HERBED BRIE IN PUFF PASTRY

This is a great appetizer! Serve with water crackers.

¾ teaspoon chopped fresh parsley
1 clove garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried marjoram
2 ounces thinly sliced salami, chopped
1 (2.2 pound) wheel Brie cheese
1 sheet frozen puff pastry, thawed
water
1 egg, beaten

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix together parsley, garlic, rosemary, thyme, marjoram, and salami. Slice the Brie in half crosswise, so you have two wheels. Spread the salami and herb mixture on one of the cut sides and top with the other half of the Brie wheel. Place the Brie in the center of the sheet of puff pastry. Fold the puff pastry up and over the Brie, pressing to secure the pastry together using a little bit of water if necessary. Brush the pastry with beaten egg.
  • Bake the pastry in the preheated oven until golden brown, about 30 minutes. Remove from the oven and let stand for 15 minutes before serving.

  • Roll out 1 sheet puff pastry into a 12-inch round on a lightly floured surface. Trim into a circle and place an 8-ounce wheel of brie in the center. Brush the pastry with egg wash; fold into the center over the brie, pressing to seal. Press a smaller round of puff pastry on top, then brush all over with more egg wash. Bake at 400 degrees F until golden, 25 minutes.

1 14 ounce wheel brie cheese
2 4 ounce packages garlic and herb semisoft cheese

Steps:

  • Lightly flour baking sheet. Place puff pastry on prepared sheet and roll out gently to remove fold lines. Spread 1 package semi soft cheese on brie. Turn brie over. Spread remaining semi soft cheese on second side of brie. Bring pastry up around sides and over cheese, wrapping completely and trimming excess pastry. Turn over and place seam side down. Gather pastry scraps, reroll and cut out decorations to place on top of pastry if desired. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before baking) Combine egg and water, brush to cover top. Pre heat oven to 375 degrees. Bake pastry until golden brown, 30 to 35 minutes. Let stand 10 minutes.

1 French baguette-type loaf of bread (about 10 ounces)
1/4 cup virgin olive oil
3 tablespoons dry white wine
1 teaspoon coarsely ground black pepper
2 cloves garlic, peeled and chopped (about 1 teaspoon)
1 piece of ripe Brie cheese (about 10 ounces)
3 tablespoons chopped chives
1 cup coarsely shredded basil leaves
1 1/2 cups loose coarsely shredded sorrel leaves (other herbs can be used instead, depending on availability)

Steps:

  • Cut the baguette in half lengthwise and sprinkle the cut surface of each half with the oil, wine, pepper and garlic, dividing the ingredients evenly between the two halves.
  • Trim the Brie to remove any crust and cut into quarter-inch slices, preferably large and thin. Spread half the herbs on the cut surface of the bottom half of the loaf and arrange the cheese slices on top. Spread the remaining herbs on top of the Brie and place the top half of the bread loaf on top to reform the loaf. Press firmly together and roll as tightly as possible in plastic wrap and then in aluminum foil. (If tightly wrapped, the bread absorbs the juices better.)
  • Press the loaf between two baking sheets and refrigerate with three-to-five pounds of weight (a can or jar, perhaps) on top for four to five hours before cutting in slices to serve. It can be consumed cold or lukewarm

1/4 cup chopped fresh strawberries
1/2 teaspoon finely chopped fresh rosemary (or fresh mint or lemon thyme)

13 ounces wheel brie cheese (about 6 to 7-inches in diameter)
1 egg, beaten
1/4 cup Grand Marnier (optional)
fresh rosemary sprig, for garnish

Steps:

  • Preheat oven to 400°F.
  • In a small bowl, combine jam, strawberries, and chopped rosemary.
  • On a work surface, roll out puff pastry slightly into a 12-inch square.

  • Spread jam mixture over top of Brie.
  • Fold puff pastry over Brie; wet edges and press to seal.

Steps:

4 ounces brie cheese
4 ounces curd cheese
1 ounce softened butter
3 tablespoons heavy cream
2 eggs
1 tablespoon chives, snipped
1 tablespoon parsley, chopped
salt and pepper
cayenne pepper

Steps:

  • Heat the oven to 375°F Line an 8 inch flan tin with the pastry. Prick the base with a fork and line with greaseproof paper, fill with baking beans and bake for 10 minutes. After this time, remove the paper and beans and return to the oven for a further 5 minutes or until lightly golden.
  • Meanwhile, mash, the Brie thoroughly, including the rind. Beat in the curd cheese, butter and cream. Beat the mixture until well blended and smooth.
  • Beat in the eggs, then the chives and parsley. Taste and season with salt, pepper and cayenne.
  • Turn the cheese mixture into the pastry flan case. Bake for 20-25 minutes, or until the filling is set and lightly browned. Serve at once while still hot, or chill and serve cold.
