I love fresh strawberries, and I try to enjoy as many as possible during the season. Because so many strawberry recipes are quite sweet, I wanted to start the meal with something savory, so I came up with strawberries, cheese and good bread. -Mary Leverette, Columbia, South Carolina

12 slices French bread baguette (1/4 inch thick)
1 tablespoon olive oil
1 round (8 ounces) Brie cheese, rind removed
1 cup sliced fresh strawberries
1 tablespoon balsamic vinegar
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

Steps:

  • Place bread on an ungreased baking sheet; brush with oil. Broil 3-4 in. from the heat for 1-2 minutes or until golden brown., Spread Brie over toast; top with strawberries. Drizzle with vinegar and sprinkle with thyme.

Steps:

  • Thinly slice a baguette; arrange in a single layer on a baking sheet. Brush with softened butter and sprinkle with salt and sugar. Bake at 425 degrees F until lightly golden, about 7 minutes. Let cool slightly.
  • Toss 1 cup sliced strawberries, 2 tablespoons superfine sugar and 1 tablespoon balsamic vinegar; set aside 30 minutes. Mix 1/2 cup mascarpone cheese, 1/4 cup confectioners' sugar and a dash of vanilla extract. Spread the mascarpone mixture on the toast rounds; top with the berries and juices.

12 slices French bread, cut 1/2 inch thick
1/3 cup unsalted butter, softened
1/3 cup brown sugar
2 teaspoons cinnamon
12 slices brie cheese (about 12 ounces)
1 1/2 lbs sliced stemmed strawberries (about 4-5 cups)
1/2 teaspoon vanilla extract
1 cup sliced almonds, toasted

Steps:

  • Heat oven to 375-degrees.
  • Spread 1 side of each bread slice with butter; arrange, butter side up, on large baking sheet.
  • In small bowl, combine sugar and cinnamon; sprinkle 1 teaspoon over each slice of bread.
  • Reserve remaining sugar mixture.
  • Toast bread in oven for 5 minutes and remove.
  • Top each slice with one slice of Brie; return to oven.
  • Bake an additional 4-6 minutes or until cheese is melted.
  • Meanwhile, in large bowl, combine strawberries, vanilla and remaining sugar mixture; toss lightly.
  • Place two bruschetta on each serving plate.
  • Spoon 1/3 cup strawberry mixture over each; sprinkle with almonds.
  • Serve immediately.
  • Note: to toast almonds, spread on even layer on baking sheet.
  • Bake in a 350-degree oven for 5-10 minutes or until light golden brown, stirring once or twice for even browning.

2 whole garlic bulbs
3 tablespoons olive oil, divided
1 large red onion, halved and thinly sliced
4-1/2 teaspoons sugar
1 teaspoon balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 French bread baguette (10-1/2 ounces), cut into scant 1/2-in. slices
1 pound Brie cheese, rind removed, thinly sliced
Minced fresh thyme, optional

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 tablespoon oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, in a large skillet over medium heat, cook and stir the onion, sugar, vinegar, salt and pepper in remaining oil for 15-20 minutes or until very tender and browned., Place bread on ungreased baking sheets. Broil 3-4 in. from the heat for 3-4 minutes or until edges are lightly browned. Squeeze softened garlic into a small bowl; mash with a fork. Spread over toast. Top with cheese and onion. Broil 3-4 in. from the heat for 2-3 minutes or until cheese is melted. Sprinkle with thyme if desired.
