour off and reserve the liquid from around the chicken pieces. Discard lemon slices and herb sprigs.
  • Heat a large heavy skillet, preferably of black iron, until almost smoking.
  • Pour the reserved liquid into the skillet. Immediately add the chicken pieces skin-side down. Scatter the garlic slices all around the chicken. Cover the chicken pieces with one heavy skillet that will fit comfortably inside the skillet in which they cook. (Chef Boulud uses bricks covered with foil to weight his chicken pieces.) If necessary, add more weights to the upper skillet to make the chicken lie as flat as possible. Cook over high heat about five minutes, until the skin is darker than golden brown. As the chicken cooks, lift the pieces to check the color of the skin. After five minutes, reduce the heat slightly and continue cooking about one minute. Remove the weights and turn the chicken pieces. Replace the weights and place the chicken in the oven. Bake 17 minutes. Remove the weights and turn the chicken pieces once more. Continue cooking about three minutes, or until the chicken is cooked through.
  • In a small saucepan, combine the remaining one tablespoon of lemon juice, six tablespoons of olive oil, the minced rosemary and thyme leaves and salt and pepper to taste. Blend well and heat gently. Cut the chicken into serving pieces and serve the sauce on the side.

Steps:

  • Preheat oven to 450°F with a rack in center. Season all sides of chicken generously with salt and pepper. Heat a large nonstick skillet over medium; add butter and 1 tablespoon oil.
  • When butter melts and foam subsides, add chicken, skin-side down. Place a piece of foil on top of chicken and top with a second heavy skillet to weigh down. Cook, undisturbed, until skin forms a golden-brown crust, 10 to 12 minutes. Remove top skillet and foil. Transfer chicken to a plate, skin-side up.
  • Discard fat in skillet. Return to medium-high heat and add remaining 1 tablespoon oil. Add peppers and onion, season with salt, and cook, stirring occasionally, until vegetables are browned in places, 4 to 5 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds. Stir in broth, vinegar, sugar, capers, and rosemary; season with salt and pepper. Bring mixture to a boil, then transfer to a 9-by-13-inch roasting pan or baking dish along with chicken, skin-side up, and any accumulated juices.
  • Roast until a thermometer inserted into thickest part of chicken reads 160°, about 20 minutes. Transfer chicken to a plate and loosely tent with foil. 175 g shallots, peeled
175 g baby turnips, trimmed
175 g carrots, peel & cut into strips
2 stalks celery, trim,scrub & cut into chunky pieces
1 lemon, cut into quarters
4 bay leaves
fresh tarragon sprig
salt
ground black pepper
150 ml dry white wine
150 ml chicken stock
25 g butter or 25 g margarine
25 g plain flour
2 -3 tablespoons cream

Steps:

  • Place both halves of the chicken brick in a sink and cover completely with cold water and leave for at least 30 min.
  • (This ensures that brick does not dry out and crack during cooking.) Preheat oven to 190 degree C, 15 min before roasting the chicken in a brick.
  • Place lemon pieces, some bay leaves, tarragon sprigs into clean chicken cavity.
  • Season well with salt and freshly ground black pepper.
  • Place half the prepared vegetables in the base of the drained chicken brick, then place chicken on top.
  • Arrange remaining vegetables and the remaining bay leaves around the chicken.
  • Pour the white wine and chicken stock over.
  • Place lid of chicken brick on top to cover the chicken.
  • Roast in the preheated oven for 1hr 30min or until the chicken is cooked.
  • (Test by inserting a skewer into the thickest part of the chicken thigh. The juices should run clear.) Remove chicken brick from oven.
  • For the sauce-------------------.
  • Pour off cooking liquor and reserve in a bowl.
  • Keep chicken and vegetables hot, covered, in the oven, while preparing the sauce.
  • Place liquor in a small pan and bring to boil.
  • Cream fat and flour together to make a beurre manie, then drop small amounts into boling liquor, whisking continuosly.
  • When sauce is thickened, smooth and glossy, draw off the heat, stir in the cream, then reheat gently and season to taste.
  • Serve with chicken, vegetables and rice or potatoes.

CHICKEN UNDER A " BRICK" WITH ROASTED POTATOES

I used a recipe from America's Test Kitchen and tweaked slightly. Instead of the traditional brick you can use a cast iron skillet loaded with several cans or a large stockpot filled with water. It is important to use a non-stick pan beneath, so the skin doesn't have a chance to stick. This is the first time that I have eaten the skin from the chicken in years, due to health issues, but it is was a rare treat! It is also very pretty. Update: I changed this slightly so that I could add a little more flavor to the meat and not just the skin by adding the spices under the skin before cooking instead of over the skin. As much as I love the original recipe, I can't eat too much skin, so this is is another alternative.

