I make no apologies for the apparent simpleness of this. It make a quick easy brunch or light lunch. Serve with a dressed green salad. Cranberry jelly and mango chutney also work very well as variations.

1 cup dried cranberries
1 cup balsamic vinegar
1/2 cup jellied cranberry sauce
1 tablespoon sugar
1 loaf (1 pound) French bread, cut into 1/2-in. slices
3 tablespoons butter, melted
1/2 pound Brie cheese, thinly sliced

Steps:

  • In a small saucepan, combine the cranberries, vinegar, cranberry sauce and sugar. Cook and stir over medium heat until thickened, about 12 minutes., Brush bottoms of bread with butter; place on ungreased baking sheets. Bake at 350° for 1-2 minutes or until lightly toasted. Top bread with Brie. Bake for 4-6 minutes or until cheese is melted. Spoon cranberry mixture over cheese, about 1 tablespoon on each.

Steps:

  • Preheat the sandwich toaster to its highest setting.
  • Slice the Brie and cover one of the pieces of bread with it. Spread over the redcurrant jelly and sprinkle on the watercress leaves. Add a twist of black pepper and cover with the second slice of bread. Place the sandwich in the toaster (Brie side uppermost), close the lid, and cook for 3 minutes until crisp and golden.

I got this recipe from a friend in Germany. It's a delicious way to incorporate red currants into baking.

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ cup butter, softened
½ cup white sugar
2 egg yolks
1 ½ teaspoons grated lemon zest
2 egg whites
½ cup white sugar
2 teaspoons cornstarch
2 ¼ cups red currants

Steps:

  • To Make Dough: In a medium bowl, sift together flour and baking powder. Mix in butter, sugar, egg yolks and lemon zest until mixture forms dough. Let rest in cool place for 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C). Roll out dough and put into a springform pan.
  • Bake in oven for 25 minutes, or until golden yellow.
  • To Make Filling: In a medium bowl, beat egg whites until stiff. Gradually stir in sugar and cornstarch; beat for 5 minutes. Fold currants into mixture and pour into pie crust.
  • Bake in oven for 10 minutes, or until top is lightly browned.
