APPLE-BRINED CHICKEN THIGHS

I love the flavor of chicken baked with apples, and when I had a bumper crop of green beans, I wanted to include them, too. Brining chicken thighs give them great flavor.-Kathy Rairigh, Milford, Indiana

3 cups apple cider or juice
1 medium onion, sliced
1 medium lemon, sliced
4 fresh rosemary sprigs
1/3 cup kosher salt
1/2 cup packed brown sugar, divided
4 garlic cloves, minced
1 bay leaf
1 teaspoon whole peppercorns
2 cups cold water
10 bone-in chicken thighs (about 3-3/4 pounds)
One 2-gallon resealable plastic bag
1 pound fresh green beans, trimmed
3 medium tart apples, cut into wedges
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 tablespoon olive oil
1/4 teaspoon pepper

Steps:

  • In a Dutch oven, combine the cider, onion, lemon, rosemary sprigs, salt, 1/4 cup brown sugar, garlic, bay leaf and peppercorns. Bring to a boil. Cook and stir until salt and brown sugar are dissolved. Remove from the heat; stir in water. Cool brine to room temperature., Place chicken in the 2-gallon resealable plastic bag. Carefully pour cooled brine into bag. Squeeze out as much air as possible; seal bag and turn to coat. Place in a roasting pan. Refrigerate for 2 hours, turning occasionally., Place beans and apples in a greased roasting pan. Drain chicken; place in prepared pan. Bake, uncovered, at 400° for 40 minutes., Combine the minced rosemary, oil, pepper and remaining brown sugar; sprinkle over chicken. Bake 15-25 minutes longer or until a thermometer reads 170°-175° and beans are tender.

These succulent Smoked Chicken Thighs bring out the best in backyard smoking. They are brined, seared, and smoked with apple wood until absolute perfection. Your family will be convinced you are the pitmaster!

10 bone in, skin on chicken thighs
6 cups water
1 cup kosher salt
1 cup brown sugar
handful fresh thyme
handful fresh rosemary
apple slices, orange peel, etc. (optional)

Steps:

  • Prepare the brine in the morning by combining the salt and sugar with the water in a medium saucepan. Heat until both are entirely dissolved.
  • Add the herbs and allow to cool until it is room temperature.
  • Place thighs in a bowl and pour brine over. Cover with plastic wrap and brine for two to four hours.
  • Remove chicken from brine and place on a rack over a pan in the fridge for a few hours to air dry (optional). Discard brine.
  • Pre-heat grill to high. Sear on presentation side for 1-2 minutes depending on how high the temperature is. Flip and sear another minute. (see notes)
  • Lower heat to 225 F and add apple wood chips. (see notes)
  • Smoke for two hours or until internal temperature of each thigh reaches 165 F (74 C).

Brining chicken thighs is a juicy and tender way to serve up chicken at your next dinner party!

8 chicken thighs
olive oil
for the brine:
4 cups water
3 tbs. salt
1 tbs. ground black pepper
2 bay leaves
2 cloves garlic
1 tsp. paprika
1 tbs. lemon juice
1 tsp. vinegar

Steps:

  • 1. Combine all of the ingredients for the brine in a large pot; add the chicken thighs and refrigerate for at least two to three hours or overnight.
  • 2. Remove the chicken thighs from the brine and pat dry with a paper towel.
  • 3. Heat a large frying pan with 2 tablespoons of olive oil. Add the chicken thighs. Do not overcrowd the pan. The chicken will not get a beautiful golden color if you do.
  • 4. When one side is golden gently turn over and cook on the other side.
  • 5. Cooking time should take about 40-45 minutes on the stove-top or you may bake the chicken with a drizzle of olive oil at 350 degrees for about 40-45 minutes.

1 gallon water
1 ¼ pounds salt
⅔ cup white sugar
¾ cup soy sauce
1 teaspoon dried tarragon
1 teaspoon dried thyme
1 teaspoon ground black pepper
2 (3 1/2) pound whole chickens
kitchen twine
¼ cup olive oil

Steps:

  • Pour water into a large, non-aluminum container; add salt and sugar and stir to dissolve. Add soy sauce, tarragon, thyme, and pepper. Place chickens in the brine and weigh them down with a heavy plate so they stay submerged. Brine at room temperature for 2 hours, or in the refrigerator, 8 hours to overnight.
  • Remove chickens from brine, wash, and pat dry. Reserve brine. Tie the legs together of each chicken using kitchen twine.
  • Prepare a water smoker for cooking by preheating to 200 to 250 degrees F (93 to 120 degrees C). Fill the water pan with hot water and half of the reserved brine. Place chickens, breast side up, on the grill racks. Add wood chips according to manufacturer's directions. Cover.
  • Smoke chickens until no longer pink at the bone and the juices run clear, about 4 hours, brushing chickens with olive oil every 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the smoker and let rest for 10 minutes. Carve and serve.

Very juicy, tender, and flavorful smoked chicken thighs. My skins got mostly crispy in the smoker. The smoke intensity is mild and the applewood flavor comes through nicely.

6 cups water
1 cup dark brown sugar
1 cup kosher salt
2 tablespoons whole black peppercorns
4 large cloves garlic, mashed
2 large bay leaves
4 (5 inch) sprigs fresh rosemary
1 medium lemon, sliced and seeds removed
8 (8 ounce) bone-in, skin-on chicken thighs
applewood chunks, for smoking
2 teaspoons ground black pepper
1 teaspoon kosher salt

Steps:

  • Whisk together water, brown sugar, 1 cup kosher salt, black peppercorns, garlic cloves, and bay leaves in a large saucepan until sugar and salt dissolve. Turn heat to medium-high and bring to a boil.
  • Carefully pour brine mixture into a large heat-proof container and stir in rosemary sprigs and lemon slices. Place in the refrigerator until completely chilled, about 2 hours.
  • Add chicken thighs to the chilled brine. Place a small plate on top of chicken thighs to ensure they stay submerged, then cover container with a lid or plastic wrap. Refrigerate chicken thighs in brine for at least 6 hours, or up to 24 hours.
  • Open the bottom vent of a grill completely. Light a charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour them onto bottom grate of the grill, and then push to 1 side of the grill. Place 3 to 4 applewood chunks on top of hot coals. Coat top grate with oil; place on grill. Cover and insert an instant-read thermometer into a vent in the lid; maintain a temperature between 225 and 250 degrees F (107 and 120 degrees C) for 15 to 20 minutes.
  • Remove chicken thighs from brine and pat dry with paper towels, removing as much moisture on the surface of the thighs as possible. Sprinkle evenly with black pepper and remaining 1 teaspoon salt.
  • Place chicken thighs on the preheated grill, skin-side up, over the side without coals. Cover and smoke until a thermometer inserted in thickest portion registers 165 degrees F (74 degrees C), about 1 hour 45 minutes to 2 hours.
  • Transfer chicken thighs to a large plate or platter and let rest for 10 minutes before serving.