1 whole chicken, no larger than 3 lbs. trimmed of excess fat, giblet removed and discarded. rinsed and patted dry
salt and pepper
2 tablespoons vegetable oil, plus
1 teaspoon vegetable oil
3 garlic cloves, finely minced
1 tablespoon fresh thyme leave, minced
1/8 teaspoon red pepper flakes
1/2 tablespoon fresh rosemary, crushed
1 1/2 tablespoons fresh parsley leaves, minced
2 tablespoons fresh lemon juice, plus
1 lemon, cut into wedges
1 1/2 lbs Red Bliss potatoes, scrubbed dried and cut into 3/4 pieces

Steps:

  • Technique: Butterfly a chicken by cutting along the length of one side of the backbone. Turn chicken and cut along the other side of backbone and remove it. Turn chicken breast side up and flatten chicken with the palm of your hand. Then pound it with the flat side of a mallet to a fairly even thickness. Season the chicken with salt and pepper.
  • Adjust an oven rack to the lowest position and heat oven to 450°F.
  • Heat 1 teaspoon oil in a heavy bottomed 12-inch ovenproof nonstick pan over med-high heat until it begins to smoke. Swirl oil to coat the pan. Place the chicken skin side down in the pan and reduce heat to med. Place the weight on the chicken and cook until evenly brown for about 25 minutes, checking every 5 minutes or so. The chicken should be fairly crisp and brown after 20 minutes, if not turn up to med-high heat and continue to cook until well-browned.
  • Mix the remaining oil, garlic, 1 1/2 tsp thyme, rosemary, pepper flakes, lemon juice, 1/2 tsp salt and 1/4 tsp black pepper in a small bowl.
  • Using tongs, carefully transfer chicken to a plate with the skin side up.
  • Pour off any fat from pan and add the potatoes, sprinkling them with 1/4 tsp salt, 1/8 tsp black pepper and the remaining thyme. Place the chicken skin side up on the potatoes and brush the skin with the thyme-lemon juice mixture.
  • Transfer pan to oven and roast until the thickest part of the breast registers 160°F on a meat thermometer 10-15 minutes. Transfer chicken to a cutting board and let rest 10 minutes.
  • Return the potatoes to the oven and roast until browned and cooked through about 10 minutes.
  • Using a slotted spoon, transfer potatoes to a large bowl leaving fat behind. Toss the potatoes with parsley. Cut the chicken in to pieces and serve with lemon wedges.

  • Wrap 2 bricks with foil (if you don’t have any bricks lying around, use a heavy skillet). Working with 1 leg at a time, place chicken skin side down on a cutting board. Using your fingers, feel for the thigh bone, which runs from one end of the thigh to the other. Using a boning knife or another thin sharp knife, cut straight down into flesh until the tip of the knife hits the bone, then slice from one end of bone to the other to expose its entire length. Using short strokes and trying to stay as close to the bone as possible, cut meat away from bone on both sides, working your way around until you can wiggle the tip of your knife underneath it (take care not to cut through the skin). With the front end of your blade underneath the bone, slice upward toward free end of bone to release flesh. At this point, the bone should only be attached at the joint that connects it to the drumstick.
  • Repeat this process, this time making a cut from the top of the drumstick bone (at the joint) down to foot end. Cut along either side of drumstick bone (same as you did with the thigh bone) until you can wiggle your knife underneath. With the blade angled toward the cutting board this time, cut meat away from bone. By now, the drumstick and thigh bones should be attached only where they meet at the joint. Make small cuts all around and underneath joint until you can cut out bones completely. Cut away any pieces of cartilage that remain. Turn deboned chicken over and smooth skin over meat. (Freeze bones and use at a later date for stock.)
  • Season chicken on both sides with salt and pepper. Pour oil into a medium cast-iron skillet. Place chicken in pan skin side down (it’s okay if the pieces touch, but make sure they don’t overlap). Heat pan over medium-high and place a prepared brick on top of each piece (or, place a sheet of foil over chicken, then set a second cast-iron skillet on top). Cook chicken, checking halfway through to make sure skin isn’t taking on color too quickly and reducing heat to medium if needed, until skin is deep golden brown and crisp and flesh is almost completely cooked through, about 10 minutes.
  • While chicken is cooking, place anchovy, garlic, and 1 tsp. salt in a mortar and use pestle to pound to a paste, about 1 minute. Add parsley and continue to pound until completely pulverized, about 2 minutes. (Alternately, grate garlic and finely chop anchovy and parsley, then mix together in a medium bowl.) Mix in oil, vinegar, mustard, and red pepper flakes with pestle, then add scallions. Taste and season with more salt, if needed.
